Salmon Sunday for the win! After two birthday parties we’re home with happy bellies and sleepy kids. Had a great day today with the kids and now time for dinner. Keeping it simple with kale salad 🥗 and baked salmon. Seasoned the salmon with fresh ginger, fresh garlic and coconut aminos baked for 17 mins at 400. The salad was kale, red peppers, carrots and sunflower seeds with a lemon juice olive oil dressing 🍋 Now time to watch some tv before crashing. Hope everyone had an amazing weekend!
“Blood Sugar Balancing Bean Brownies”
We can make any food we eat to have amazing ingredients that nourish our bodies and fuel our best selves (even brownies)! 💛
These are made with butter/lima beans, oats, raw cacao, chia seeds, coconut oil, and maple syrup. They taste DELICIOUS and help to balance blood sugars as they contain tons of healthy fats, carbs, and protein. Much different from the chemicals and crazy additives found in boxed or store bought brownies 😌
Made these energy bars for a quick between meal snack during the week. I'm actually liking these more than pre-packaged protein/ energy bars, and I know exactly what goes into them! Basically the base for three bars is 1 c. oats to 1/2 c. binder (nut butter, honey, coconut oil, etc.) See below for this recipe!
Peanut Butter Energy Bars 🥜
1/2 rolled oats, 1/4 c. chunky natural peanut butter, 1.5ish tbsp honey, 2ish tbsp coconut oil, 1 tbsp chia seeds, crushed walnuts and peanuts. Mix together and place in fridge for 30 min, then take out and shape into squares. If you find that it's not holding together, add more honey or nut butter to make it stickier. That's it! Happy snacking!
THAI SALAD WITH CHICKEN MINCE😍. Last night I felt like having something spicy and light for my dinner. Thankfully I had all the ingredients for this amazing Thai salad. Citrus and Chilli sauce really hit the spot👌🏻

*Chicken mince -150 grams
*Brown onion -1 small
*Garlic cloves - 2
*Salad leaves -50 gr
*Carrot - 1 small
*Cucumber - 1 small
*Red onion- 1/4
*Cherry tomatoes - handful *Mushrooms (optional) I just had them
In the fridge, so I decided to throw them in.
*Fresh Coriander - handful
*Chilli ( seeds removed)- 1
*Juice of 1 lime
*Olive oil- 2 tsp
*Fish oil- 1/4 tsp
*Rice wine vinegar- 1/2 tsp
*Tamari soy sauce- 1 tsp
*Pinch of preferred sugar ( I used rapadura)
*Sesame seeds *Coconut oil for frying- it gives a good hint to the dish as well
Heat the fry pan and grease it with coconut oil. Add finely diced brown onion and garlic. Cook until brown. Add chicken mince, cook until it cooked through, add salt and pepper to taste. Remover the chicken from the pan, add finely sliced mushrooms, cook until brown. Combine green salad leaves, carrot, cucumber, red onion and tomato with chicken and mushrooms. To make sauce, combine chopped coriander, chopped chilli, lime juice, fish oil, rice wine vinegar,tamari,olive oil, 1 clove of grated garlic, pinch of sugar and sesame seeds. Pour over the salad and Enjoy!

1xcup of flour
1x cup of cheese grated
Pinch of salt & pepper
Ham/bacon finely diced
2x zucchini grated
1-2x carrot grated
1/2 tin corn
You can swap in any other veggie to your taste- try mushrooms, spinach, pumpkin, sweet potato (I just didn’t have any spare veggies as I need to get to the grocery store 😅) method:
Mix all ingredients in a big bowl, spoon into patty pans, top with some extra Parmesan or tasty cheese and cook in a 180 degree oven for 25mins or until golden brown :) enjoy hot or cold! 🤤 .
