The Batch 1 Dillon’s Rye is crafted grain to glass, using 100% Ontario grown rye. The Dillon’s Rye is aged in Three Oaks; 7 first fill Bourbon barrels, 2 new American oak barrels, and 1 new Ontario oak barrel! This Rye Whisky expresses the harmony that exists between the Ontario rye grain and the oak barrels. It is light, fresh and delicate with aromas of clover honey, floral, sweet tree fruit and green tea. The palate expresses mild wood tannin similar to steeped tea creating a truly harmonious whisky!
Looking back, I was surprised to see that I never fully reviewed this release. Halfway through my second bottle here, I’ll admit I’ve used this mostly for cocktails so far, but I decided to sit down and re-examine it neat, to properly appreciate this first large scale release from Dillon’s Small Batch Distillers near Niagara, Ontario.
On the nose, I’m getting fresh, grainy rye, with green herbal notes and a touch of floral aroma accompanied by a distinct absinthe note of aniseed. On the palate it is initially honey sweet with a quick kick of rich wood spices, along with black pepper corns and cinnamon. The finish reminds of green apples, a slight dryness of lingering oak and a warming spice on the tongue.
Overall, I’m enjoying this a lot more than my initial impressions from the first bottle I tried. I think I was overly hard on it, because my experience previously with their first mini-release of 36-month Old cask strength whisky, which is truly phenomenal stuff! I know there’s potential here to make an even better product, but this Batch 1 of their Three Oaks release is really quite good! Here’s hoping Batch 2 can boost the ABV to 46% or even 50% for a truly full flavours experiance. Would also be nice to see full sized 750ml bottles. Minor quibbles, because this is quality stuff and I have high hopes for the future of this local distillery!
Have you heard? We have a bunch of worm poop at the brewery! Worm castings and Bokashi Bran are great for your garden and compost pile. Fun fact: the hops and grain that went into your beer was then given to worms to enjoy. Now you can take your favorite @boisebrewing beer and fertilize your garden for YOU to enjoy! We only have a limited amount so come on down!
Thank you Camas Country Mill for providing the seed for @carmanranch for our whiskey production. Oregon has a rich agricultural community filled with amazing people that we are lucky to work with. Rio Grande Valley: TODAY! Grain to Glass will be hosting a Record Store Day celebration full of vinyl and local deejays! Starting at 4 pm there will be local deejays, vendors and record stores setting up shop. There will also be a RECORD SWAP, food and fun for the whole family. Chulita Vinyl Club RGV will be closing the event - 10 p.m. to 2 a.m. Come on out and celebrate all things vinyl with us.
