Olive oil is produced without heat or industrial refining, so all the antioxidants and vitamins in the fruit remain intact. The vitamin E in olive oil is an antioxidant that protects the body against eye and skin problems, cancer, diabetes, and neurological diseases.

⚛️ Nowadays, we’re in #asparagusseason . This evening, my plate is full of #asparagus . First I boiled it for 5-6 min., then roasted in a pan with olive oil for 3-4 min., lastly grated and melted some local #cheese on it. I served it with #garlicyoghurt .
The first taste of my veggie crops this season (just the spinach)! 🙌🏼 There is nothing comparable to the taste of fresh food straight out of the ground 💚💚💚💚
I have to be honest, my initial motivation to start a vegetable garden was to more rigidly control the quality of my food. But instead it's given me a deeper appreciation and love for it. Instead of seeing food simply for it's nutrient value, it's helped me appreciate other aspects like how it actually tastes (crazy right :p) and all the hard work that goes into producing it. .
Focus on the positive aspects of your food instead of zero-ing in on the negatives and see what happens! Even if you don't think it's "good" for you physically, just enjoy how it tastes or how happy it makes you feel. And if it does neither of those for you, send some love out to all the people who were involved in the creation of it.
