Keto banana bread🤤
All this recipe calls for is:
-3 overripe medium bananas
-1/2 cup walnuts
-1/4 cup olive oil
-2 cups almond flour
-1 tsp baking soda ••••
I combined all the ingredients in a large mixing bowl and used an electronic mixer on high until they were evenly combined. After pouring the batter into the loaf pan, I used another banana to add the slices on top. Bake at 350° for 55 min and enjoy your low-carb sugar-free sweet treat!!! 🤪🍌🍬🍞
Day 21: Getting Lost 🍤
In the sauce, obviously 🙄 but on a real note, I’m about to post about cheating on keto 😧
🏡 I’m home visiting family, and am about to go on a two week trip to Japan to visit more family! Very exciting and much needed, but along with this comes TONS of temptations and limitations. No one in my family is keto, and it’s been difficult to navigate around everything and still follow my diet (especially when there’s crack pie in the fridge?!)
🤭 it started with some hash browns, and ended with me finding myself eating a piece of aforementioned crack pie... with my hands..... before I even closed the fridge.... I’m not perfect. But neither is any diet! My point is, you can’t beat yourself up when things go wrong
💪🏼 Slip ups are going to happen, and there may be days when you just say h*ck this and eat something you regret (or savor!) and throw yourself off. That’s okay! As long as you stick to getting back on track for your goals. I’m giving myself a little slack while I’m in Japan, but am fully prepared to go hardcore when I get back.
❤️ If you’re willing to face your set backs, overcoming them and reaching your ultimate goals is always possible. I’m in this to feel good and be happy, so I’m gonna do just that.
⚠️ Hopefully this is obvious but if anyone is doing keto for health benefits like controlling epilepsy or blood sugar, PLEASE do not take my advice! In these cases where it’s medically important to stay in ketosis, it’s always worth it to stay strong.

The family and I went to the zoo this weekend, and I’ll have you know that I DID NOT cave! Stayed keto the whole time 😎 Super huge victory for me because last time I went to the zoo, I completely fell off keto for weeks. Woot woot!
This morning I did wake up craving a McDonalds McGriddle so badly, though.. so I decided to improvise. I used my 90 second bread recipe, added a little sugar free maple syrup to the mixture, and made a sandwich with cheese, egg, and sausage.. then I used a little sugar free maple syrup on the side to dip! Absolutely delicious! —————
90 sec bread:
3 TBSP almond flour
1 1/2 TBSP melted butter
1/2 tsp baking powder
Dash of salt
1 TBSP sugar free maple syrup—
Microwave for 90 seconds and then toast!

Buttered Cabbage and Ribeye Steak 🥩 ..not the prettiest plate but still delicious 😋 I pan fried the steak (seasoned with salt and pepper) in avocado oil and then cooked the cabbage (seasoned with salt, pepper, garlic powder and red chili flakes) in the same pan, grease and all, plus added butter 💁🏽♀️#ketodinner
Today I ran my first 10k (6.2mi) race since having kids AND being completely keto. I was super nervous about training and the big day while sticking to keto as everything I’ve been taught previously about running is all carbs, carbs, carbs. The race went great! I have a BPC prior to, and sugar free electrolytes during. I even made room in my macros for 1/4 of a banana after the race 😂 Chase your dreams people! ✌🏻💪🏼🏃
Chicken Bacon Ranch Casserole - Super easy, quick and delicious meal. Recipe below.
Made this #keto dinner for my picky eating kids. They polished this dish! Husband and I are going #ketocarnivore#zerocarb tonight with cheese stuffed bacon wrapped hot dogs (see previous post).
Rotisserie Chicken Shredded (tonight's was a store bought from Costco)
8 Strips of Cooked Bacon Crumbled (I used Garrett Valley Sugar-free Dry Rubbed Bacon)
3 Cloves of Minced Garlic (I buy the pre-minced tub of garlic from Costco)
3/4 cup of Ranch Dressing (I used Primal Kitchen Ranch - I'll share this in a separate post)
1 cup Shredded Mozzarella Cheese
1 cup Shredded Cheddar Cheese
4 cups steamed broccoli cut into pieces
How to make:
Preheat oven to 350degrees. In a large bowl combine the shredded chicken, crumbled bacon, minced garlic, ranch dressing, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese, and broccoli. Mix well. Salt and Pepper to taste. Place chicken mixture in a greased 9x13 casserole dish. Spread evenly. Sprinkle remaining 1/2 cup cheddar and mozzarella cheese over the top of casserole. Bake for 15 minutes. Serve and enjoy!
Iftar tonight was so delicious. I made this beef using @ghughessugarfree bbq sauce and I still can’t believe how good it tastes. Tastes like a normal carby sauce and that makes me happy 😌 The mashed cauliflower had cream cheese, butter, hwc, grated Parmesan, garlic powder, parsley flakes, salt and pepper. I must say, I really outdid myself tonight 😌😌
Tomato Basil Meatballs
Total Time: ~30 Minutes
Preparation Time: 5 Minutes, Baking Time: 15 Minutes, Cooking Time: 5 Mins
What do you need - Chicken Meat Balls?
100 Gms Ground Chicken
1 large eggs
25 Gms Soy Flour
1 Tsp Parsley
1/2 Tsp Oregano
1 Tsp Red Chili Flakes
1/2 Tsp Basil
1/2 Tsp Thyme
1 Tsp Salt
2 Tsp Onion Powder
1 Tsp Garlic Powder
1/4 Tsp Black Pepper Powder
1/4 Tsp Red Chili Powder
What do you need - Tomato Basil Sauce?
Chopped Bell Pepper
1/2 Cup Tomato Puree
2 Tbsp Basil/Dried Basil
1 Tsp Red Chili Powder
2 Tsp Garlic Powder
1 Tbsp Olive Oil
Let the magic begin:
Add 1/2 Cup water to Soy Flour and let it rest for 2-3 mins, till the Soy Flour soaks the water and resembles the texture of ground chicken.
Add Parsley, Oregano, Red Chili Flakes, Basil, Thyme, Salt, Onion Powder, Garlic Powder, Black Pepper Powder, Red Chili Powder in a bowl and mix well.
Add Ground Chicken, Egg & Soy Flour to the dry seasoning and mix well.
Let it rest for few minutes.
Roll the mixture into small bite sized meatballs.
Spritz with Olive Oil.
Bake in the oven at 400F for 12-15 Minutes or Air Fry in Airfryer at 325F for 15 Minutes till golden brown and well cooked.
Let's Make Tomato Basil Chicken Meatballs:
Heat 1 Tbsp Olive Oil in a Pan
Add Tomato Puree, Basil, Garlic Powder, Red Chili Powder, Salt, 1/4 Cup Water and let it cook till well done.
Add the Chicken Meatballs and let it absorb the tomato puree.
Add Red Bell Peppers and cook for 3-4 minutes
Relish the Lip Smacking Good Tomato Basil Chicken Meatballs.

I meant to make this last weekend when I had my "Maker's Weekend" but had lots of goodies that I should save it.
I'm almost finished all the mascarpone and the custard but haven't touched the yogurt yet!
I improvised it a little and I don't think I added enough acid because I didn't get very much. *DOH* 🤦♀️ Alas, note to self for next time! 😉
Have you made your own cheese before?
This recipe was super easy.
1L high fat milk (3%) or cream (not UHP)
Place everything in the Instant Pot and set for low pressure, 4 minutes.
Let sit on warm for 10 minutes before releasing pressure.
Scoop out curds into colander lined with a few layers of cheesecloth. Squeeze out excess whey.
Place cheesecloth with curds in a mold and weigh down overnight in fridge.
That's it! (I substituted citric acid for the vinegar and I don't think I added enough. I used whole milk because I wanted to save the cream for fatty morning coffees. No worries, I'll give it another try 😉) . .
NSV time. This hoodie hasn’t fit in idk how long. I pulled it out today and was like yeah this looks too small, I don’t think it’ll fit. But it did. Do I care that it’s too thick for a 95° day? I do not. 😌 Also, 1/3 of the way through my goal # of workouts!!
