Got my cardio in yesterday. P90X Week 3 Day 6!!! Today is stretch day and that will be the end of week 3. Tomorrow starts the recovery week so I’ll be doing no weights at all. It will be yoga, core, cardio and stretching workouts! I think my body will love that!
Last night had a bit of a cheat meal. Went to the Baltimore restaurant of @gordongram and you know I HAD to try the Beef Wellington which was 😍😍😍 we also tried the truffle Mac and cheese and the Brussel sprouts and his signature sticky toffee pudding which I don’t have pictured but that was the bomb too!
All in all I would say it was a successful Saturday night ☺️
Not much of a baker. These were adapted from @drericberg ‘s peanut butter cup recipe. Super simple and beyond tasty...
1 bag Lily’s sugar free dark choc chips 9-10 oz
1 tbsp coconut oil
1 jar almond butter - no sugar added
4 tbsp prymal powdered creamer caramel
Almond flour - I like chunky for added texture but smooth is fine too.
Who needs birthday cake when you can have these and whip it up easily in no time. Dump almond butter in a large bowl with powdered coffee creamer and slowly add almond flower. Mix till the almond butter doesn’t stick to a spoon.
Get a pot with water put it on low. Add a metal bowl on top and add chocolate chips and coconut oil. Melt down till completely smooth. Make sure no water or moisture touches chocolate mixture or it will get grainy. Remove from heat.
Add muffin wrappers to a muffin tin. This will allow you to achieve t he classic rippled edges you see on peanut butter cups and is necessary to remove from a metal pan. I have a cute heart shape mold that is silicone and didn’t need a wrapper. It’s easily popped out.
Scoop a thin layer of chocolate to a generous layer of almond butter. Then add another layer of chocolate to completely cover the almond butter. Sprinkle with Maldon salt (i forgot this step and was pissed). Refrigerate till hardened. KETO DINNER tonight courtesy of Wing Stop! 🍗🍗🍗😛 It was family dinner night and we shared a 40 family pack hellllmothaafuckinyeahhh 🙌🏽🙌🏽 We got Garlic Parmesan, Lemon Pepper & Cajun flavored wings... all 3 have 0g of carbs and are so fuckin delicious! I ate 9 wings, 4 celery sticks and half of a container of ranch.. and guess what it fit my MF macros okurrrr 👏🏽😘 (and NO I didn’t eat the fries I didn’t even want them 😏)

Google "keto vanilla cloud cake" for detailed recipe... I altered the recipe some- here are the changes I made:
***Rather than 1/4 c. granulated sweetener-- I used 1/3 c. powdered Swerve. ***I did not bake in muffin tins- instead I placed parchment paper on cookie sheet and spooned out ingredients- this will make a couple batches - (I tried muffin tins first but oiling my tins did not prevent it from sticking) ***Reduced cooking time to 25 mins ***Made my own frosting .
My Frosting Recipe:
8oz Kite Hill dairy free cream cheese (sub reg. cream cheese if no dairy restrictions)
1cup coconut milk cream (made by flipping can of full fat coconut milk over &opening- then pouring water off the top- I chill in freezer for 30 mins prior to opening)
1/2 c. powdered swerve
1/2 tsp. vanilla extract
Use hand mixer to blend for 1minute.
Keto dark chocolate cake with peanut butter frosting. I kid you not!!! While it is not your typical dark chocolate cake, it isn't bad and it does satisfy. I don't have a sweet tooth since being on Keto but if I did, this would do the job. Could have been a little bit more moist. It was a tad dry, but with the frosting, it was pretty damn tasty. 8 net carbs per slice. So it would have to be for a special occasion because I'm not sure I want to spend 8 carbs on a piece of cake when I only get 20 net carbs per day.
Lunch today was Turkey Roll Ups made w/3 slices of Kirkland Oven Roasted Turkey, a slice of Habanero Jack Cheese, Chipotle Mayo (brand: Just) and romaine lettuce + a pickle spear + some Pork Rind Nachos made w/ a serving of pork rinds (14g), 1 oz of shredded mozzarella, hot sauce, jalapeños, and a tbsp of sour cream. It's not a chocolate bar or a cupcake.... however, when you're in ketosis this is as yummy as a cupcake! 😁
However, my binge eating does not allow me to make a dozen "fat bombs" like most recipes call for - I will eat ALL 12 in one sitting😯 So I've learned to make a single serving at a time.
This "fat bomb" consists of coconut butter, almond butter, 1 serving macadamia nuts & cacao powder.
Normally I just use coconut butter.... however, this evening I finished an intense workout so I wanted to add more calories and fat. .
2 Tbsp. coconut butter
2 Tbsp. almond butter
1 serving macadamia nuts
2 tsp. cacao powder
[Himalayan salt for topping] Place macadamia nuts in Ziploc bag and crush with a mallet. Then add all ingredients to a small microwave safe dish. Microwave for 20-30 seconds. Add Himalayan salt to top and enjoy! (***Note- when I omit the almond butter, then I use a half serving of nuts & 1tsp. cacao powder) .
I went to Whole Foods for walnuts and bone broth. This happens every time 😂 I love this store for my keto foods.
Prior to keto, I may have eaten pork rinds once in my life. The last week I've eaten pork rinds daily 😁
I've been buying Plain pork rinds and adding my own spices at home. Most seasoned rinds have sugar added, the ingredients will have it listed as, "maltodextrin or dextrose"--- the ingredient that disturbs me the most is the monosodium glutamate aka MSG- MSG gives me headaches every time!
I was excited to find that the Epic brand makes "keto approved" pork rinds. They are yummy too! *Swipe through pics to see ingredients*
Epic also has a Venison jerky without sugar added - but you have to be careful because ALL of their other jerky has added sweeteners.
Someone recommended "kite hill cream cheese spread" as a dairy free alternative because it is made with almond milk. I noticed that Whole foods carries it, so naturally I had to try it - It was really good! 😋
I'm also looking forward to trying a new Sugar free BACON that Whole foods just started carrying! 🥓
All in all, I got out of Whole foods with under 100 bucks spent - so I consider that a success😜
