Another meal, another recipe, another combination of spices, another happy family!!! I adore cooking but I never choose recipes which take too much time to prepare so this @ottolenghi chicken 🍗 recipe was very easy to do, marinate overnight and roast next day. Can’t be any easier! The chicken has been marinating overnight in red onions, cinnamon, zaatar, allspice, lemon zest and juice, olive oil, garlic. I just roasted it for 40 minutes today, added a few potatoes and green beans and voila! Happy Sunday.

As you may already know I love Moroccan 🇲🇦 spices as I spend some time there each year at my Dad’s place and get inspired by all the lovely food and spices. I bring my spices back from local markets and their aroma and smell is so intense. Tonight I used the ras-el-hanout spice which is a classic spice mixture with over a dozen ingredients including cardamom, cumin, clove, cinnamon, nutmeg, mace, allspice, dry ginger, chili peppers, coriander seed, peppercorn, sweet and hot paprika, fenugreek, and dry turmeric. I cooked CHICKEN BREASTS WITH DRIED APRICOTS, COURGETTES and RAS EL HANOUT. I served it with couscous with a pinch of saffron. It took me under an hour from start to finish and I loved it. Another super duper meal packed with Omega 3, minerals, iron, fiber, vitamins. A salmon fillet seasoned with Cajun (just can’t get enough of that Cajun - it adds fire 🔥 and taste to the 🐟), served with @merchantgourmet Le Puy lentils, Romano peppers, spinach, shallots and chorizo. I boiled the lentils on one side and pan fried the veggies in a separate pan and then combined it all. Salmon was cooked in the oven for 10 minutes. It’s easy, simple to cook, nutritious, and delicious. Bon appétit to you all. ...

The Saturday morning ritual in Le Touquet is to go to the market. It’s in the centre of the town and it’s just lovely to wander around among the clothes, handbags 👜, scarves, jewellery, accessories stalls and of course the fishmonger 🐟 , cheese 🧀 stalls,
Fruit 🍇🍈🍉, vegetables 🌽 🥔🥕🍅 flowers etc. For lunch we bought coley fillet, scallops and prawns 🦐. I prepared a marinade of lemon 🍋 zest and juice, olive oil, crushed garlic clove, grated ginger root, pink peppercorns and poured it on the fish for 30 minutes before cooking it in the oven for 15 minutes. It was gorgeous and super healthy.. before the chocolate extravaganza 😋 all about balance !!!!
