The best meal of my life so far - it has so easily stood above the heads and shoulders of everything else. Sushi Gyoten, the only 3 Michelin Star restaurant on the Kyushu island, is truly a transcendent experience. With only 10 seats in the restaurant which open up for bookings 2 months out, certain luck is involved with getting seats. There has not been a single meal more impactful, and memorable, than this meal. A few things to note of the meal:
1) The bluefin used that day was the most expensive tuna sold at Tsukiji the week it was bought. It was easily the most sublime tuna I’ve ever tasted, and actually the leaner meat had a more rounded and complex flavor. Each cut of the 5 tuna pieces came from a different segment of the tuna.
2) The chef personally finishes cooking the rice, in 3 batches during the meal, and applies red vinegar himself. Each batch is crafted differently depending on the fish served, and the last batch has more vinegar to maintain the appetite as the stomach is filling up. Ridiculous to say, the food was so good that each of us had approximately 15 pieces of sushi along with a healthy amount of appetizers, which included a crab, so the vinegar definitely helped.
Second post is coming soon, but sushi will never be the same again, not after this meal. Dreams of sushi are now when he hands me the gizzard shad, mixing in the red vinegar to finish off the rice. There is literally no way to overhype this meal, as he takes into consideration where you are traveling from in terms of planning your meal and what to serve.
