Shoyu Ramen using Kishibori Shoyu, aged miso, 4 broths - Chicken, Dashi, Fish, & shrimp + anchovy, with Chi-Yu, La-Yu, Mayu , homemade noodz, chasu and 6min pickled egg. I meant to add Hijiki too as it’s a salty ramen and a different texture would break up the flavour profile quite nicely. I have always preferred Shio over Shoyu ramen but I think every bowl has a time and place, and today was definitely a good time for this one. #shoyuramen

Homemade playdough smells a lot nicer than the bought stuff! (And is a lot cheaper.) I made these vibrant primary colours for my girls' birthday party, enough for everyone to have their own little container. Throw in a few biscuit cutters, mini rolling pins and some other toys and you've got a fun activity to keep kids (and adults 😉) busy.
1 cup water
1 tablespoon vegetable oil
1/2 cup salt
1 tablespoon cream of tartar
1 cup flour
Combine water, oil, salt, cream of tartar, and food coloring* in a saucepan and heat until warm (not boiling). Remove from heat and add flour. Stir, then knead until smooth. The cream of tartar makes this dough last for months, so resist the temptation to omit this ingredient if you don't have it on hand. Store this dough in an airtight container or a Ziploc freezer bag.
_ *If you're making a lot (I made a 4x recipe then divided into 3 colours) or want to make a single batch into many different colours, mix as directed except for the food colouring! Once you've got plain dough made, divide it as desired, put on some kitchen gloves and carefully knead the food colouring into the dough. Food colouring might splash out depending on how you knead it, so be very careful and cover your area (and clothes) if required.

This month has been all about food. I've been travelling around with @sonya_carra collaborating on a project about ingredients - taste, tradition, provenance, and the intersection of old and new knowledge.
Preparations underway for wazwan, a ceremonial Kashmiri meal.
"Kalmi Vada recipe"
Potato – 2
Chana Dal – 1 bowl
Ginger – 1 small piece
Green chilli – 1 or 2
Eno salt – 1 spoon
Salt to taste
Oil – for frying
Soak the chana dal for 2 hours in warm water. Rinse and grind dal with ginger and green chilli to a coarse paste.
Grate potatoes and mix with the dal paste. Add salt to taste.
Grease a wide vessel which you're going to make the kalmi vadas in. Heat water in a bigger vessel for steaming.
Add the Eno salt to the dal batter and mix well. Transfer the batter to the greased vessel and steam it on a low-medium flame for 20 minutes.
Once the steamed mix cools down, cut it into rectangular pieces and store it in the refrigerator till it's time to fry. You can store it for up to two days like this.
When it's time to serve, deep fry the vadas in oil and serve with chutney or tomato sauce.

For Angel Chocolate Sponge
- 5 nos Eggs
- 174 gm Grain Sugar
- 10 gm Cake Gel
- 150 gm Flour
- 24 gm Cocoa Powder
- 3 gm Baking Powder
- 15 ml Vanilla Essence
For Chocolate Truffle
- 350 gm Rich’s Truffle Base
- 175 gm Dark Chocolate
- 150 ml Sugar Syrup for soaking
· Sieve flour & cocoa powder & keep aside
· Whip eggs, cake Gel& sugar till light & fluffy
· Fold in flour & whip at medium speed for 2mins
· Pour 500 gm of batter in a greased & lined mould
· Bake at 200C for 25mins
· Cool Down & cut 3 layers. Soak each layer with sugar syrup
· In a medium pan take Rich’s Truffle base & boil. Stir continuously
· Chop Rich’s Premium Choco dark & pour boiling truffle base
· Stir until choco melts completely & strain
· Allow to cool & set
· Apply set truffle between soaked sponge layers & refrigerate for 30mins
· Remove from the refrigerator & finish entire cake with remaining truffle
· Pour Rich’s Chocolate glaze & finish cake
· Garnish with chocolate & sugar sprinklers, serve cold
