Last nights dinner, Creamy Cheesy Chipotle Chicken 🤤🤤🤤🤤 I used about 1/2 tablespoon of butter to a pan and added 4oz of cream cheese. I melted the cream cheese then added on small can of chipotle salsa (La Preferida) and mixed it thoroughly. I cubed chicken breast and cooked it in 1/2 Tbsp of butter in a pan until fully cooked. I then added the chicken to the sauce and heated it while mixing it together until super creamy and well mixed. Serve with 2 Tbsp of sour cream and a dash of pink Himalayan salt. I used 6oz of chicken breast. 681 calories, fat 54%, protein 38% and carbs 8% ~Amanda~ this is a family favorite! My husband and 4 kids LOVE this so much! Who wants to try my peanut butter cheesecake fat bombs? 🥜 They are delish!
8 oz. cream cheese, softened to room temperature
1/2 c. peanut butter
1/4 c. coconut oil + 2 tbsp.
1 tsp. kosher salt
1 c. dark chocolate chips
Line a small baking sheet with parchment paper. In a medium bowl, combine cream cheese, peanut butter, ¼ c coconut oil, and salt. Using a hand mixer, beat mixture until fully combined, about 2 minutes. Place bowl in freezer to firm up slightly, 10 to 15 minutes.
When peanut butter mixture has hardened, use a small cookie scoop or spoon to create golf ball sized balls. Place in the refrigerator to harden, 5 minutes.
Meanwhile, make chocolate drizzle: combine chocolate chips and remaining coconut oil in a microwave safe bowl and microwave in 30 second intervals until fully melted. Drizzle over peanut butter balls and place back in the refrigerator to harden, 5 minutes. Serve.
To store, keep covered in refrigerator.
