....and with leftovers for later! This tasty lunch is so easy, especially when you have some shredded chicken ready to go (and extra especially when that chicken doesn’t fall all over the floor*!). Heating up sauces is something I’m still getting comfortable with, but trust me when I say that the @thenewprimal’s marinades and sauces make eating #paleo and #Whole30 super simple or even a disaster in the kitchen like myself! Just heat up the marinade in a pan, let it lightly bubble and then set it down to simmer until it reaches the consistency you want. The whole sauce process took me less than 5 minutes! I then threw the chicken (heated up) and cashews together, topped with green onions for some flair, and made a side of microwaveable cauliflower and sweet potato rice. Boom. Done. Finished. Next meal! .

Traditions are so much fun.
We have started a tradition of doing a #cousinssummercamp each year with our kids. Each year we pick something fun and educational to learn.
This year we are doing a #cookingcamp . And tonight kicks it off with Broccoli Apple Salad and Balsamic Grilled Chicken.
Woke up today to being down 7.5lbs since I started this thing! In 14 days! 💁🏻♀️
Weight loss was NOT my main objective in taking on this reset, but it sure is a nice bonus! 😉💃🏻
Day 15’s breakfast is (you guessed it!) a fruit salad! Peach, honeydew, blueberries and a side of green apple slices. 🍑🍈🍏
It’s been so long since I had a real peach not from a jar or a can that I forgot how beautiful fresh peaches were in color and texture!! 😍 #freshisbetter

The Preparation Begins!!
I am participating in a 22 day vegan challenge that begins May 25th. I have decided to document my vegan journey through Instagram. To get prepared, today I am going through my kitchen and finishing/eliminating any non vegan food items. I also will begin my adventure into the grocery store today buy a whole new list of plant-based foods. Wish me luck 🌱

I’m sure you’re probably tired of seeing fruit salad every morning, but there are definitely ways to switch it up. Right now, I’m no longer able to add in the pumpkin seeds or the coconut, but I’m still really enjoying these fruit salads every morning! This is definitely a tradition that I will continue moving forward. 🍓🥝🍇🍍

Risotto done just right with pancetta, peas and mushrooms 🍄. Ohhhhh so good 😊 Its just too easy with Instant Pot to make SUMPTUOUS meals without the hassle in half the time(or less). I’m just feeling a bit invigorated lately with the extra time I have 😊. Maybe Yoga 🧘♀️
