As I get older I really love these traditional sweets more and more. They tend to be very sweet but their sweet level and profile always invoke a kind of satisfaction that is very fulfilling. You can see in Pic 2 and 3 how the whole sheet of torrone can curl and roll. Fresh made is not the same as the store bought ones for sure. Normally we get small candies or blocks but that night we got the whole big piece. They rolled like sticky playdoh but much firmer, yet soft enough to be cut through with a pair of scissors

The final rose cake made with Testun cheese and served with warm vov zabaglione. The shape really reminded me of 🍄 but when you peel it open it was also almost like HK paper wrapped cup cake 紙包蛋糕 to me. The best was to eat it with the warm zabaglione sauce, a very eggy custardy sweet sauce. This sauce can go with just about everything. Is it Chef Riccardo’s childhood favorite got upgraded?

Cuttlefish, butter, turmeric _ @oadtop100 #oad  #oadweek2018  Pop Up by Chef Riccardo Camanini, Ristorante Lido 84 (4.17.2018) _ Influence from Japanese cuisine can be seen everywhere in Europe (and the world) these days, and Chef Riccardo explained that the cuttlefish in this dish was to resemble sushi rice (instead of the ubiquitous cuttlefish noodles) with a cold temperature and slight stickiness but still retaining the individual diced texture. If you see Pic 2, the cuttlefish really did look like rice. _ He also said that traditionally they will serve rice with butter to baby and small kids and hence the swirl of butter on top. Not knowing what Saor was, I researched a little and found that it was a Venetian “sweet and sour sauce” with onions marinated in vinegar, often used for fish especially sardines. That was exactly how the carrots tasted, almost like a slaw or escabeche and suddenly the normally heavy sweetbreads became lighter with a more refreshing finish. _ From the multiple courses I think Chef Riccardo is really skilled in calibrating his recipes and flavors to reach a fine point as they were precise in balancing each other. This was probably my favorite non-pasta dish, may be biased because of my affinity to eels. This “Candied Eel” was confit in duck fat (!) and lacquered skin and sheen really told you the texture of the eel (at least the skin, see pic 2). There wasn’t even a tiny slit on the surface!

The flesh was plump with fatty oil and gelatinous collagen throughout the piece. (Pic 3-4). This is really quite similar to Chinese style giant eel in casserole or steamed eel because the fat was kept and not grilled off. So good!

3. Risotto, Black Fermented Garlic, Berries _ @oadtop100 #oad  #oadweek2018  Pop Up by Chef Riccardo Camanini, Ristorante Lido 84 @ristorantelido84 (4.17.2018) _ This was the “Oops I dropped the risotto” (unofficial name by my wicked friend @achefabroad ). _ The presentation was progressive but the use of the fermented black garlic was the part that intrigued me the most. The umami from the black garlic sauce would not lose to using squid ink despite being vegetarian. _ Normally I don’t prefer any fruits in my savory dishes but this berry sauce somehow just worked surprisingly well with the black garlic sauce (on its own it was a strong berry sauce). It was not weird and quite the opposite, they really “clicked”. _ To pull off a combination like this I imagine you must have lots and lots of trials to perfect the calibration. It is Chef Riccardo’s way to say that fine dining pasta is not just about shaving truffles or loading on caviars. _ If I were to put it one step further, it is an evidence that “fine dining” is sometimes just an approach defined by people. The end result is still a delicious al dente, cheesy and peppery cacio e pepe but when cooked in a different form and delivered it in a special way, it becomes fine dining. The most important lies in the underlying soul. No matter it is cooked the normal way or this haute cuisine en vessie way, both require diligent repetitive practice to perfect the fine details, which you can’t even tell from its final minimalist presentation (last pic). What’s inside this balloon of pig’s bladder if no one ever told you what it is? The shadow probably wouldn’t give you enough hint to tell that it was cacio e pepe but even if you know, like all diners inside the room who had seen the name on menu, you still couldn’t tell what exactly what it looked like inside.

I got to learn about Lido 84 @ristorantelido84 and met Chef Riccardo Camanini  2 years ago at OAD 2016 Best New Eurorpean Restaurants dinner. At that time, Chef Riccardo served a dish “Spaghettoni al burro e Lievito” - a pasta dish with just butter and dried yeast. But this dish allowed me to see the simplicity and beauty of artisanal made pasta dish. There is no complication but just an example of artisanal dish perfected in all tiny dimensions.

Two years later Chef Riccardo took over the OAD Kitchen and dedicated a whole menu to his modern Italian cuisine. His dishes do not look like those from traditional Italian restaurants but the backbone is true to Italian artisanal art of cooking, inserted with his own experience and inspiration
