Breakfast this morning at Cup Cafe with @megamikexp. It was a banana nut French toast kind of weekend 😬 It was delicious! I plan on eating g my way through the menu and forcing myself to get something different every time. There are so many good options so it should t be too difficult.
whatchall bringing to the cookout? these blackened shrimp stuffed deviled eggs always go:
1 cup medium or large raw shrimp, peeled and deveined
1 tbsp butter
~1 tsp blackening seasoning
6 large eggs, hard-boiled and peeled
2 tbsp mayonnaise
2 tbsp sour cream
1 tsp Dijon mustard
juice of half a lemon
few shakes of hot sauce
salt & pepper
smoked paprika (for garnish)
green onions, finely chopped (for garnish, optional)
Pat shrimp dry and season very well with blackening seasoning. Melt butter in a pan over high heat and cook shrimp until opaque and cooked thoroughly, about 1-2 minutes each side. Remove from pan. Reserve about half of the shrimp for garnish, and finely chop the other half.
Halve the eggs lengthwise. Remove the yolks and place in a medium bowl. Combine yolks with mayonnaise, sour cream, dijon mustard, lemon juice and hot sauce; stir until smooth. Fold in the chopped shrimp. Add salt and pepper to taste. Fill the egg whites evenly with the yolk and shrimp mixture (use a ziplock as a piping bag and cut off one corner to pipe into eggs). Garnish with remaining shrimp (cut larger shrimp in half), paprika and chopped green onions.
Hope everyone is enjoying their summer kickoff weekend! Who made it to #territorydays2018 in @oldcoloradocity, or @meadowgrassfest in Black Forest? How about the Marg & Taco tour with @localmotivepartybus? Let us know what #localfoodanddrinks you’re enjoying this weekend!
Chicken And Cheese Cakes With Garlic And Lemon Aioli.
Ingredients: for the cakes-
500 GMs boneless chicken, cut into tiny pieces
1 and 1/2 cups grated mozzarella
1/2 tsp pepper
1 tsp salt
1 red or green chilli seeded
1/4 cup mayonnaise
1/4 cup flour
3 Tbsp parsley chopped
For the garlic and lemon aioli-
1/2 cup mayonnaise
Zest of 1 full lemon
2 big garlic chopped
1 Tbsp parsley chopped
Juice of 1/2 lemon
Pinch of salt
For the chicken and mozzarella cakes, simple add it all together. And for the garlic and lemon aioli mix all the ingredients together and keep aside. Now you can make this two ways, first- take little oil in a pan and scoop out portions with an ice cream scoop and pan fry till nice and golden on each side. Or second- you could make oil hot in a deep pan and scoop out portions and deep fry the cakes till golden all over. Serve hot with the aioli. Delicious and cheesy cakes are ready:))
Every month this great blog @sallysbakeblog hosts a Monthly Baking Challenge known as #sallysbakingchallenge . As part of the challenge, on the 1st of the month, Sally posts a recipe or general concept for her followers to try for themselves. This month, for the May Baking Challenge, the recipe was cheesecake! So I love love love cheesecake, as does Nevin, so this was a no-brainer (see my recent post where i made these for his birthday!) Plus, when I saw her recipe for mini cheesecakes I knew it was the perfect opportunity for me to make many different types, especially Oreo, which is my favorite. Stay tuned for my Oreo recipe which I will post in the coming days. For now, enjoy these plain mini cheesecakes (with only a very slight modification from yours truly), and top them with toppings of your choice. I recommend strawberry compote, a recipe that can also be found on @sallysbakeblog. Seriously these are so so yummy, easy to make, and a perfect last-minute addition to your #memorialday BBQs! What are you waiting for? Grab the recipe on pinchpurrfect.wordpress.com (link in bio) and make these! You won't regret it

“I got the sauce, you know I’m saucyyyy”- the love of my life (Rihanna)and also this egg slider courtesy my mom 💃🏽💃🏽
I’m no longer home (😭😭😭) but I can’t stop thinking about this spicy scrambled egg slider (a long-term easy family breakfast staple). My mom just makes her signature spicy scrambled eggs with onions and tomatoes (you wanna cook the eggs a little longer than you would normal scrambled eggs for that authentic Indian ‘bhurji’ effect) and slides it onto a bun with some cheese 🤤🤤 For some reason we’ve never grilled this (?) but I’m convinced now that grilling will only enhance its magic properties ✨✨
On the plate: Spicy scrambled egg sliders with cheddar on a sooooft buttered bun+ my overeager attempts at ketchup art (‘art’)
