I love the @instantpotofficial for so many reasons (you guys know my obsession with it) but I think my favorite has to be because of how many dishes are #onepot meals now (or almost, in this case). I posted a Calabash and Lentils recipe not too long ago; while this is the same idea, it is an entirely different flavor because of the caramelized onions. Presenting Calabash Lentil Soup. 🥣Ingredients: 1 medium calabash, peeled and cubed; 1 onion, thinly sliced; 1 tomato, diced; 3 cloves garlic, minced; 1-inch ginger, minced; 1 cup split pigeon peas, 1 teaspoon turmeric, ½ teaspoon red chili powder, 1 teaspoon oil, 1 teaspoon cumin seeds, a dash of garam masala, 1-2 teaspoons salt, and ¼ cup chopped cilantro. 🥣Method: In the #instantpot, add the calabash, lentils, tomato, garlic, ginger, turmeric, chili powder, and ½ the salt. 🥣Add 2 cups water and cook on the manual setting at high pressure for 15 minutes, with the pressure vent closed. 🥣Meanwhile, add the oil in a pan, and temper the cumin seeds. 🥣Add the onions and salt, and sauté till brown but soft. 🥣When the IP is done, let it sit for 5 minutes before releasing the pressure. 🥣If the consistency is too watery for your liking, you can turn the IP back on to sauté mode and let the soup come to a boil for 7-10 minutes. 🥣Mix in the onions and garnish with cilantro. 🥣This can be eaten with rice or other carbs, or just as a soup! 🥣While the calabash releases a lot of water, I have found that the lentils don't cook properly if you reduce the amount of water. Therefore, I would much rather boil off the water at the end, but you can tweak the recipe to your liking! 🥣This is high in protein, contains minimal fat, and is deliciously flavorful! 🥣The best part? The onions can be sautéed and stored in the fridge for up to 3 days! .

I love when "2 birds 1 stone" works out when cooking! Once I made the Healthier Pakoras (see previous post), I decided to make an old classic with the leftovers. Here's the recipe to Kadhi Pakora! 🍲Ingredients: 1 cup greek yogurt, ¼ teaspoon each of chili powder, turmeric, and coriander powder, ½-1 teaspoon of salt; ½ teaspoon of oil, 2 broken red chilies, ½ teaspoon cumin seeds, 2 minced garlic cloves, ½ inch piece of minced ginger, 2 sliced green chilies, a few crushed curry leaves, ½ diced onion, and some cilantro. 🍲Method: Whisk the greek yogurt until smooth and creamy, with no lumps. Add in 1 cup of water, chili powder, turmeric, coriander powder, and salt. 🍲Heat the oil on low-medium and temper the cumin, red chilies, garlic, ginger, green chilies, and curry leaves. 🍲Sauté the onions until translucent. 🍲Add the yogurt mixture and bring to a rolling boil. Do not exceed medium heat (the yogurt is at risk for curdling). 🍲4-6 minutes later, remove from heat and add in the pakoras. 🍲Garnish with cilantro and serve as a soup or over rice. 🍲This recipe is healthy (yay for almost oil-free pakoras!), simple, and so easy to make! While it may seem time consuming due to the pakoras, they do store well so you can prepare them ahead of time. In traditional kadhi, onion pakoras are used. We didn't mind the broccoli in ours, but it does change the flavor, so that's something to keep in mind if you plan on making this. All the probiotics, protein, and low fat! Whoop whoop! ⠀

I think my soulmate might be carbs, but in my defense, my husband had fair warning and still chose to be with me 💁🏽‍♀️! As I mentioned when I posted a traditional #pakoras recipe, I am not a fan of fried foods, so I tried my hand at making it healthier! 🥦Healthier Pakoras -- Ingredients: 1 sliced onion, florets from 1 broccoli, ½ cup chickpea flour, ½-1 teaspoon of salt, a pinch of turmeric, and a dash each of red chili powder, garam masala, coriander powder, and cumin powder. 🥦Method: Preheat oven to 415F. 🥦As with the traditional recipe, combine all the dry ingredients in a bowl first. 🥦Add tablespoons of water at a time (so important!) to slowly get the batter to a guacamole or toothpaste consistency (I apologize for my examples 🤦🏽‍♀️). This batter needs to be thicker than usual pakora batter! 🥦When ready, fold in the sliced onions into the batter. Take a spoon with a broccoli floret on it, and coat it with batter (a light layer). 🥦Place each battered floret on a lined cookie sheet, as shown in the photo. Spray the florets with oil and bake for 40-45 minutes, flipping them halfway. 🥦Serve with tamarind chutney. 🥦The "fried" nature of the pakoras will come through only if you use a light coating of the chickpea flour. A thicker coating may result in a softer inside, which may not be liked by some people. 🥦If you like things spicier, you will want to increase the amounts of chili powder and garam masala. 🥦Using an insignificant amount of oil in comparison to the norm cuts down on some serious calories! Talk about guilt-free! 🥦The best part is how the flavor is easily changeable by using different vegetables! Some suggestions are thinly sliced potatoes or raw plantains, only onion, spinach, corn, etc. 🥦What a great way to get picky eaters to eat more veggies! Bon Appétit!⠀

The last in the #avorotiseries (for now) are Avocado Fenugreek (Methi) Parathas! Like the potato-stuffed parathas shared earlier this week, methi parathas are extremely popular in Indian households. The leaves have a unique but strong flavor, providing an almost spiciness to the bread! Because of this, you don't even have to worry about making a side for this bread! 🥖Ingredients: 3 large Hass avocados, 3 cups whole wheat flour, ½ cup chopped fenugreek leaves, ½ red onion, diced; 1 teaspoon salt, and ¼ teaspoon red chili powder or 1 green chili, chopped finely. 🥖Method: Using the Avocado Roti recipe as a guide (see 2 posts back), make Avocado Methi dough (in other words, incorporate the ingredients listed above into the basic dough). 🥖Using a rolling pin and dusting flour, roll out flatbread, approximately 7 inches in diameter. 🥖On a heated skillet, cook on both sides  till slightly browned, brushing oil if desired. 🥖Since fenugreek leaves are hard to come by for a lot of us, they can easily be replaced with arugula (use ¼ cup) to attain the same "spicy" flavor. 🥖Alternatively, if the goal is to just get some greens in, your options are endless. Because of this, you don't even have to worry about making a side for this bread! 🥖Ingredients: 3 large Hass avocados, 3 cups whole wheat flour, ½ cup chopped fenugreek leaves, ½ red onion, diced; 1 teaspoon salt, and ¼ teaspoon red chili powder or 1 green chili, chopped finely. 🥖Method: Using the Avocado Roti recipe as a guide (see 2 posts back), make Avocado Methi dough (in other words, incorporate the ingredients listed above into the basic dough). 🥖Using a rolling pin and dusting flour, roll out flatbread, approximately 7 inches in diameter. 🥖On a heated skillet, cook on both sides till slightly browned, brushing oil if desired. 🥖Since fenugreek leaves are hard to come by for a lot of us, they can easily be replaced with arugula (use ¼ cup) to attain the same "spicy" flavor. 🥖Alternatively, if the goal is to just get some greens in, your options are endless. While sambar is popular due to the ease of access at almost every Indian restaurant, very few make it at home if they are not South Indian. Here's a recipe, simplified in the @instantpotofficial -- Pumpkin #Sambar! 🎃Ingredients: a slab of pumpkin, cubed (with peel); a lime-sized tamarind, soaked in water; 1 cup split pigeon peas, ¼ cup cilantro, a few curry leaves (or 2 kaffir lime leaves as a substitute), 1 teaspoon mustard seeds, ½ teaspoon turmeric, 1 ½ tablespoons sambar powder, 1-2 teaspoons salt, a pinch of hing (optional), and 1 teaspoon of ghee (or 2 teaspoons of oil). 🎃Method: Add the pumpkin, salt, sambar powder, curry leaves, and half the cilantro into the #instantpot. 🎃Extract tamarind and pour into the IP as well. 🎃In a smaller bowl, add the peas and 2 cups water. Place the steamer rack in the IP, and put the bowl on top. Close the lid and cook on manual at high pressure for 7 minutes, with the vent closed. 🎃In the meantime, heat up the ghee in a pan, and temper the mustard seeds, turmeric, and hing. 🎃Once it pops, add the remaining cilantro and take off heat. 🎃After the timer runs out, manually release the pressure, add the peas into the IP bowl, and remove the trivet. 🎃Turn the IP to sauté mode. It will start boiling soon. 🎃Once boiling, pour in the ghee, adjust for salt, and turn off the IP after 4 minutes. 🎃This to me is comfort food at its finest. It's healthy and packs a punch of flavor. If you only know the type of sambar usually available at restaurants, you have to try this! Sambar at restaurants generally contains an array of vegetables and is made suitable to go with multiple dishes, so you'll definitely notice a stark difference. My brother and his roommates are fantastic experimenters in the kitchen and over the years, have developed Tandoori Tofu Tacos which are phenomenal. I put my own spin on it mainly because I am not as patient as they are (making their own pita bread and all), but damn, these turned out good and just in time too, for #cincodemayo! 🌮Ingredients: 3 tablespoons @pataksusa tandoori marinade, 1 tablespoon dry tandoori masala, juice of one lime (mine resulted in 2 tablespoons), 1 tablespoon olive oil; a pack of @missionfoodsus artisan style tortillas, 2-3 bell peppers of choice (sliced), lots of cilantro, and 1 block of firm or extra firm tofu. 🌮Method: Remove tofu from packaging, sandwich the tofu between two plates, and place a heavy weight on top so the water catches in the plate to be poured out. 🌮In a bowl, mix the tandoori marinade, dry tandoori masala, olive oil, and lime juice. 🌮Heat a pan on high, and char the bell peppers (they need to be slightly browned but still crunchy). 🌮When the tofu is ready, cut long strips of tofu and place on lined cookie sheet. 🌮Heat oven to 475F. 🌮Brush the marinade generously on all sides of the tofu. 🌮Cook in the oven for 4 minutes of each side. If you choose to do so, you can also broil it for 1-2 minutes after cooking all sides, before removing from the oven. 🌮Slightly warm a tortilla, and build your taco with the bell peppers, tofu, and tons of cilantro. I strongly suggest pickled onions, avocado,and jalapeños as toppings! 🌮The OG creators of this recipe grill/char the tofu and attain a smoky flavor by placing the tofu on an non-lined cookie sheet or grill pan but I will do anything to wash one less dish 🤷🏽‍♀️. 🌮The cilantro is non-negotiable unless it tastes like soap to you! 🌮It’s my first time trying their artisan tortillas and I honestly prefer them over the originals! 🌮And lastly, taco bout a party because guess who also posted the drink hiding in the back?! Indian Egg Curry is so interesting because how it tastes depends entirely on where the person is from. As you move from region to region, the difference in flavor for the same dish is pleasantly surprising. 🍳Ingredients: 6 hard-boiled eggs, cut in half; 1 onion, diced; 1 tomato, diced; 2 cloves of garlic, minced; 1-inch piece of ginger, minced; 1 bay leaf, 1 tablespoon tomato paste; 1 teaspoon salt, ½ teaspoon red chili powder, a dash of garam masala, ½ teaspoon turmeric, ½ teaspoon cumin powder, a dash of ground black pepper, 2 teaspoons coriander powder, 2 teaspoons oil, a handful of cilantro, and some chopped scallions. 🍳Method: In a pan, heat 1 teaspoon of oil and sprinkle with ground black pepper. Place the egg halves yolk down, and roast for a minute until slightly browned. Set aside. 🍳Heat the remaining oil and add the bay leaf, garlic, and ginger, and sauté for a minute. 🍳Add the onions, salt, and turmeric, and cook till translucent. 🍳Add the tomatoes and cook till juicy. 🍳Add the tomato paste, 2 tablespoons of water, and the remaining spices. 🍳When the tomatoes are fully cooked through, add the eggs, cilantro, and scallions, and mix well. Remove from heat almost immediately, as you don't want the eggs to break apart. 🍳If you don't have fresh tomatoes on hand, you can double the amount of tomato paste. 🍳This is an easy dish packed full of protein, which we chose to eat with @damascusbakeries lavash, found at @costco! 🍳Please don't judge my poor egg-peeling skills. Let's all pretend those eggs are pristinely beautiful, shall we? 🍳This is very similar to my Shakshuka recipe, with the difference being the way the eggs are prepared! ⠀

Set aside. 🍳Heat the remaining oil and add the bay leaf, garlic, and ginger, and sauté for a minute. 🍳Add the onions, salt, and turmeric, and cook till translucent. 🍳Add the tomatoes and cook till juicy. 🍳Add the tomato paste, 2 tablespoons of water, and the remaining spices. 🍳When the tomatoes are fully cooked through, add the eggs, cilantro, and scallions, and mix well. Remove from heat almost immediately, as you don't want the eggs to break apart. 🍳If you don't have fresh tomatoes on hand, you can double the amount of tomato paste. 🍳This is an easy dish packed full of protein, which we chose to eat with @damascusbakeries lavash, found at @costco! 🍳Please don't judge my poor egg-peeling skills. Hyderabad is special for us: it's my husband's home, my favorite city in the world, and the place where we fell in love, not surprisingly over food. A gem amongst many is the Hyderabadi Bagara Baingan/Tempered Spices and Eggplant; it's commonly found in Indian buffets and looks more daunting than it really is. 🍆Ingredients: 2 pounds of Thai eggplants, or one big #eggplant cut into 2-inch wedges; 1 diced onion, ½ cup cilantro, 1 cup peanut butter, 1 tablespoon coconut powder, 2-inch piece of tamarind, 1 teaspoon red chili powder, ½  teaspoon garam masala, 2 teaspoons sesame seeds, ½ teaspoon coriander powder, a pinch of cumin powder, and 1-2 teaspoons salt. 🍆Method: Preheat oven to 400F. 🍆Make slits in the Thai eggplant and rub with oil. Place on a lined cookie sheet and sprinkle with some salt. 🍆Bake for 15 minutes or until mostly cooked. 🍆Heat oil in a pan and sauté the onions until translucent. Summer is a state of mind, and let me tell you, I’m all here for it. Because I was craving fresh and fruity flavors, I made Blackberry Peach Breakfast Jars! 🍑Ingredients: 8 ounces frozen peaches, 8 ounces fresh blackberries, 1 teaspoon turmeric, 3-5 mint leaves, 1 ½ cups almond milk (I love @califiafarms — I don’t buy anything else!), 1 tablespoon slivered pistachios, 2 teaspoons pure maple syrup, 4 tablespoons chia seeds, and 4 tablespoons rolled oats. 🍑Method: Blend the almond milk, peaches, turmeric, mint, and maple syrup until smooth. I love the @vitamix for this, because the blades are strong enough to blend the frozen fruit smoothly in next to no time! 🍑Fill 2 jars with even amounts of chia seeds, and the other 2 with even amounts of the oats. 🍑Fill each jar with the milk, leaving room for the berries. 🍑Top off with as many blackberries as the jar allows, followed by 1 teaspoon of pistachios. 🍑This is packed with antioxidants, and the anti-inflammatory turmeric helps with digestion and immunity. It’s an amazing source of energy, especially on weekday mornings! 🍑It is extremely easy to make since it uses ingredients that require no prep. 🍑Granola or almonds can be used in place of pistachios. 🍑I have an unusual week so I only needed 4 jars and filled them fully with milk. The same measurements will work for 5 jars — you just won’t be cramming your blackberries in like I did! 🍑It’s a good week to have a good week, everyone! .

If you follow me on #instastories, you know that I have a slight obsession with @costco, and recently found these @lotusfoods brown rice and millet noodles! After receiving fantastic response to the Thai Red Curry Noodles I made with these, I am so excited to share basic Stir Fry Noodles with you! 🍝Ingredients: 3 noodle cakes, cooked according to instructions on the bag; 1 onion, diced; 1 ½ cups frozen vegetables (no need to thaw); 1 teaspoon olive oil, 1 tablespoon minced garlic, 1 teaspoon ground black pepper, and 1 teaspoon soy sauce. 🍝Method: Heat the oil in a pan, shock it with garlic and black pepper, and sauté till slightly browned. 🍝Follow with the onions and sauté till transuclent. 🍝Add the vegetables and cook till sizzling (about 3 minutes). 🍝Remove from heat, and add the soy sauce. 🍝Toss in the noodles until everything is mixed well. 🍝Serve hot, and with sesame seeds as garnish, if desired. 🍝This takes less than 15 minutes from start to finish, is packed full of flavor, and is guilt-free! .

The only pictures you used to see of me were like the ones on the left— me crouching down, helping one of the kids with something; or hiding in the background, hoping not to be noticed. Rarely was I the intended subject of a pic, but rather found there in error. An unwilling or accidental participant, captured by happenstance. 
So often as mothers, we lose ourselves in the service of our families. We sacrifice so much of who we once were for the greater good that we often become unrecognizable in our current state. 
It wasn’t until I decided to invest the time & effort back into myself that I realized what an invisible spectator to my own life I had become. Too run down to participate fully. Convinced that this was the best life had to offer me after kids. If only I had known then what I know now... I feel sad when I look back on these “old me” pictures— knowing I wasted so many years not feeling (and as a consequence not looking) my best. It’s hard to realize there will never be happy pictures of me playing & smiling with my kids when they were young. Take a page out of my book... don’t wait for “some day” y’all. Life is too freaking short for you to miss any of it sitting on the sidelines. 
So if I post a whole lotta selfies & pics highlighting ME, just know I’m making up for lost time. Cuz when you’ve finally created a life you absolutely love, you want to make sure you don’t forget a single moment. I’m 43 & a mom of 5, y’all... my memory SUCKS 😉
