Made this granola last night without all the sugar. A great treat. . 
3 cups oats
1 cup dried cranberries
1/2 cup coconut
2 Tbsp coconut oil
Mix together and pour onto baking sheet (I lined mine with parchment paper but not necessary)
Sprinkle with cinnamon, nutmeg and then I drizzle with organic honey. 
Bake at 350 for 20 minutes for crunchy, less if you prefer soft.

Pepper Egg Cup
Ingredients
4 each Bell Pepper (seeded), cut top off
1 cup shredded Cheddar cheese
4 slices cooked bacon
4 eggs, raw
4 pinches of salt
4 pinches of pepper
4 pinches of parsley, optional
Directions
Preheat oven to 400 degrees.
Remove seeds and tops of bell peppers.
Cook bacon to desired crispness, crumble.
Place cheddar cheese and crumbled bacon into pepper halves.
Crack an egg on top of cheese and bacon.
Season with salt and pepper.
Place in oven for 20 minutes or until egg whites and firm and yolks are still runny.
Garnish with parsley and serve.

It's easy to eat healthy at home because you know exactly what is going into your food, unfortunately when eating out this isn't always the case ⚠️ ... However this shouldn't stop you making healthy food choices ✔I ate out on Friday night and to stay on plan I decided I would opt for chicken satay skeweres instead of deep fried chicken wings and samosas and I devoured them! 👌 Eating out is an enjoyable experience and is a way of socialising with friends, celebrating, relaxing and also as an enjoyable past time for many especially foodies like myself 🤗 It all comes down to choosing the right foods! .

Agrega 1/2 tz de agua, 1/4 tz salsa soya baja tamari y sazonador vegetal. (Las medidas pueden variar dependiendo la cantidad que hagas pero siempre el doble de agua que salsa soya).

Tapa muy bien el sartén para que se cuezan todas las verduras.

Willpower: Most people think they need a lot of it in order to rigidly adhere to a diet plan. .
In reality, often the issue is too much stress (causing a poor nutritional choice), blood glucose that’s too low or too high (causing a desperate feeling of “need” for a certain food), leptin signaling that’s muddled, or food restriction that’s been going on for long enough that the brain forces a binge episode in order to give the body some kind of nourishment. .
None of that has anything to do with willpower.  Once all of that is straightened out- which requires proper nutritional education and hormonal balancing through nutrition- making good choices becomes relatively easy. .
The healthy body can adapt to food fluctuations and respond appropriately.  There are so many “diet hacks” out there but so little true knowledge.  Learning how to nourish and listen to your body will result in positive health changes, and weight loss if it’s necessary to attain full health.

LUNCH 🍴 
Cooking a bomb meal is always a good way to relax and take my mind off the stress of school for a bit 😅 Here's today's creation:
1 sweet Italian chicken sausage + 1
cup zucchini + 1 cup squash + 200g sweet potato + 15g feta

Paleo Crepes 
3 Eggs
5.4 oz. (3/4 cup) coconut cream
1/2 cup hot water 
1/3 coconut oil 
1/ tsp baking soda 
1/3 cup tapioca flour 
1/3 twice amaranth flour
1/2 cup tigernut flour 
1 tablespoon vanilla extract 
1.  Whisk eggs, melted coconut oil, vanilla extract, coconut cream and hot water. 
2.  Add tigernut flour, amaranth flour, tapioca flour, baking soda and mix until well combined. 
3.  Heat a nonstick skillet over medium heat. 
4.  Coat pan with butter/oil only at the beginning, you don’t need to repeat it. 
5.  Loosen edge of crepe with a large turner, then quickly flip with the turner cook 1 more minute then slide the crepe out of skillet and repeat it with the remaining batter.

Sometimes I don’t know how to respond to these comments because I don’t want to come across as making my kid seem like the best eater in the world. I don’t want other moms to feel like the meals they serve their children are less healthy or not as “nice” as what I serve Emma .

The truth is my daughter is a picky or selective eater like most other toddlers are. Kids are very particular when it comes to food and I’m sure any parent can tell you that. The message that I’m trying to get across here on Instagram and my blog is that healthy eating is not hard and not impossible for toddlers. It’s all about what kinds of foods you make on a daily basis and introduce to your child .

I want you guys to be able to see that making a healthy meal is not complicated. Just by adding/swapping some key ingredients it can add nutrition to the foods you serve your families .

Emma is a regular toddler and she has her days when nothing that I serve her pleases her. Do I worry about it? No. Why? Because the foods that she asks for instead are still beneficial to her growing and developing body. Is it annoying? HELL YEAH! Especially when I make her a dish I know she loves and takes me a while to cook and when I serve it all of a sudden she wants nothing to do with it! .

If you keep healthy foods in your home then that’s what your children will eat. At the same time you will have peace of mind! I exposed Emma to a wide variety of homemade foods all using fresh and real ingredients. This is what she knows so when she asks for something different or refuses to eat the food I put in front of her it is something healthy like fruit or yogurt. Nothing processed or full of preservatives and refined sugars .

Does my child ever eat unhealthy foods? The answer is YES! I still want her to be a normal kid and enjoy tasty foods even if they are not as healthy as home cooked foods. If we’re out on a weekend spending family time or at a birthday party I let her have a slice of pizza or stop to eat at chipotle. ⬇️⬇

Went to @asda and bought some food. Here’s what I got:
• Nanas, carrots, sweet potatoes, plums, red and white onions, ginger, bell peppers, avocados and apples. Tried to go for loose fruit and veg to minimise plastic waste.

• Free range chicken, tuna steak, salad beans, hummus, Greek yoghurt, kidney beans and chilli beans.
.
• Pancakes, sourdough loaf, molasses, pea crisps and lentil crisps.
.
I didn’t love shopping here as so much of the fresh produce is plastic wrapped. However they do have a new organic section with lots of options.

Long lasting physical and mental health is a journey of ups and downs and it is IMPERATIVE you give yourself grace (and sometimes eat the grilled cheese and pretzels...and maybe something sweet also🤷🏼‍♀️). I am most definitely not a health professional but this is my personal experience. Anyone else feel this way?? GUYS! This meal was so simple and so good. I had two little bowls for dipping the veggies and chicken: one with @sirkensingtons avocado oil mayo mixed with @wildbrine jalapeño sriracha and the other was @woodstock barbecue sauce 🤗

Also, I shared some of the chicken with Henry 👌🏼 but he wouldn’t eat any of the veggies. I try not to force it. Lots of days he’s actually super into broccoli! But when he’s not, we call him a fruitatarian and let him be. The idea that my language and actions can make or break his eating habits feels like a huge responsibility that I honestly don’t want, but because it’s something I am responsible for I’m doing my best to do it right. I try hard not to react when he doesn’t want a food. Even when I’ve spent so much time preparing it for him. And I always always offer again. Even a couple of minutes later. These babies are so finicky, and he thinks he knows what he wants but he changes his mind every five minutes 🤣

You´ve probably heard of or tried this delicious yet healthy phenomenon, either way you need to try this recipe - 
Ingredients🙋
2 dl of regular flour, almond flour or soy flour
2 teaspoons of baking powder
1/2 teaspoon salt
1 small, over-ripe banana, peeled (the browner, the better)
2 large eggs
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, melted = 12 small pancakes 👏

Just mix everything in a bowl and you're ready to pour it in to a pan until firm and lightly brown ! 
Top of with your favourite berries and maybe some maple syrup if you fancy. We always sprinkle some coconut flakes on top for that extra sweetness 👸💆
👇BANANA PANCAKES RECIPE 👇 You´ve probably heard of or tried this delicious yet healthy phenomenon, either way you need to try this recipe - Ingredients🙋 2 dl of regular flour, almond flour or soy flour 2 teaspoons of baking powder 1/2 teaspoon salt 1 small, over-ripe banana, peeled (the browner, the better) 2 large eggs 1/2 teaspoon vanilla extract 3 tablespoons unsalted butter, melted = 12 small pancakes 👏 Just mix everything in a bowl and you're ready to pour it in to a pan until firm and lightly brown ! Top of with your favourite berries and maybe some maple syrup if you fancy. We always sprinkle some coconut flakes on top for that extra sweetness 👸💆

If you look closely you will see red cabbage steak, courgetti (courgette spaghetti), green asparagus, avocado, carrot and 2 kinds of sweet potatoes. I feel so healthy now 😎. On the road again!  I made a super simple salad for my airport lunch today, just Trader Joe's shredded cabbage mix, shitake mushrooms, and ground turkey, seasoned with Everything Bagel Mix and coconut aminos.  I couldn't finish all of it in one sitting, so it will be great for later too!  And of course I'm never without snacks!  I have a couple Sea Snax, LOTS of collagen peptides, an RX Bar, an Epic bar, Brazil nuts, and these super yummy paleo English muffins I found at Whole Foods this weekend.
On the road again! Branches are part of a larger whole. If that whole (the tree) isn't built on a solid foundation, if the roots aren't firmly implanted in the earth and fed properly, those branches will be weak and will never reach their full potential.

The same goes for our bodies. When an organ or a system is crying out in pain or with some kind of dis-ease, we owe it to ourselves to look at the whole body. Are we taking in food, drinks, thoughts, images that feed us at the core or that slowly break us down?

Sadly, my beloved @coloradoavalanche were knocked out of the playoffs last night, but man what a season! I haven’t had cable for 4 years, which was convenient, because the Avs were pretty terrible the last 4 years. BUT I have cable again and forgot how much I love watching hockey! Now I need to figure out who to root for in round 2.

Sports always make me crave bar food like this, but healthified! I used the crispy buffalo wings recipe from @therealfoodrds and the ranch recipe (with extra garlic) from @shawnmynarhealth.
