Taco Monday!!! I was very proud of the way my tortillas came out and celebrated with tacos 💪🏽 (if you missed it, I made fresh tortillas by hand and it’s on my story!🤗) The tacos are as simple as can be: chicken marinated in chipotle adobo sauce, cooked in a slow cooker, shredded, then topped with sliced avocado on freshly made tortillas 💫

This week is all about Macronutrients and making sure that each meal fits into your perfect macros for the day and in each meal... Our little Mexican feast for dinner tonight... This meal honestly took about 5 mins to prepare and put in the table!! No cooking required and super healthy 😋
It’s a brunch kind of day here in NY so this breakfast burrito hit the spot. Cassava flour tortilla, fried egg, avocado, sautéed sweet potato and smoky urfa pepper flakes.
Cassava, also known as yuca, is a starchy root native to tropical climates. It is rich in minerals such as calcium, copper, iron and manganese. It is also naturally gluten free for those with celiac or NCGS.
Recipe: For this burrito I toasted the @sietefoods cassava tortilla over an open flame.
TIP: you can “toast” things like tortillas and nori sheets over a low open flame if you have a gas range or grill, just place it directly on the burner for up to 30 seconds on each side.
Then I topped with @vitalfarms fried organic egg, chopped avo, urfa and maldon salt flakes. Sweets can be sautéed in avocado oil over medium-low heat til tender, about 10-15 mins. And be sure to leave the skin on for extra nutrients. 🍠

I love me some Tex-Mex 🌮 & These enchiladas are guilt free made with @sietefoods coconut cassava tortilla and coconut cream (instead of sour cream). Simply stuff with almond cheese, tomatillo sauce (recipe further down in my page), and shredded chicken. This one is topped with avocado, radish, cilantro and red onion. I added in softened yellow bell pepper and broccoli to my usual recipe to boost up the nutrient content of one of my favorite dishes, and it turned out to 💯💥
