Another beautiful pancake to start my day. Packed with protein and antioxidants from the berries. Good fats from the Greek yoghurt and coconut. Eating myself to recovery. Not exercising is really tough and I know it's even more important to keep my nutrition on point to make my road back into #fitness that bit easier. 6 weeks off feels like forever but we are already half way through my second week. Home made granola bars. 
125 g natural peanut butter
125 g butter or coconut oil
150 grams of mixed seeds. I used pumpkin and chia. 
Zest of 1 orange and lemon.
75 g honey.
100 g of chopped dried fruit. I used apricots and figs. 
1.Melt butter, peanut butter, honey
And zest in a large pan. 
2.Combine dry ingredients and add to the pan. 
3.Press into a flat oven tray and bake for 30 minutes. 
4.Try not to eat them all at once. 😁

Dissolver a dose que for beber  em água quente 💦

And sometimes it’s nice to take the time to bake something.....even if it’s for no special occasion other than a lovely autumn afternoon.
.
baking is so calming and even though I’m mostly experimenting in the kitchen it’s such a bonus when something works out....I’m forever trying to avoid all the big  no’s....No dairy, No sugar, No gluten, No egg....so I very often have a bit of a flop when it comes to vegan cakes or treats
.
But I will persist even if it takes a very long time to get it right simply because I really do love it.

And these little jam drop cuties actually tasted pretty good...😊

Blueberry and Walnut Banana Bread 🍌🍌 I've been baking for my Oma again. I baked this banana bread with some sneaky oats and psyllium husk for added fibre. 
Recipe below 😊

Ingredients:

4 bananas mashed 
2 eggs
2/3 cup brown sugar
1 tsp vanilla essence
2 tsp cinnamon 
1/2 cup coconut oil
1/3 cup almond milk 
1.5 cups gluten free flour
1 tsp baking soda
1/2 cup oats
1/4 cup psyllium husk 
1 tsp sea salt 
1 cup blueberries
1 cup walnuts 
Method:
Combine all wet ingredients and whisk well until combined.
Mix dry ingredients in a separate bowl and then slowly fold into the wet. Make sure to fold slowly until all flour pockets are gone. Add in any extras you want! I added 1 cup frozen blue berries and 1 cup roughly chopped walnuts. I think it would also be great with raspberries and dark chocolate! Remember to not over mix 😊 so it stays nice and moist. 
Bake in the oven at 180 for 45 - 55 mins. You'll know it's done when you can put a small metal (I don't remember what it's called) stick in and it comes out clean 😜😜

I made the jam with the addition of dried Bilberries which are loaded with antioxidants and are great for eye health and reducing inflammation in the body....
Then sweetened with a little rice syrup and vanilla extract.

Perfect on toast or added to porridge, topping for pancakes or even to make jam drop cookies with.....i must make a bigger batch next time as it was demolished in a day....and this is why there is no photo of the actual jam 😆

Vor einigen Tage habe ich den Beschluss gefasst, nun nach 2 1/2 Monaten mit dem Kalorientracken wieder aufzuhören. Ich hatte einfach Gefühl, dass ich es jetzt wieder ohne "schaffe". In den letzten Wochen hab ich neue  Ernährungsgewohnheiten entwickelt, mit den ich total zufrieden bin. Weil ich allerdings schlecht im schätzen bin, wiege ich immer noch teilweise meine Portionen ab, um die Kalorien einer Mahlzeit zu überschlagen (vor allem beim Mittagessen und meine 200 kcal Süßigkeiten pro Tag). Denn meine Diät ist noch nicht vorbei, ich gehe jetzt langsam auf das mittlere Normalgewicht zu. Mittlerweile fühle ich mich aber wieder wohl in meinem Körper. Deswegen sehe ich das alles nicht mehr so eng.

Bananas are definitely cheap (that’s another conversation in itself 🙄), but they don’t fit into my diet. Quality > quantity here for me. And while they aren’t an exact comparison, I see a lot of people throw them into their meals (looking at you smoothies) thinking they’re a healthy addition or they want that potassium kick we’ve been told bananas have. I’m not saying don’t eat them of course - do what feels good for you! - I just wanted to throw out a reminder to really dig into the foods you’re choosing, look at your options, and think about what you really know/how you know about a particular ingredient.

So this needs to be mentioned, the Coles gluten free chocolate entertainers cake... styled with @colessupermarkets Madagascan vanilla bean white chocolate & @driscollsberry raspberries, this cake is a huge slab.. and I cut this into bite size pieces & quickly styled.. no one knew it was gluten Free.. so of course I indulged like an unsupervised kid who had been denied cake a quite a while.. YUM!! It's moist & the ganache is so juicy, chocolatey & simply amazing. I even froze half for a rainy day as the cake comes in a 1.2kg slab.. $12 .. this isn't sponsored..I'm just passionate 😂💓💓 ff X

PALEO CHOCOLATE MOUSSE. 
yep. you read correctly. 
I was craving something naughty so I blended up some chocolate mousse. plot twist it isn’t naughty at all cos it’s made from 80% vegetables!!! fulfilled the craving without actually eating anything naughty, and got a ton of veggies in at the same time ✔️ contains a whole small zucchini, 1/2 cup steamed then frozen cauliflower, 1/2 an avocado, 1/2 banana, dash of coconut milk to blend. 
then added 2 heaped tsp cacao, 1 tsp carob (could just use one or the other), a pinch of stevia, and 1 tsp Amazonia raw cinnamon + vanilla protein (can use whatever neutral or chocolatey protein you have, or omit and add extra sweetener). I also added a tsp of my go-to herbal blend (ashwagandha, reishi and Siberian ginseng) but this is totally unnecessary (you could add your fave mushroom powder if you have one, or even collagen as an added boost). once everything was combined I added a tbsp of cacao nibs and a tsp of peanut butter and blended for 2 seconds just to marble them through the mousse. 
absolute HEAVEN.
