So around this time last year I was getting ready to move from my home state of Texas 🇨🇱 to Oklahoma to begin my dietetic internship! Whoa 😯 how has it been a year already?
.
I remember being so nervous... being in a completely different state, away from my family and traveling to new rotations each week! I definitely had periods of self-doubt at times.😔
.
Though some parts of the internship were a struggle, there were so many good moments and I learned so much valuable information along the way (especially during clinicals). I also made a ton of friends in my program and was able to go to #FNCE this past October!
.
Now that I’m done with my program all I have left to do is take the CDR exam before I can put RD after my name. .
Moral of the story: don’t ever doubt yourself because you’re stronger than you think 🤔 and if you’re thinking about going to school for nutrition/dietetics go for it! While we may all have different views on nutrition, we all have☝🏼thing in common: a passion for helping people! Excited to continue to share my journey on this platform and I hope that you will follow along 😊

I co-founded Natural Healing Care Center when I was just 20 years old and running a business for 4 years taught me so much, but since I have been back in school, I have learned so much about myself personally. I have always dreamed to create a business that would help make the world a better place. Going back to school has brought me back to a more simpler way; the best way to make the world a better place is by making yourself a better person. It was a reminder to be kind to myself, and be kind to others everyday. I have learned that judging others is really just a reflection of our own insecurities and that everyone’s path in life is different. I have learned that societal and cultural pressures are nothing more than false notions of who we “should” be or what we “should” do. Morning ladies and gentlemen! Made a yogurt bowl for breakfast with a matcha latte on the side. I think matcha lattes will be a usual from now on 😍. I’ve been adding more fat to my diet and I’ve found it a lot easier to incorporate some into drinks as well. The nice part about adding coconut oil or other fats to drinks is it makes them frothy 👍🏻. I’ve haven’t had a period for a while so that’s why I new this was necessary. This caption could be so many characters long explaining the basic benefits of fat. All nutrients are essential and good for the body. Don’t let anyone tell you otherwise, unless they’re a trained professional 💁🏻‍♀️. Have a wonderful morning chums! What is your favorite type of fat? I don't know if it's my wise-old adult age (;)), becoming a mom, or just plain old life experience, but one of the absolute best things I've ever done for my mindset as a business owner is to not let other people's rules, expectations, or actions define me. ⠀

I don't need to do what other people expect. I don't need things to look the way they do for someone else. I don't care about what things look like from an outside perspective. And I don't care if I'm not doing what everyone else is. (I mean, that's just boring.;))⠀
⠀
But both in life and in business, it's ok to just be you. To do what feels right for YOU. To do what makes YOU happy. To do things differently than your peers or friends or coworkers or competition or whoever. ⠀
⠀
The only expectations you need to live up to are your own. ⠀
⠀

CHOC-O-MINT HUMMUS!! I stumbled across this AMAZING product the other day and I can honestly say that I have finished the entire container in less than two days ✌🏼(with the help of @lucy_claytonn of course). .

This stuff is incredible ➡️ it’s made of chickpeas, just like regular hummus & only has 4 grams of sugar😱!! . Plus, it tastes EXACTLY like a thin mint! .

One frozen banana, a handful of frozen strawberries, a handful of spinach, chia seeds, @elmhurst1925 walnut milk, two medjool dates, cinnamon, and spirulina. Topped with strawberries, coconut flakes, and almond butter!

Love the natural sweetness and creaminess it gives 😋. Have my English final at 1:07 this afternoon, then schools out. I’ve been thinking of starting a blog up again. Lately I’ve been wanting to bake/cook a lot and make my own recipes. Think it would be a fun distraction and a good way to try new foods 👍🏻. Hoping to make this summer a good one! What are your favorite summer activities? Would love some ideas 💕

I don’t know about you guys but I’m a huge fan of @zoeskitchen! I love that all of their meals have tons of veggies 🥦🥕🌶 because that is what I’m all about! I am also mindful about carbs (as I am a type 1 diabetic) so finding meals that won’t spike my blood sugar is key for me! I recreated their chilled cauliflower rice bowl and it came out great! I used leftover lemon rosemary chicken that I made 2 nights ago and I usually keep lots of salad ingredients on hand so it was super simple to put together! This bowl has 👉🏼

Let’s put more emphasis on *whole* body health. While I believe that a combination of foods is one of the upmost determinants of health, it’s important to remember that to take care of your whole body, you must do so on ALL levels. Nothing works isolate. Pieces of being *healthy* also requires adequate physical activity, sleep, stress management (mental AND physical), hydration, minimal toxic exposures, genetic considerations, and more. 
For me, outdoor physical activity is probably my FAVORITE way to work on a few of those pieces (at once, too!); whether that be from walking around, exploring a new town or hiking a new trail. 🏙🚶🏽‍♀️🌲🏃🏽‍♀️ What are some of your favorite ways to take care of YOUR health?

It’s definitely scary to think about how long you might live. Even more scary to know that what you’re doing can cause you to live a short life. I’ve been having an existential crisis for the past few days. They’re not fun, and a for me a lot of crying is involved 😕. Life with an eating disorder does suck the life out of you mentally and physically. I don’t want to live like this anymore, I have been exercising a little less. I have been feeling positive about it, But know that I need to gain for sure. All those things cause a lot of stress of course 👎🏻. Trust me when I say this, life is so much more enjoyable without these constant stresses. Worrying about every little thing you eat, when you eat, how much exercise you do, what you can and can’t wear, etc. it’s not worth the horrible thoughts and time wasted worrying about them. We were not born to suffer and slowly kill ourselves 🙅🏻‍♀️. Seriously, live by the saying “life is short” and the motto “yolo”. It’s true, so here’s a big fuck you to my eating disorder. You can’t control my life anymore, go shrivel up and die please 😂. I love you all and I hope you got something from this as well, have a wonderful day

We can give people the best meal plans in the world and set big goals or promise to see our personal trainers in the morning, but if we don’t know how to manage our stress, reach out for help, or how to comfort members of our tribe, we will struggle to cope when the murky waters set in. And they will, because we all have our trials and tribulations. But if we can cope and manage, we can heal. And when we’re healed, we can reach new places of self-growth.

I wanted to show you all a little bit of what my kitchen looks like when cooking a meal 😅 I always try to prep as much as I can before I even start cooking. This entails chopping onions, garlic, mushrooms and measuring out how much I will need and putting them in a dish that’s ready to go once I start cooking. I try and pull out the pans I will need and get the veggies and bread on their baking sheet so I can easily place one after another in the oven. Tonight’s dinner was a true labor of love- risotto 😍😍 Some nights I love easy go-to meals or even take out because let’s be honest, those are more realistic meals and convenient for our busy lives. But every once in awhile, I love to take the time with fresh mushrooms and wash each and every one of them before chopping them up to add to sautéing onions and I love to, one by one, add in a cup of broth to toasted arborio rice for the perfect risotto topped with freshly grated parmesan. But it takes the same effort and time to put more nourishing ingredients in the bowl. I’ve been posting a lot less lately and that’s just my life for ya. It’s basically because most of my meals are in a rush or on the go and I don’t have time to get that *perfect* shot. Which is fine, my work schedule is insane and when I do have time to make my food pretty, I will. But because I love and enjoy it! Not because I feel like I have to.

I’d rather be completely exhausted from the hard times which breed success, than well rested from achieving nothing..... I’m tired, I’m worn thin, but I love everything about it. I turn 30 at the beginning of June and today I was questioning why I’m looking forward to it so much. It doesn’t seem “old” to me, compared to when I turned 21... it’s almost a celebration of what I’ve achieved over the last ten years. So I decided to start buying more pre-made and frozen foods *gasp* 😱😱 Frozen meals?? I used to think these were a poor choice to be honest.

Until I stepped off my high horse and realized that some people have to eat meals like this, they are a convenient and easy thing to prepare. Plus, I made a decision to stop seeing foods as good vs bad!! 🛑 .
.
However- a great guideline I follow when choosing frozen meals is to keep the sodium content under 500 mg ⬇️⬇️ I’ve found that the Healthy Choice Steamers are great for this & tasty too! Paired with another side like veggies or cheese & crackers and I’m good to go. 😋

I’ve been making breakfast bowls nearly everyday now! Today, instead of making a tofu scramble, I made a tofu-tempeh scramble. The tempeh added a little extra texture that took this bowl over the edge! I also added some air fried shishito peppers. If you haven’t air fried shishito peppers, you MUST. It is a game changer!
