READ: Recently I’m been swamped in writing a cookbook and I reached out to my friend @ct_ceramics and asked for some pottery for picture purposes. Cody and I met because I noticed some of his work at @milessmithfarm and dropped him a message. After several hours of talking about our passions in life, I asked him to make a fermenting vessel for myself and my crew at @thefarmersdinner (spoiler alert to @chefchrisviaud & @anthony.newman.3597 I have gifts for you) Cody took it on as a project and today he gave me the first prototype. When you write a cookbook you learn a lot of things quickly, one of which is you end up with a ton of leftovers, food scraps and “waste.” One of my favorite uses for scraps is kimchi. So big thanks to Cody for this unbelievably beautiful work of art. We are going to put this to good use.
Well, this batch of #kimchi#kimchee isn’t exactly my favorite I’ve ever made. It’s a bit too sweet, & I think that my #koreanchiliflakes#gochugaru are a bit past their prime. I have been using the same bag for years. I think what I need to do, is find some without salt, so that I can make my own mixture. Salt is obviously essential here. But, I’d rather choose my own kind of salt, and the flavor consistency of chilies to that salt. Most commercially prepared #korean chili flakes are premixed. I just feel that I’m not getting the best results with those. I’ll probably just use this for cooking. When I’ve had problems before, batches similar to this one, I made a broth & put noodles in it. Delicious quick snack, sufficiently satisfying.

So I was really planning to have a salad then my friend convinced me that the salad would have the same number of calories as the burger, (and I'm easily convinced when it comes to burgers 😂)so this happened...
I ordered the kimchi burger from @hawksmoorrestaurants, I really liked the meat but for the love of burger, ask them to remove the English mustard when you order!!! It really ruins the taste and it's not mentioned on the menu.
Also if you go, make sure to check the bar menu as well as it has extra items not on the main menu.
