I’m alive! I don’t have much free time to blog at the moment, but I am still baking and cooking whenever I can manage. Today I adapted @sallysbakeblog recipe for lemon cupcakes with vanilla buttercream to be gluten & grain free. I subbed the flour 1:1 with cassava flour (@ottos_cassava_flour) and used coconut milk for both the cupcake batter and frosting in place of the milk/cream, and oh boy are they good!!! Fluffy, sweet and the perfect lemon flavor 🍋🍋🍋

Commonly at night we set goals in our head of what we want to get accomplished in the days ahead, but how often do you find yourself sticking to those goals? ----- What helps me to be consistent is by telling myself everyday that I'm going to do something better or be better than I was the day before, no matter how simple it may be! We thrive off of feeling accomplished, and self gratification is one of the best ways to improve your mood! ----- Chickpea pancakes are a great meal for any part of the day, but especially a great alternative for delicious breakfast pancakes! Aside from being fluffy, cakey, and deliciously moist, they are grainfree, gluten free and oil free! ----- 7 Simple Ingredients:
~80g Garbanzo Flour ~1 C Water
~2 Tbsp Date Paste

Spaghetti squash tossed with olive oil, garlic, chopped basil, pine nuts, lemon zest and salt and pepper. I pan fried the gnocchi in brown butter 🤤And topped it all off with a drizzle of olive oil and a squeeze of lemon juice. I ate too many cookies (they were soo delicious) and then had this horribly sweet pineapple drink (pineapple juice PLUS cane sugar 🤦🏻‍♀️). I woke up this morning feeling groggy, fuzzy, heavy, and worst of all inexplicably anxious. Not like there’s this thing on my mind and I feel anxious about it type of anxious, but that general vague but unsettling sense that something is wrong or something bad is about to happen. 
It’s a sugar hangover, guys. Just as an alcohol hangover will cause anxiety, overdoing simple sugars causes the same physiological reaction. Blood sugar spikes and then crashes. Low blood sugar in the morning can feel a lot like generalized anxiety. You feel physically sluggish yet agitated and uneasy. 
The cure: fat and protein. Stabilize blood sugar by eating a high protein and high fat breakfast. There’s a reason you crave this kind of food when you’re hungover. Your body wants the steady fuel that will allow hormone levels to even out. 
So I had some chicken sausage and avocado on greens this morning and I already feel MUCH better. If you’re someone who struggles with anxiety on a regular basis, eating in a way that supports balanced blood sugar is essential to feeling grounded and at ease in your body. It’s a cozy day in L.A., so of course I had to whip up some of my Paleo cauliflower “oatmeal” with a side of cinnamon roasted eggplant and zucchini! One of my all-time favorite sweet breakfasts (but zero sweetener), and a great way to learn to love your veggies if you’re having a hard time getting enough of them into your diet. I have two different versions of Paleo oatmeal on my blog - one is vegan and one is not! Today I used some Apple Pie Spice to give it some extra flavaaaa and I topped it with cacao nibs, walnuts, @meeeatpaleo nut butter, and @artisanaorganics cashew butter! I always have such a hard time settling on toppings... Anyways, today’s agenda includes client calls, blogging, and catching up on some work for @ntatraining, and thankfully gloomy weather is my favorite for getting work done! I'm normally a lunch at 1-2pm kind of gal, but for some reason today I was starving by 11am. Luckily I had packed my lunch, so all I had to do was toast my bread and then assemble to enjoy this yummy sandwich. This is a twist on a traditional Egg Salad Sandwich in that I used Pickled Eggs instead of just plain hard boiled eggs. Honestly, it was because that was all I had in my fridge when I was packing my lunch bag last night and I didn't feel like making anything else. I was pleasantly surprised by how good this sandwich actually was. Creativity and laziness for the win!!

This egg salad was super simple to make. 2 hardboiled pickled eggs cut into small pieces, combine with 1T of Primal Kitchens Mayo, and sweet relish to taste. That's it! .

🍅 Grain free Bruschetta 🍅 Do you love bruschetta? I sure do! 🙋🏻I remember it being one of my favourite parts of a meal, whether I made it fresh at home or enjoyed it out at a restaurant. A generous serving of juicy tomatoes complemented by the gorgeous flavours of basil and onion was always a winning combination💥 I used to pile this high on a stack of crusty bread but since I am now grain free, I have a healthy, delicious alternative that pleases the palate and doesn't slow down my healing in any way! Instead of using bread as the base, I now use slices of roasted potato! I saw this idea shared on Instagram a while ago (her account is now closed🙁) and thought it was genius so I tried it. And let me tell you, it so delicious that I didn't miss the bread! The recipe is simple too. Just chop about a cup of raw tomatoes (I really like organic grape or cherry tomatoes because they're sweet), about a half of a yellow onion, and a few tablespoons of fresh basil. Combine in a bowl and set aside. Roast some thinly sliced (about 1/4 inch thick) yellow potatoes in the oven at 420 for about 15 minutes. Once cooked, remove from oven and allow to cool for about 5 minutes. Next, add a heaping spoonful of the tomato mixture to each potato slice. Garnish with more basil. And voila! Bruschetta is served! 💁🏻You can also add a little organic olive oil and a sprinkle of sea salt to the tomato mixture if you would like. I am oil and salt free so I leave it out, however it would be a savoury addition to this dish and more closely resembles the traditional recipe I used to enjoy back in the day! Combine in a bowl and set aside. Roast some thinly sliced (about 1/4 inch thick) yellow potatoes in the oven at 420 for about 15 minutes. Once cooked, remove from oven and allow to cool for about 5 minutes. Next, add a heaping spoonful of the tomato mixture to each potato slice. Garnish with more basil. And voila! Bruschetta is served! 💁🏻You can also add a little organic olive oil and a sprinkle of sea salt to the tomato mixture if you would like. I am oil and salt free so I leave it out, however it would be a savoury addition to this dish and more closely resembles the traditional recipe I used to enjoy back in the day! Este fue mi almuerzo de hoy 😋, mi versión de taco salad baja en carbohidratos, inspirada en un recuerdo feliz de la adolescencia cuando íbamos a comer mis papás y yo a un restaurante llamado Memphi's y esos 3 gorditos siempre pedían la taco salad con una cesta de algo que estaba frito pero que no tengo ni idea que era, llevaba granos y un montón de salsas, esta versión mejorada me encantó la cesta es de #harinadealmendra,  la hice horneada y quedó igual de crujiente, estaba llena de lechuga, tomate, aguacate,aceitunas negras, carne molida, un toque de queso mozarella  y un poquito de mayonesa casera,  estaba delicioso, me transporte 20 años atrás, qué lindo es tener tan buenos recuerdos 💕💕💕💕💕 Buen provecho! 😋💕💕🥗🥗🥗💕💕😋

You might not be able to tell in this picture, but I am extremely exhausted. This round of Whole 30 has been hard, which is funny considering I eat Whole 30 95% of the time, with the exception of natural sugars. Not having Kombucha on the daily has been hard on my system, for the natural sugars, but also my digestion. I have added some tea back in to get some caffeine but the lack of sugar has been rough. Definitely believe, now, that I might still have a sugar problem. Sugar is sugar, even if not refined. I have been only using maple syrup, honey or coconut sugar since last January, but I was overdoing it to help with my energy. I somehow forgot that I have a disease that causes extreme fatigue. The sugar is really just a bandaid. Going forward my plan is to only use those natural sugars on a special occasion. I will be going back to drinking 8 oz of kombucha daily because my digestion needs it.

Mixed veg- sweet peppers, spring onions and tomatoes

And a Lovely #herbaltea - spiced apple no sugar

Loving my new mindset to cooking and food. Usually I would of deep fried my Plantain and use lots of oil and butter in my cooking. I probably would of had ketchup instead of the veg and add GF bread on top.
