So lunch today was a picnic down the beach🏖 I planned to have what's in the second pic 🥗🍎 but by the time I ate it most of it was warm so just had a some of the sausage with spinach and then a baby whippy with a flake. How can you say no to ice cream 🍦 down the beach on a day like this 🌞🌞
This was DELICIOUS and I was actually able to make half of it “Italian Style” for my husband who is out on barbecue (I know, who IS this man???) Reheats better in an oven than in a microwave (crust gets tough). Try it this weekend!!! Spicy BBQ Chicken "Pizza"
Makes 4 Servings
Each Serving: 1 Lean, 3 Greens, 3 Condiments
1 cup 2% Reduced Fat Mozzarella cheese
1 cup egg beaters egg whites�4 cups grated raw cauliflower or 400 grams�
�9 oz skinless, boneless chicken breasts, cooked and chopped�1 cup Reduced Fat 2% Mozzarella Cheese�2 cups of your favorite veggies - I used jalapenos, orange and red peppers�3/4 c sugar free BBQ Sauce - I used Smokin' Joe Jones Sugar Free BBQ Sauce
Preheat oven to 425 degrees. Place parchment paper on a cookie sheet and spray lightly with cooking spray. Combine grated cauliflower, egg beaters, and cheese until mixed completely. Spoon mixture on prepared pan with parchment paper. Use the back of a spoon to thin out the mixture and form a thin rectangle. Bake for 30 minutes. Use the parchment paper to slide it and the crust off the pan onto a cutting board. Side the parchment paper out from under the crust and put it on top of the crust. Using mitts, place the cookie sheet face down over the crust, grab the pan and cutting board and flip the crust back onto the pan (it can take a little practice, but this is the most foolproof way to not rip the crust while flipping that I’ve found). Bake for an additional 10 to 15 minutes.�Combine chicken and BBQ sauce. Spread over the top of pizza crust. Top with veggies. Bake for another 15 minutes. Sprinkle the remaining cup of cheese over the top. Broil until cheese is melted about 5 minutes.

I stood watching these cuties today. I ate meat for a long time and only now have I realised (well, nearly a year ago) how did I eat these cool animals???? People always ask me, don’t you ever fancy a bacon sandwich or a burger?? The answer is- no way!! I’m cool with my veggie burger. And I don’t really care if you think I’m weird because look at these animals! I don’t believe in preaching to people but when people ask me why I’m vegan- I’m happy to explain and answer questions. I can’t wait for the day more people in the next few years join us in this vegan movement and find out what really is happening in/to this world. Till then, I’ll be one of those people that orders sides in a restaurant 😂👍🏽 (Soz for the random long caption)

I usually keep a jar in my office to snack on if I get hungry between meals because A.) It won’t cause a spike in blood sugar and B.) its delicious.
I stumbled upon this recipe on @adventuresinpartaking blog and I was blown away with how simple and AFFORDABLE it is to make your own. Gone are the days where I would spend $10 on a jar. My stomach and bank account are much happier. Check out the recipe on her blog!
I made a few adaptations to the recipe including adding 2 tbsp coconut oil during the processing to make it a bit creamier. I also added a few dashes of cinnamon and salt. Its perfect on its own, which is usually how I enjoy it, but you can also pair it with apple slices or dates for a treat! #HonestAIP [@honest.intake]
Greek Turkey Burgers
7 oz raw, ground turkey, 85%-94% lean (should yield 3.75 oz cooked serving (3/4 Lean)
1 oz reduced fat feta cheese (1/4 Lean)
1/2 tsp oregano (1 Condiment)
1/4 tsp garlic powder (1 Condiment)
1/4 tsp salt (1 Condiment)
1/4 cup red pepper, chopped (1/2 Green)
1/4 cup Baby Spinach, chopped (1/4 Green)
Place turkey, feta, red pepper, spinach and seasonings into a mixing bowl. Mix until just combined. Form patties and cook however you like to cook burgers. Grill (indoor or out), cook in hot skillet, or broil under broiler. Cook for 3-4 minutes per side or until an internal thermometer has reached 165 degrees.
