At yesterday’s preview of @britishmuseum’s new exhibition, Rodin and the art of ancient Greece. Wonderful to see Auguste Rodin’s sculpture juxtaposed with the works of the classical world from which the great sculptor derived so much inspiration. Oh and how great does the BM’s Sainsbury Exhibitions Gallery look opened up to let the daylight stream in? Love it. A great evening with our team @thewatchhouseuk learning to identify isolated flavours in solution.
I love using the solutions test as a palate development tool. It not only challenges people ability to identify the 4 flavours of salt/sweet/bitter/acidic but also their ability to think critically.
In the first test we found people mixing up acidity and bitterness, an important difference for baristas to get right when dialling in coffee! This is actually a fairly common error and essential to correct with any team looking to make better coffee!
In the second part of the test, 12 cups are placed randomly with each containing an isolated flavour of strength low, medium or high. The first challenge here is to work out how you should tackle tasting them.
We also looked at the interaction of 2 or more flavours in solution and how that may transfer into coffee. By the end of the session the team were clear on what identification of a certain taste meant in relation to coffee extraction and how to go about fixing it!
