I’M HOME!!!!! My husband and I, along with some of our closest friends, spent the weekend camping in Yosemite! For as long as I can remember, camping trips were spent eating lots of junk food, drinking lots of beer, and especially stuffing myself full of S’MORES!! This camping trip was ALL KETO! First night was burgers with cheese, egg salad and broccoli salad! I had a little tequila also 😃 For my hike I had Parmesan crisps, a quest bar, Keto friendly jerky sticks, and macadamia nuts. Dinner was a chicken caesar and eggplant parmesan! I had no problem when everyone whipped out the s’mores because I made myself a Keto cheesecake and whipped cream, yuuuuum! ALSO, I had SO much energy on my hike. I am not usually a hiker because I’ve always been too lazy and not good at it, so tired. I hiked 10 miles this day and still had energy. AMAZING!! I can’t tell you how happy I am returning home and not feeling like crap from eating junk food. I can’t wait for our next trip to Maui in 12 days! I am positive I can conquer that vacation and stick to Keto. Cheers!!!
Let me tell you why this here is #GROWTH ! Per my last post, I went out of town briefly to visit family. This was my first time going home since starting #keto . When I go to my home town, my family gets DOWN in the kitchen, seriously!! My auntie told me she made bbq ribs, fried chicken, mac & cheese, green beans & potato salad and asked me what I wanted 👀. Growth manifested when I said, “just bring me bbq ribs & green beans, please” 😱😩. Little did I know she would include bbq chicken too. I’m so determine that I declined my FAVORITE foods but I know it’ll payoff. Believe me when I say, my family NEVER disappoints when the pots come out!! That said, if I can do it, SO CAN YOU!!! Patting myself on the back 😁
So, I have really been struggling on my Keto journey lately. It has just been too easy to make the wrong choices. Where I could once feel my clothes getting looser they are now getting tighter and I don't like that. Emotional eating has always been my thing no matter the emotion I needed to eat. My mind and negative thinking are my own worst enemy. Tomorrow though is day 1 to my new journey, I will not look back and dwell on the past mistakes but move forward and focus on current and future success. I had my a1c checked in September and it was 6.9 which was super exciting because the previous March it was a 13.1. When I went this past March it was up to an 8.2 which was definitely disappointing. I go back in June and am looking forward to seeing a 6.9 or less. For me this is not just a weight-loss journey but a healthy journey and I can definitely win! So tomorrow is day 1 of my 100 day Keto reset!

I’m in the office for a couple days this week so nothing too exciting on those days.
But on the other days I’ll be having-Breakfast- eggs with tomatoes, spinach and mushrooms topped with fresh Parmesan.
Lunch- Tuna on @traderjoes crisp bread.
Snack- berries and PB fat bombs.
Dinners- meat and green veggies 👍🏻

We’re getting our new dishwasher installed on the 5th so we will finally have pretty plated food again!
Im in complete shock! I have NEVER had a ketone level this hi before. This is what testing your blood glucose levels to see how your food effects your blood does! I’m finding out what foods effect MY body and which foods to stay away from to lower the glucose in my blood to help make my body a true fat burning machine. This is the most amazing prof of chemistry in my own body!!
Bit of a train wreck day. I couldn't eat more than half my macros because I made a silly decision to have two bunless big macs when we took the kids to McDirties. Bad idea. Haven't had a big Mac in over a year and my body is rebelling. Ate it 7 hours ago and I am STILL feeling tired, sluggish,upset stomach, just like a hangover. I can't eat anymore today. I'll try again tomorrow. In other news... How the eff do you people make 80% fat, 15% protein, and 5% carbs work? HOW. give me ideas below please I beg you.

Whoops - spilt some olive oil! haha This salad was delicious! It includes vegan BACON! I'm not usually one to try to make meat products without the meat but this 'bacon' was made out of shiitake mushrooms and really delicious!
I'm not sure why I insist on doing this to myself, but I had to experiment with a hot dog style recipe. I used a recipe from lowcarbyum.com (Nearly No Carb Keto Bread) and divided it into 1/8th the recipe. Turned out better than I anticipated! Now throw a brat, keto chili and some cheese and you've got yourself a great meal 🤣. #ketoforlife#ketogenic#carbsarethedevil#ketokitchenexperiments
