It’s hot, sunny and beautiful outside. I think this salad pairs nicely with that. -shredded red cabbage
-shredded carrots -broccoli crowns -bean sprouts -radish slices (as thin as I could go)
-crushed raw, unsalted, I roasted peanuts .
For the dressing, throw all these ingredients in a blender or food processor. Add water to your liking. I think I added around 1 tbsp -2 tbsp white miso paste
-1 1/2 tbsp tamari
-3 tbsp olive oil (a good one who’s flavor you like just drizzled alone on a salad)
-2 tbsp rice vinegar -1/2 tsp ground ginger .

For the sponge you will need: - 15 dates - 0.5 cup warm water - 1.5 cup frozen cherries
- 1/4 cup raw cacao
- 1.5 tsp baking powder
- 1.5 tsp baking soda
- 1 teaspoon lemon juice
- 3/4 cup spelt flour
- 1 tbsp vanilla extract
Blend dates and water in a blender for 2-3 mins, then add cherries and blend again. Add the rest of the ingredients, mix well and bake for 30-40 minutes until a toothpick inserted in the middle comes out clean. Let cool down completely and then slice the sponge in half to get two layers. 
For the cashew cream you need:
- 1.5 cup cashews
- 0.5 cup plant based milk
- 2 tbsp date syrup or agave - 2 tsp vanilla extract
Mix well using #nutribullet or a high speed blender. 
You can finish the cake as you wish - making it a two layer cake or just frosting the one layer and topping with cherries. I like it better with two layers 😁

You can also add 1 tsp cayenne pepper if you want a kick 🌶 Fry for about 7 - 10 minutes. Whilst the chickpeas are heating up, chop up your favourite salad ingredients, for example red onion, cherry tomatoes, avocado, lettuce, kale and carrot. When the chickpeas are done, throw all the ingredients in a bowl and add a big dollop of soy yogurt (or coconut, whichever you prefer). I made this rissotto with red wine rather than white as I had an open bottle and needless to say the color came out a little different...

Not all my food comes out perfect. That’s the fun of trying new flavours and attempting new things! #varietyisthespiceoflife .
The red did really complement the pumpkin and chorizo in the taste stakes. And to boot the kids scraped their bowls clean!

Marvellous mackerel 🐟

Marvellous because it's rich in healthy fats and it's an excellent one to introduce into the diet if you are up for experimenting with different varieties. How beautiful are these pieces prepared by my local fishmonger. 
Mackerel is ideal for grilling or baking and when cooked the meat is creamy and full of flavour. 
It has a great nutritional profile too. It's high in protein, the healthy omega 3 fats, vitamin B12, selenium, iron and small amounts of zinc. Pretty impressive huh?

Studies have shown mackerel to be beneficial in skin care, boosting our immune system, lowering cholesterol, improving cognition and fighting against depression. 
These grilled simply,  sitting on a bed of lemon slices will char beautifully.

The last couple of days I’ve been renovating instead of pottering in the #tinykitchen and as the exhaustion has set in I’ve been dreaming about calorie dense food including some experimental baking I did a while back... peanut butter, chocolate & buckwheat cookies. Almost heathy which is a bonus when you’ve got no time to cook but desperately need to eat

Porridge con macao y marmolado

Ponemos 25g de copos de avena, 25g de harina de avena sabor brownie, 10g de macao(maca+cacao) y un poco de jengibre y canela en 250ml de bebida vegetal de almendras. Cocinamos a fuego medio removiendo con las varillas y añadimos 120g de claras sin dejar de remover hasta conseguir el espesor deseado. De toppings el bizcocho de ayer y un poco más de cacao desgrasado.

Depriving yourself and being hard on yourself, leads to a miserable existence.

I can promise you that.

If you're following a diet that's ridiculously restrictive, or constantly giving yourself grief over your eating, exercise, or anything else; it's time to have a rethink.

Putting heaps of pressure on yourself by setting unrealistic goals fuels anxiety, stress and ill health.

There's nothing remotely healthy, balanced or enjoyable, about mentally running yourself into the ground.

Understand that your mind and body go hand in hand. So if you want to thrive, you need to start looking after BOTH. Your mind needs a little nourishment, just like your body. 
But look, there's no quick fix or overnight solution.

This isn't the part where I tell you to "click this link", hand over your bank details and sign up for my super duper world famous mind and body transformation plan 🤦🏻‍♂️ Nope.

It's the part where you have to be willing to make time, for yourself and for your health.

The bit where you have to drop the excuses and pick up the effort.

I know you're busy...
I know it's not easy...
I know life can be challenging... But focusing on the above, won't help change the situation you’re in.

Simplify things.

Ask yourself the following questions? ✔Are you nourishing yourself with fresh wholesome food?
✔Are you being mindful of your portions?
💦 Are you drinking enough water?
💃 Are you staying active and getting some regular exercise in?
📱 Are you spending too much time in front of a screen?
💤  Are you getting enough good quality sleep?
💥Are you finding ways to reduce your stress levels?

Bring some awareness to the above and make some small changes.

Lastly, find your healthy balance.

Which includes making room for some of the indulgent food and drink that you enjoy. 
Not giving yourself a hard time, if you miss out on some sleep or if you don't manage to get in as much exercise, as you'd like.

Being patient and kind (to yourself) when you have "off days". Realising that you're human, after all. Not a bloody machine or robot, that can do everything, all at once.

Remember, healthy is an outfit that looks different on everybody.
