Two kinds of wild garlic are found in Irish hedgerows - Allium ursinum (bear leek/ramson) is pictured on the left and Allium triquetrum (three-cornered leek) is on the right. Both are edible. A. ursinum is a native flower while A. triquetrum originated around the Mediterranean and is thought to have been here about 300 years. 
Smell is very useful in IDing both of these alliums! 🔎

Every walk outside is like a treasure hunt when you’re learning how to identify plants. ✨🌱 Foraging for me is a meditative process. Honestly, I just don’t thrive in the hustle and bustle of the city. Finding green space away from the traffic filled roads quiets my mind and brings me peace. I feel good after gathering plants I’ve studied, reaping the rewards of my work. It’s so satisfying. Today, I found violet leaves, wood sorrel, dandelion, red clover, yellow dock, chickweed and plantain. Lavender is from my garden and is now hanging in my shower for some sweet aromatherapy.

Had a lovely bit of Giant Dock root with my omelette yesterday evening! You can use the leaves (tastes a bit like cabbage) and the root, treat it almost like a potato, I simply wash it, cut it up, and pan fry. High in fibre and nutrients. 🌿💚Wild leek and fennel kimchi. 
Napa cabbage, fennel, leeks, ginger, salt, and some extra water (because we like it juicy!). Squeeze and squash this mixture with your hands until it’s very wet and the cabbage is translucent. Pack into jars and stuff a piece of cabbage leaf on top to keep the kimchi under the liquid. Place fermenting lid on and let it hang out on your counter. Taste test daily until it’s fermented to the point you want and enjoy! Store in the fridge once it’s fermented to your liking.

Completely in love with these wild garlic flowers! 😍 Picked plenty of buds and flowers yesterday, now they're all packed into a clip-top jar with some delicious pickling spice. We're supposed to wait at least 2 weeks for them to develop... it's going to be tough fortnight! 🌱💚

DANDLEION DAZE! SO MANY DANDELIONS BLOOMING IN THE LANDSCAPE RIGHT NOW = HAPPY. The dandelion provides an early source of important nectar for pollinators, and also provides an excellent food source for us humans. This perennial of the Asteraceae family, both a food and medicine, is scientifically called Taraxacum officinale, which translates into official remedy for disorders. The leaf & root are consumed as health tonics specifically for liver and digestion, while the root is an alterative, a gentle but powerful agent that helps alter the body into a healthier state — all this free and wild from your lawn! A most welcome and valuable plant that we spend $$$ on herbicides trying to eradicate = crazy. Let’s love our dandelion (and our ecosystem), no more spraying.
~ The whole plant is edible and right now the blossoms are peaking and wonderful to add to salads, butters, desserts and more. (FYI, when I add the blossoms to salad or butter, I break the flower head apart and sprinkle it in so as not to eat the whole head).
~ CULINARY USES: Flower: raw in salad, butter, as general garnish.
Leaf: (young) raw in salad, pesto; cooked in soup, sauté, frittata.
Root: (small amounts) raw, powdered in Herbal Truffle; cooked in bisque.
All parts in beverages: Herbal infusion, Therapeutic Spirit
Qualities: Leaf: nutritive, bitter, high in beta carotene, vit. C, calcium, iron. Root: bitter, sweet, very high in minerals. Flower: sweet w/bitter bracts. Leaf & root considered health tonic specifically for liver and digestion.
~ EDIBILITY NOTE: Edible throughout the growing season (early spring thru late fall): leaves and roots. Spring & late fall: leaves are sweeter. Late spring: flowers. Late fall: roots are tastiest. Roots edible all year long, sweetest late fall thru late winter, most bitter mid summer.

Found some Dryad’s saddle (also known as pheasant back fungus) for yesterday’s lunch while foraging. Very tasty, once fried it almost has a similar flavour to steak. Try to keep an eye out for the smallest ones at the base of trees, or at least a fungus that is no larger than your hand. And lucky we are, as violets have so many gifts to offer us, from her beautiful edible flower rich in bioflavonoids and vitamin C, to her soothing, cooling nourishing edible leaf (also rich in vit. C + beta carotene). This wild Native American perennial of the Violaceae family, scientifically referred to as Viola sororia, can be found growing in full sun to part shade in moist rich soil. (USDA zones 4-8). Look for it in woods, gardens, meadows, and lawns.

This is also his orange day outfit as it’s hard to see but there are coordinating orange pockets. 
What was I thinking making a romper in mostly white for a 3 year old to wear twice a week?! 🙈
But he loves the cars in the print and it’s so adorable on him so it’s still a win

Yesterday’s hike, we found a ramp patch not far from home. The whole area smelled like onions, I was so happy to have finally found a spot with a significant amount. I only rooted up one ramp to make sure it wasn’t the deadly Lily of The Valley. If you find ramps you should double check the leaves and the bulps at the roots. The onion scent is a dead give away to but you should check every way you can. Also, since ramp popularity is at an all time high, you shouldn’t pull them up. The ramp population is depleting because of the amount of people digging them up. Bring a sharp knife or a pair of scissors and cut the leaves. Leave the roots in the ground so more people and animals can enjoy them later on! I will hopefully be back!

Excited to see a lush carpet of star chickweed, aka Stellaria pubera (perhaps planted by the woodchuck whose home abuts the patch). This Native American perennial of the Caryophyllaceae family likes to grow in rich moist soil in part sun to medium shade. This is a close, and larger cousin of common chickweed (Stellaria media), that provides tasty salad greens all growing season: spring thru fall. All of the above ground parts are edible: stems, leaves and flowers.
~ Culinary Uses: Leaf & tender stem: raw in salad, pesto; cooked in soup, sauté, stew, beverage. Flower: raw in salad, butter, as garnish

As well as wild Garlic, I also collected some dead white nettles yesterday. Similar in appearance to stinging nettles but no sting, hence the name. You can eat the leaves raw, add to soup or as a base for a herbal tea. Very much an underrated plant in the U.K. compared to the rest of Europe. High in vitamin A, and very nutrient dense. Regular stinging nettles can also be used, which are high in fibre and 5% protein. As well as wild Garlic, I also collected some dead white nettles yesterday. Similar in appearance to stinging nettles but no sting, hence the name. You can eat the leaves raw, add to soup or as a base for a herbal tea. Very much an underrated plant in the U.K. compared to the rest of Europe. High in vitamin A, and very nutrient dense. Regular stinging nettles can also be used, which are high in fibre and 5% protein.
