Ever wondered what to do with nigella seeds? I added them to my Dahl spice mix. Sautéed one onion & 2 cloves of garlic, a teaspoon of coriander, 2 teaspoons of ground cumin, 2 teaspoons of mustard seeds and 2 teaspoons of nigella seeds, 1 teaspoon of turmeric. This red lentil curry is probably one of my favourite recipes from my ebook. I used to give it to my clients back in the day and everyone always loved it. It’s so easy to make a massive batch for meal prepping and the macros are just insane. (Not that I track) 44g of protein, 125g of carbs, with only 5 grams of fat. LENTIL BALLS IN CURD GRAVY
This particular curd dish is a South Indian one and has a variant in North Indian cuisine too .
A little more time consuming than the other dishes I posted as it involves more steps .
Soak 1/2 cup Bengal gram dal in hot water for 2 hours . Drain water and grind it with green chillies , salt and coriander leaves to very coarse paste . Make into balls and steam for 10 minutes and keep aside .
Soak 1 tsp Red gram , 1/2 tsp raw rice in hot water . After half an hour grind it with , 1/2 tsp cumin , 1/2 tsp coriander seeds , green chillies , 2-3 tbsps fresh coconut and 1 fried onion and tomato each . Make it a smooth paste .
Beat 1 cup curd with 1 cup water salt and turmeric powder . Mix in the ground paste .
Heat a deep dish / pan . Put in 1 tsp oil and mustard seeds , curry leaves asafetida and few pieces of red chillies . Pour the curd and put in the lentil balls . Bring to a boil and switch off .( since this is curd based it should not boil for long ) . Transfer to a serving bowl and top with coriander leaves .

i wanted to share one of my absolute favorite things with you guys... and that’s my instant pot! our IP gets used on the daily and makes meal prep a breeze!
today i used it to make a 🥣pumpkin dal🥣
(lentil stew with a hodge-podge of miscellaneous ingredients i was needing to use) in about 20 minutes... i made enough for my lunch and dinner and had a little left over! super easy dish for meal prep AND my teenager loved it. i’ll be doubling or tripling the recipe for future prep days.
1. in my instant pot, set to saute', i added 1 TBSP olive oil and seared about 6 ounces of cubed boneless/ skinless chicken breast that had been seasoned with a pinch of each: cumin, coriander, chili powder, sea salt, ground ginger. as the chicken was starting to brown/ sear, i added some minced garlic and about 1/8 cup of diced red onion. then i turned off the saute' feature.
2. i added 1/2 cup packed unsweetened canned pumpkin (not pie filling), 1 cup unsweetened/ unflavored almond milk, 1/4 cup lentils, 1 can fire-roasted diced tomatoes, 1/2 cup water, and a little chicken boulion.
3. i set my instant pot to manual setting and selected 17 minutes then let it work its magic. when it was finished, i let the stew sit for about 5 minutes before releasing the steam.
4. i added 1 large handful of chopped fresh baby spinach and replaced the lid to let the spinach wilt as it cooled some.
5. garnished with cilantro and a lime wedge.
these measurements made 2-3 hefty servings (each serving having about 2 cups cooked) and had roughly the following macro count:
398 calories; 33g protein, 44g carb, 11g fat
This week is starting off quite well, and delicious of course! I am cooking out of #theminimalistkitchen this week🙌🏼 the first dinner on deck was these lentil bowls with caramelized carrots, arugula + microgreens, tahini yogurt, and we added some tinned sardines (one of my 2018 goals was more seafood!!). #f52bowl

Because it's #meatlessmonday , I thought I would try #recipeoftheday 🍝🌶 Spaghetti Lentil Bolognese. I would honestly have this again, it still tastes so "meaty" as the lentils were cooked in beef broth. Let's eat!
I made a delicious vegan veggie lentil casserole! If you’re wondering what the cheese is on top, it’s Trader Joe’s almond mozzarella cheese.
Mixed veggies of choice
Kale/ greens of choice
Olive oil/ oil of choice
Seasoning of choice
Salt and pepper
If you want to add some marinara/tomato sauce to the lentils I’m sure it would taste great!
Preheat oven to 350°.
Cook lentils with vegetable broth and boil for 3 minutes. Continue cooking and put it on simmer for 20-25 minutes.
Then, heat and oil a pan and cook all of the veggies/greens until well cooked.
Next, pour lentils into a baking dish and put the veggies on top.
Cook for 15 minutes. Take the casserole out of the oven and top with your cheese of choice and put it back in the oven for about five minutes, or just until the cheese has melted. That’s it and enjoy!

Tried out the #minimalistbaker#recipe for #vegan barbacoa tonight and the flavors were pretty awesome! Didn’t taste like barbacoa to me but didn’t care, it was still delicious 😎 I had to use dried #lentils which means I now have a giant pot of them to play with! Feel free to share your delicious lentil recipe with me 😊 Instead of using corn tortillas I used a low calorie wrap to make a burrito with the Mexican rice I made... but also tried it on a corn tortilla as a small taco with the shredded cabbage mix and some fresh lime 👌🏻Will def be making this again! 1. Sauté minced garlic and ginger with cooking oil until soft.
2. Add cumin seeds, turmeric, paprika, salt, pepper and coriander to the pan
3. Add the cooked lentils and coconut milk and mix until the texture is creamy
4. Add spinach until it wilts and then serve with some rice. I love the frozen brown rice from #traderjoes because it’s easy and never tastes dry
I love this meal because it’s all in one pan with anti-inflammatory ingredients and takes 25 minuets at most.
