If you don't have any local farmer nearby, try buying frozen meat in whole pieces, so you know it didn't take long to process the meat before it got frozen. Remember freezing doesn't make the histamine disappear, it only stops its release in the food. 🍚 rice is low-hit go to food 😃

My poor, long-suffering mum has let loose now that she's found out I can ingest onion and garlic after a particularly dark five years of having to cook without these Indian staples. She celebrated by cooking this onion and garlic-laden chicken biryani and potato varuval (which is a spicy dry-fried dish originating from South India). To follow the conventions of my new diet, she omitted cashew and raisins from the biryani, avoided using tomatoes and cooked with rice bran oil instead of olive oil ❤️ What obscure diet I'll throw next in her direction is anyone's guess. Weißt du, warum ich meiner HIT und den ganzen Symptomen wie Ängsten, Schwindel und Kopfschmerzen dankbar bin? Ohne sie wäre ich heute nicht dort, wo ich jetzt stehe. Mein Leben wäre sicherlich ganz anders verlaufen und ich weiß nicht, ob ich ohne den Schubs (naja, riesen SCHUBSER) meines Körpers den Mut gefunden hätte, mich in eine ganz andere Richtung zu orientieren, als ich eigentlich schon eingeschlagen hatte. Dank meines körperlichen Zusammenbruchs habe ich angefangen, mich mit mir selbst zu beschäftigen und mich um meine Wünsche, Träume und Bedürfnisse zu kümmern. Mir ist aufgefallen, dass ich meinen Körper viel zu lange für vollkommen selbstverständlich gehalten habe und ihm sehr viel zugemutete habe. Gleichzeitig habe ich auch mir selbst sehr viel zugemutet und mich sehr häufig vollkommen gegen mein Bauchgefühl entschieden. Das konnte auf Dauer nicht gut gehen. Deswegen bin ich meinem Körper dankbar, dass er mich daran erinnert hat, was wirklich wichtig ist: ICH SELBST. Meine Gesundheit, mein Glück und mein Leben. Dazu gehört auch, dass ich mich so zeige, wie ich bin und dass ich zu meinen Überzeugungen und Träumen stehe. 
Gleichzeitig hat mich meine persönliche Geschichte natürlich auch zum Coach gemacht, die ich heute bin und ich möchte dich einladen, hinter deine Erkrankungen zu schauen und dich von deinem Körper über deine wahren Wünsche und inneren Konflikte lehren zu lassen. Dein Körper kann dein bester Lehrmeister sein.

Every HIT patients, vegans, vegetarians prefered soup : pumpkin soup. Since it's the season now, I suggest you try it with various milks : coconut milk, rice milk, almond milk, etc. I prefer adding one cup of rice milk before the soup is ready.

On top of it you can add some sesame oil or pumpkin seed oil. Seeds contain histadin which then turns into histamine, so use very little.

VERTRÄGST DU NÜSSE?
Nüsse und Mandeln gelten als schlecht vertraglich bei Histaminintoleranz, was nicht nur am Histamin, sondern besonders  an vielen anderen biogenen Aminen liegt. 
Viele Mediziner sind der Meinung, dass das  Hauptproblem bei der Verarbeitung von Nüssen im Darm allerdings nicht die Mischung an Aminen, sondern die sogenannten “Antinährstoffe” sind. 
Nüsse sind etwas größer geratene Samen, die, wie auch die kleinen, die Fähigkeit in sich tragen, zu keinen und einen neuen Nuss Baum entstehen zu lassen. Dazu benötigt die Nuss: Feuchtigkeit, Wärme und einen nährstoffreichen Boden. Sobald die Nüsse längere Zeit mit Wasser in Berührung kommen, beginnen sie zu keimen und danach können sich die Wurzeln bilden. Da die Nuss auf sich alleine gestellt ist, bis die Wurzeln groß genug sind, um sie zu versorgen, braucht die Nuss zur Keimung ausreichend Wasser – daher keimt sie erst nach einiger Zeit, die sie bereits im Wasser verbracht hat. Für diese verzögerte Keimung sorgen die Antinährstoffe bzw. Enzymhemmer.

Der Enzymhemmer Inhibin sorgt für diese Verzögerung, die für die Nuss überlebenswichtig, für uns Menschen und unseren Darm allerdings sehr schwierig ist. 
Deswegen empfiehlt man, Nüsse vor dem Verzehr "keimen" zu lassen, das bedeutet sie für 12-15 Stunden in Wasser zu legen, dadurch verändert sich die chemische Struktur der Nüsse und der Enzymhemmer Inhibin ist abgebaut.

VERTRÄGST DU NÜSSE? Nüsse und Mandeln gelten als schlecht vertraglich bei Histaminintoleranz, was nicht nur am Histamin, sondern besonders an vielen anderen biogenen Aminen liegt. Viele Mediziner sind der Meinung, dass das Hauptproblem bei der Verarbeitung von Nüssen im Darm allerdings nicht die Mischung an Aminen, sondern die sogenannten “Antinährstoffe” sind. Nüsse sind etwas größer geratene Samen, die, wie auch die kleinen, die Fähigkeit in sich tragen, zu keinen und einen neuen Nuss Baum entstehen zu lassen. Dazu benötigt die Nuss: Feuchtigkeit, Wärme und einen nährstoffreichen Boden. Sobald die Nüsse längere Zeit mit Wasser in Berührung kommen, beginnen sie zu keimen und danach können sich die Wurzeln bilden. Da die Nuss auf sich alleine gestellt ist, bis die Wurzeln groß genug sind, um sie zu versorgen, braucht die Nuss zur Keimung ausreichend Wasser – daher keimt sie erst nach einiger Zeit, die sie bereits im Wasser verbracht hat. Für diese verzögerte Keimung sorgen die Antinährstoffe bzw. Enzymhemmer. Der Enzymhemmer Inhibin sorgt für diese Verzögerung, die für die Nuss überlebenswichtig, für uns Menschen und unseren Darm allerdings sehr schwierig ist. Hi everyone! If you want to have a cold dish in these hot summer days, would you like to try this whole grain red quinoa salad? It's vegan, gluten and histamine free 😊 Check below for the recipe:

🔶 For the Salad:
1 Cup Red Quinoa, rinsed
2 Cups Water
3 Small to Medium sized Beets
2-3 Scallions, finely sliced (I used both white and green parts)
½ Cup Parsley, chopped
Any kind of greens you like. I used Rocket and Lamb lettuce
🔶 For the dressing:
¼ Cup Extra Virgin Olive Oil (use very little)
2-3 Passion Fruits instead of lemon juice. Or you can use white vinegar which is low histamine
1 Tsp Date Syrup (Instead of processed sugar)
½ Tsp Sea Salt
¼ Tsp Fresh Black Pepper

Boil and cook quinoa in a pan for 15-20min, until the quinoa is fully cooked and all the water has been absorbed. Turn off the heat and let cool completely. Once the quinoa is cooled add it to a large salad or mixing bowl.
Meanwhile, preheat the oven to 220C degrees. Peel and clean the beets, place them on a tray and cook until fork tender, about 40-60 minutes. The length of cooking time will depend on the size of the beets.
Let the beets cool and add then add the diced beets to the quinoa. Add the scallions, greens and parsley to the bowl and mix.
In a small bowl add the olive oil, passion fruits/vinegar/lemon juice, date syrup, salt and pepper. Whisk together. Taste and adjust seasonings. Pour the dressing over the quinoa and beets. Stir everything together. Ready to serve!

Ein Überschuss an Histamin kann Kopfschmerzen verursachen sowohl bei Menschen mit Histaminintoleranz als auch bei jenen ohne, wenn diese eine zu hohe Dosis an Histamin auf einmal erhalten. Auch Migräne kann durch ein zu viel an Histamin ausgelöst werden. 
Bei Migräne Patienten hat man herausgefunden, dass das Histamin Niveau im Blutplasma sowohl während einer Migränephase als auch in den Pausen dazwischen sehr hoch ist. Gleichzeitig scheinen Migräne Patienten eine erhöhte Mastzellen Konzentration im Gehirn zu haben, welche ja das Histamin speichern. Das Histamin setzt zellintern Stickstoffmonoxid (NO) frei. NO ist ein chemisches Gift, welches als freies Radikal im Körper vorkommen kann. Dieses Gift hat eine erweiternde Wirkung auf die Blutgefäße.. Diese erweiterten Blutgefäße können im Gehirn führen zu den drückenden Kopfschmerzen und können andere (Migräne) Symptomen wie Schwindel, Lichtempfindlichkeit und Übelkeit hervorrufen. 
NO wird durch die Aminosäure L-Arginin gebunden und Histamin lässt sich sehr wirkungsvoll mit Vulkangstein binden. Die Mastzellen können am wirkungsvollsten mit Meditation stabilisiert werden. In der Zeit, in der es mir wirklich sehr schlecht ging, bin ich jeden Morgen mechanisch aufgestanden und habe mich so durch den Tag geschleppt, war krank geschrieben und habe regelmäßig mit Panikattacken, Atemnot und Schwindel zu kämpfen gehabt. Ich weiß also genau, wie du dich fühlst, wenn du sagst, dass es dir schlecht geht. 
Doch, irgendetwas in mir drin, hat niemals aufgegeben, daran zu glauben, dass es besser wird. Es war mehr als eine Wunschvorstellung und mehr als ein träumen, ich WUSSTE, dass es für mich wieder besser werden wird. Ganz ehrlich: Ich hätte auch nicht gewusst, was der Plan B gewesen wäre ... Aufgeben? Was denn aufgeben? Mein Leben? Mein Glück? Meine Wünsche für meine Zukunft und mein Leben? DAS konnte ich mir nun beim besten Willen nicht vorstellen. NIEMALS hätte ich meinen Wunsch aufgegeben, glücklich zu sein und mich gut zu fühlen. Diese starke Überzeugung, dass es wieder anders werden kann und, dass dieser Zustand nicht mein Leben sein wird, hat mich ins TUN gebracht. Ich weiß, dass auch du alles schaffen kannst, was du dir wünschst. Die erste Frage ist aber: Glaubst du, dass es möglich ist? Glaubst du daran, dass es dir wieder besser gehen kann? Glaubst du daran, dass du irgendwann dein Leben wieder genießen wirst?

Histamin kommt vor allem in den Fischen vor, in denen sich das Bakterium Skombroid antreffen lässt, gängige Fischarten mit stacheliger Rücken-Flosse so wie Thunfisch, Mahi Mahi und Wahoo und auch in Makrelen.
Diese Fische sind reich an Histidin (einer Aminosäure), – wenn der Fisch stirbt, dann können die Skambroid und weitere Histamin bildende Bakterien weiterleben und in einem chemischen Prozess aus Histidin Histamin herstellen. Besonders in den warmen Gebieten des Golfstromes können diese Bakterien sich stark vermehren und weiterleben. Die Bakterien kommen entweder nachträglich in den Fisch, durch Verunreinigung oder sie befinden sich schon darin – von Natur aus, sozusagen.

Histaminvergiftung zeigt sich in Symptomen wie Schwindel, Ohnmacht, Magen-Darm-Beschwerden, Gesichtsschwellung und Probleme beim Schlucken. Diese Beschwerden und noch weitere Symptome kennen HIT’ler zur Genüge. Aber auch Menschen, die ansonsten keine Probleme mit Histamin haben, können von einer histaminbedingten Fischvergiftung betroffen sein – und von dieser stark mitgenommen werden.

Histamin kommt vor allem in den Fischen vor, in denen sich das Bakterium Skombroid antreffen lässt, gängige Fischarten mit stacheliger Rücken-Flosse so wie Thunfisch, Mahi Mahi und Wahoo und auch in Makrelen. Diese Fische sind reich an Histidin (einer Aminosäure), – wenn der Fisch stirbt, dann können die Skambroid und weitere Histamin bildende Bakterien weiterleben und in einem chemischen Prozess aus Histidin Histamin herstellen. Besonders in den warmen Gebieten des Golfstromes können diese Bakterien sich stark vermehren und weiterleben. Die Bakterien kommen entweder nachträglich in den Fisch, durch Verunreinigung oder sie befinden sich schon darin – von Natur aus, sozusagen. Histaminvergiftung zeigt sich in Symptomen wie Schwindel, Ohnmacht, Magen-Darm-Beschwerden, Gesichtsschwellung und Probleme beim Schlucken. Diese Beschwerden und noch weitere Symptome kennen HIT’ler zur Genüge. My immunologist said you may get these after mosquito bites and ingrown hairs if you have a tendency for allergies, or have autoimmune troubles. This is how my skin reacts to a mosquito bite, for instance. Not really sure why my legs get covered with them so often. I don't shave them. Apparently this is called a histamine (or antihistamine, always forget which!!) reaction. Either way, my unsexy legs have successfully made themselves even more unappealing.

Blue Tansy, also referred to as Moroccan Tansy, is an annual yellow-flowered Mediterranean plant found in northern Morocco. Chamazulene, a chemical component in Blue Tansy, provides the characteristic indigo color and is recognized for its skin soothing benefits. It’s perfect for massaging into skin with fractionated coconut oil or lotion after a long day of work or intense exercise to aid the body in the natural recovery process. This oil has really been my go to oil for my myself and tween daughter when we have acne prone skin. I add two drops to a 5 ml roller and dilute so I can spot treat  any affected areas. Urtica dioica, Stinging Nettle 🌿

After a busy weekend, we're back to plant posts!! Woo hoo!! This image shows three different versions of Nettle... A deep purple, a burgundy/green mix, and a straight up green. Check out my previous nettle posts for closer up versions of these varieties. 
Most nettles sting. Actually 5 out of the 6 subspecies sting, to be exact! 😘 Hence Stinging Nettle. 🌿 The reason for this is that the "stings" are actually tiny, hollow hairs, or trichomes, that are found on the stems and undersides of the leaves. These hairs contain a sneaky combo of histamine and formic acid, which when stuck into yer skin on contact, cause the initial stinging sensation and the swelling, itching, burning sensations that follow. Formic acid is the same acid that causes pain when ants bite you! 😅

The easiest way to avoid this sting is to use gloves when harvesting, tho I've actually been stung thru gloves that were not a fine enough weave or thick enough material... Haha! 🤔
The other tricks to harvest are harder to explain thru text, but involve pinching the plant in a way that crushes the trichomes, making them unable to act as needles. Come harvest with me sometime and I'll show you... You could learn at @praxisprojectnewbrunswick this year too! 👌

Once harvested, chopping the nettle removes a lot of the stings, but to be safe when using as an edible, even in a smoothie recipe, I give it a quick blanch at least. Often I just stir fry it! Cooking it removes all the stinging ability!! And makes it into a delicious and nutritious wild green. Mmm... 😍

Today I want to share with you my tomato sauce recipe, histamine free and delicious 😉 I received many questions about my sauce and I answered some of them in the comment section, but after completing my detox diet, I decided to "upgrade" my recipe as I discovered how great red beet can taste with red pepper!

🔶 I used one clove of garlic (low histamine warning), but you can use two as well, if you can digest it.
🔶 10 red pepper (roasting pimentos), sweet ones
🔶 One or two red onions
🔶 One red beet

I cooked garlic and red onions in a pan with olive oil until they are softened, and boiled red beet at the same time in a pot. I blended the red peppers with a blender and added the puree in the pan with garlis and onions, gave them a stir. Then I chopped the softened red beet, added it in the mixture and blended them all once again together and added some hot water. You can add water as much as you like to have the creamy texture you want. I added around 200ml. Then I added spicy red pepper powder, salt and a little bit of black pepper.

The result was fantastic! I had around three small bags of sauce which I put in the freezer. Each bag is enough to use in one dish.

Voilà! I hope you try it and see the result for yourself! I already made a pizza sauce out of it and it had 99% likeness of a tomato sauce!
