Lemongrass tea & almond cookie pies to start this lovely Wednesday morning because a healthy indulgence is a good idea! 😋😋 With all the antiinflammatory goodness in this tea, it's not just a pretty cup 😉 The pies are just extra 👌👌
Here's the recipe:
▪1 c oat flour
▪1/2 c coconut flour
▪1/2 c almonds
▪1/2 tsp cinnamon
▪pinch of salt
▪5 Medjool dates
▪chia egg (1 Tbs ground white chia seeds, 2 Tbs water, 1 Tbs maple or agave)
Add all the ingredients to a food processor except the dates & chia egg & process until combined. Mix the chia egg seperately & set aside 5 min to plump. Add dates & chia egg, process until crumbly & sticky. Shape in to cookies.
Sandwich them together with my COCONUT BUTTER VANILLA CREAM recipe found on the blog, link in bio @giaknows.blog 😊 I mixed in 1/2 tsp of cinnamon for some extra 💕💞

If you know #Bollywood , you know how much pakoras and #chai in the rain are romanticized. Ask any Indian person, and we will scream in unison that IT IS NOT OVERRATED. Pakoras -- here we go! 🍟Ingredients: 1 onion, 1 cup chickpea flour, ½-1 teaspoon of salt, ½ teaspoon red chili powder, a pinch of turmeric, and a dash each of garam masala, coriander powder, and cumin powder; 1 cup canola oil. 🍟Method: In a bowl, mix all the ingredients together, except for the onion. 🍟Slice the onion thin and long, and mix into the same bowl. 🍟Cover and set aside for 10-15 minutes. This allows the water in the onion to release, which means you use less water in making the batter and flavor of the onion is more prominent! 🍟Add water a little at a time (I used ~¼ cup water in total), until you attain pancake batter consistency. Be really careful not to use too much water at once! If you’re a novice, using a tablespoon will help you control the urge of adding more than needed! 🍟Heat the oil in a pan on medium high. It’s really tempting to heat it all the way up but don’t! 🍟5 minutes later, test to see if the oil is hot enough with a small drop of batter. If it sinks and bubbles immediately form around it, the oil is ready. 🍟Using a tablespoon, drop batter into the oil and fry on all sides until golden brown. 🍟Eat when warm with tamarind chutney -- they are the best this way! Alternatively, #sriracha works too. 🍟Is it even worth it without the chai, bruh? To me, it seriously isn't. I am not a fan of fried foods at all but I will make an exception for this (and samosas) if chai is a part of the package. 🍟Obviously, this isn't healthy, so I am going to just skip my usual end spiel. This is definitely your weekly #cheatmeal , so I'll pray to the rain gods that you receive sprinkles soon! .
A familiar taste to me, @mingkitchenseafood always amazes me with the aromatic temptations that come with each dish. Even the humble vegetable (奶白) can smell so good when stir-fried with garlic. I couldn’t wait to eat that hot-plate tofu with its subtle smoky fragrance. The best part of this is that each dish had the taste to match the aroma. Yay! 😊
