Vegetable Carbonara with home-made garlic bread and a side serving of delicious fresh salad. .
After having a few drinks the night before, I woke up with the biggest saucy pasta craving! I knew I could create what I desired. 😝 I didn’t make enough sauce hence why it looks quite dry. But it was delicious I tell ya! I thought this dish would do great with some garlic bread on the side, but store bought garlic bread tends to have butter made with cows milk - so my boyfriend who is also so saucy 😋 suggest we made it ourselves. So easy - melted dairy free butter, pressed one garlic clove in the mix, sprinkled a tiny bit of parsley in there and drizzled over pre cooked baguette. Oven for 10 mins and voila
Vegan carbonara sauce:
• 2tbsp nutritional yeast • 1/2 cup soaked cashews • 3 garlic cloves •1tsp veg bouillon • 3/4 cups rice milk (any non dairy milk of your choice will do)
