Fine and Dandy
I know it’s a bit wrong to celebrate dandelions, but look at this beauty. I couldn’t resist going in close to photograph it. Dandelions are demon weeds that extend their taproots down into the lawn or cracks in the paving. When you yank them out, if you leave a section of the root in the ground, it can regenerate into a new plant. It’s survival of the fittest at its most efficient. Your best bet is to pull them out early before they flower, and certainly before they seed.
But I think their flowers and pom-pom seed heads of fluff are irresistibly pretty… Remember a weed is just a flower that grows in the wrong place, so you do have the option of leaving a handful of dandelions in your garden, enjoying the flowers and eating the leaves. They are packed with anti-oxidants and have been used in medicine since the 10th century. The leaf taste can be bitter and peppery – think poor man’s rocket – so try them in a salad with strong flavours - olive oil, bacon and goats cheese. Or add a few leaves to a morning smoothie. Get foraging. And while you’re at it make some wild garlic pesto too.
