All this recipe calls for is:
-3 overripe medium bananas
-1/2 cup walnuts
-3 eggs
-1/4 cup olive oil
-2 cups almond flour
-1 tsp baking soda ••••
I combined all the ingredients in a large mixing bowl and used an electronic mixer on high until they were evenly combined. After pouring the batter into the loaf pan, I used another banana to add the slices on top. Bake at 350° for 55 min and enjoy your low-carb sugar-free sweet treat!!! 🤪🍌🍬🍞

🏡 I’m home visiting family, and am about to go on a two week trip to Japan to visit more family! Very exciting and much needed, but along with this comes TONS of temptations and limitations. No one in my family is keto, and it’s been difficult to navigate around everything and still follow my diet (especially when there’s crack pie in the fridge?!)
•
🤭 it started with some hash browns, and ended with me finding myself eating a piece of aforementioned crack pie... with my hands..... before I even closed the fridge.... I’m not perfect. But neither is any diet! My point is, you can’t beat yourself up when things go wrong
•
💪🏼 Slip ups are going to happen, and there may be days when you just say h*ck this and eat something you regret (or savor!) and throw yourself off. That’s okay! As long as you stick to getting back on track for your goals. I’m giving myself a little slack while I’m in Japan, but am fully prepared to go hardcore when I get back.

❤️ If you’re willing to face your set backs, overcoming them and reaching your ultimate goals is always possible. I’m in this to feel good and be happy, so I’m gonna do just that.

Here’s the recipe for the brownies I made!!!

Ingredients:
- 130g of @naturalrawc  coconut oil from @woolworths_au
- 150g of @naturally_sweet_australia powdered erythritol (add more or less to taste)
- 80g cocoa powder (no sugar, low carb) I used @colessupermarkets home brand. - 75g @lucky.nuts almond meal
- 2 free range whole eggs*
- 1/2 teaspoon salt
•
Method:
1. Preheat oven to 180C/350F. 
2. Add coconut oil, erythritol and cocoa powder to a large heat proof bowl. Microwave for 30 seconds to allow coconut oil to melt. Mix thoroughly. 
3. Add eggs one at a time. 
4. Add almond meal and salt. Mix thoroughly. 
5. Seperate evenly into 12 cupcake moulds. 
6. Bake for 10-15 minutes**
•
*if your eggs are cold, your mixture will thicken due to the coconut oil. This means you’ll have more of a cookie dough mixture and will have to scoop the mixture into the moulds. If your eggs are at room temperature, your mixture will be a thin pancake type consistency and you will have to pour your mixture into the moulds. My eggs were cold but I prefer when they are room temperature!

**the key is to not over-bake so you have a soft texture on the inside of every cupcake! I baked for 12 minutes.

This morning I did wake up craving a McDonalds McGriddle so badly, though.. so I decided to improvise. I used my 90 second bread recipe, added a little sugar free maple syrup to the mixture, and made a sandwich with cheese, egg, and sausage.. then I used a little sugar free maple syrup on the side to dip! Absolutely delicious! —————
90 sec bread: 
3 TBSP almond flour
1 1/2 TBSP melted butter
1/2 tsp baking powder
1 egg
Dash of salt 
1 TBSP sugar free maple syrup— 
Microwave for 90 seconds and then toast!

1tbs Dutch cinnamon 
1tsp caraway seeds
1 1/2 tbs Butter 
Filtered water 
Pinch of salt 
Pan with butter cinnamon, caraway seeds ginger and activate spices. Add diced and peeled apples, cover with water -/just above the amount of apples. Stew on medium heat till soft . Then mash into a chunky, what I call “Rustic apple sauce”

I was super nervous about training and the big day while sticking to keto as everything I’ve been taught previously about running is all carbs, carbs, carbs.  The race went great! I have a BPC prior to, and sugar free electrolytes during. I even made room in my macros for 1/4 of a banana after the race 😂 Chase your dreams people! ✌🏻💪🏼🏃

Ingredients:
Rotisserie Chicken Shredded (tonight's was a store bought from Costco)
8 Strips of Cooked Bacon Crumbled (I used Garrett Valley Sugar-free Dry Rubbed Bacon)
3 Cloves of Minced Garlic (I buy the pre-minced tub of garlic from Costco)
3/4 cup of Ranch Dressing (I used Primal Kitchen Ranch - I'll share this in a separate post)
1 cup Shredded Mozzarella Cheese
1 cup Shredded Cheddar Cheese
4 cups steamed broccoli cut into pieces

How to make:
Preheat oven to 350degrees. In a large bowl combine the shredded chicken, crumbled bacon, minced garlic, ranch dressing, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese, and broccoli. Mix well. Salt and Pepper to taste. Place chicken mixture in a greased 9x13 casserole dish. Spread evenly. Sprinkle remaining 1/2 cup cheddar and mozzarella cheese over the top of casserole. Bake for 15 minutes. Serve and enjoy!

Tastes like a normal carby sauce and that makes me happy 😌 The mashed cauliflower had cream cheese, butter, hwc, grated Parmesan, garlic powder, parsley flakes, salt and pepper. I must say, I really outdid myself tonight 😌😌

Total Time: ~30 Minutes
Preparation Time: 5 Minutes, Baking Time: 15 Minutes, Cooking Time: 5 Mins

What do you need - Chicken  Meat Balls?
100 Gms Ground Chicken
1 large eggs
25 Gms Soy Flour
1 Tsp Parsley
1/2 Tsp Oregano
1 Tsp Red Chili Flakes
1/2 Tsp Basil
1/2 Tsp Thyme
1 Tsp Salt
2 Tsp Onion Powder
1 Tsp Garlic  Powder
1/4 Tsp Black Pepper Powder
1/4 Tsp Red Chili Powder

What do you need - Tomato Basil Sauce?
Chopped Bell Pepper
1/2 Cup Tomato Puree
2 Tbsp Basil/Dried Basil
1 Tsp Red Chili Powder
2 Tsp Garlic Powder
1 Tbsp Olive Oil

Let the magic begin:
Add 1/2 Cup water to Soy Flour and let it rest for 2-3 mins, till the Soy Flour soaks the water and resembles the texture of ground chicken.
Add Parsley, Oregano, Red Chili Flakes, Basil, Thyme, Salt, Onion Powder, Garlic Powder, Black Pepper Powder, Red Chili Powder in a bowl and mix well.
Add Ground Chicken, Egg & Soy Flour to  the dry seasoning and mix well.
Let it rest for few minutes.
Roll the mixture into small bite sized meatballs.
Spritz with Olive Oil.
Bake in the oven at 400F for 12-15 Minutes or Air Fry in Airfryer at 325F for 15 Minutes till golden brown and well cooked.

Let's Make Tomato Basil Chicken Meatballs:
Heat 1 Tbsp Olive Oil in a Pan
Add Tomato Puree, Basil, Garlic Powder, Red Chili Powder, Salt, 1/4 Cup Water and let it cook till well done.
Add the Chicken Meatballs and let it absorb the tomato puree.
Add Red Bell Peppers and cook for 3-4 minutes

This recipe was super easy.

1L high fat milk (3%) or cream (not UHP)
1/4c vinegar

Place everything in the Instant Pot and set for low pressure, 4 minutes.
Let sit on warm for 10 minutes before releasing pressure.

Scoop out curds into colander lined with a few layers of cheesecloth. Squeeze out excess whey.

Place cheesecloth with curds in a mold and weigh down overnight in fridge.

That's it! (I substituted citric acid for the vinegar and I don't think I added enough. I used whole milk because I wanted to save the cream for fatty morning coffees. No worries, I'll give it another try 😉) . .
