IF you are looking for the safest form of sweetener that isn't based on chemicals, stevia is my top choice. It is extracted from the leaves of the plant, Stevia rebaudiana. It is super sweet (200X sweeter than table sugar) - so use sparingly. I don't love the aftertaste of stevia.
Best approach is to desensitize yourself to the effects of sugar by dropping your sugar intake down (ALL SUGAR - including naturally occurring sugar). This will make you sensitive to the sweetness of small amounts of sugar and you will no longer seek out constant sugar sources in your diet. My weight has always gone up and down due to my struggle with PCOS (which I didn’t realize until I was diagnosed about a year ago). On the left I was at my lowest weight and 70 pounds less than the picture on the right. Although I look thin I was pretty unhealthy...just starving myself and working out like crazy. At this point in life, I have realized that looking at that picture and making it my goal is totally unrealistic. I wasn’t made to be super thin and I have more important things to do than spend hours in a gym (I.e. Moming!!). The picture on the right shows me already about 25 pounds down from my highest weight. I’m already feeling pretty good but my goal is to lose 50 pounds more. Due to PCOS I found myself prediabetic. Through Keto/low carb I am out of the prediabetes zone and feeling better!! I would like to be WAY out of that zone. Diabetes is not something I want to have to worry about!! Whilst most of my day time meals are plant based, I’m still in the habit of cooking up meat or fish for the family evening meal. Anyone else the same?
So I always challenge myself on a Monday night to whip up a vegetarian family delight. Today it was a warm salad for a chilly night. 🥕 I had some beautiful Dutch carrots as a base, so I halved and roasted them in olive oil sprinkled with carroway seeds. Carrots are fantastically underrated. Crunchy, tasty and highly nutritious, Carrots are a particularly good source of beta-carotene, fiber, vitamin K, potassium and antioxidants. They a full of fibre which does wonders for our gut microbiome and have been linked to lowering cholesterol, improving eye health and reducing the risk of cancer. 🥕
I cooked up some quinoa, and while warm mixed in a tin of drained and rinsed black beans, some chopped and massaged kale, sliced tomatoes and topped it with the warm carrots, grilled haloumi and some freshly shelled walnuts. Finished with a warm dressing of olive oil, red wine vinegar and maple syrup if was delicious... and family friendly!!
You can still have salad when the temperatures fall!!
