Back home after a stressful weekend away. Family is complicated and being surrounded by triggers made for a very difficult past few days. -

Daily eating routine has become so important for me. Trying to understand food and what it does for my mind and body and how they both coexist is so interesting to me!

“I’m just gonna stop by the farmers market & pick up some potatoes.” 🤫  Broccoli Pesto:  1 head of broccoli 🥦  1/2 🍋 juiced  1/2 cup artichoke ♥️ 3 cloves of garlic  1/2 cup onion  Handful of cashews  Water/Braggs Aminos/Pepper.  Mix in a food processor till creamy. Mix with cooked pasta.  It was so fun making this recipe & it was hard not to use any oil. It’s amazing how well water works. It came out so creamy😋

Ok here it is! Tonight’s #meatlessMonday meal! The cream of asparagus soup: 🍵2 Tbs cooking oil 🍵 1 cup diced leeks 🍵 2 cups chopped cauliflower 🍵 2 cloves garlic, minced 🍵 4 cups broth 🍵 2 lbs asparagus, chopped into 1” pieces 🍵 2 tsp sea salt (or to taste) 🍵 1/2 c full fat coconut milk. To make: in a cast iron skillet, sauté leeks and cauliflower in oil over med-high heat for about 4 minutes. Add garlic and salt and cook an additional minute. Then add broth and asparagus, bring to a boil, then reduce to a simmer for 10-15 minutes. Blend using an immersion blender or high speed blender. Return to pot and stir in coconut milk and serve! If not dairy free, try using Greek yogurt instead of coconut milk and use additional for serving. I topped the boys bowls with Parmesan cheese. Served with a side salad topped with #empoweredbyrealfood Greek goddess dressing, sauerkraut, and strawberries. Yummy 😋

Let’s talk about #eggs 🥚 what kind of eggs to buy is confusing for a lot of people. Long (but hopefully useful) post alert 🚨 .
🐓Ideally buying pasture raised (organic if available) eggs is the best. I think it’s one place that the extra $ is definitely worth it. Pasture raised means the chickens are fed a (healthy) diet that they are biologically meant to eat (from a pasture). They also live a nicer life roaming around and are overall healthier and less inflamed. Conventional chickens are often stuffed into cramped and brutal conditions called “CAFOs” (concentrated animal feeding operations). .
🐓Pasture raised chickens have healthier fats in the the yolk because they’re diet is full of anti-inflammatory omega 3s rather than inflammatory omega 6s that will result from a diet full of corn/grains/soy, fillers and antibiotics given to conventional chickens. The egg yolks are also more nutrient dense because they eat things like seeds, grass and insects that are nutritious and this nutrition gets passed on to the end consumer of the eggs.

🐓What about free range? This term has vague standards and only means chickens had access to the outdoors but does not say if they actually went outside at all/ for how many hours a day and completely ignores what they were fed. They could have been fed a corn/grain/soy and/or an antibiotic rich diet. Therefore don’t assume free range eggs are superior. .
🐓Natural? Does not mean anything, obviously chickens/eggs are natural, since they occur in nature.

🐓Hormone-free? It’s illegal to give chickens (not cows) hormones in the US, so this label

Today was a big day! I baked my own recipes in a commercial kitchen in a professional setting for the first time (@bakedon8th soft opens tomorrow y'all, come check it out!!). I restarted my climbing gym membership and did far better than I thought I would after a year and a half break. And then I cooked one of my favorite dinners! .

But for a lazy night without much food on hand, this is what I did (feeds 4-5):
-2 cups brown rice noodles, cooked
-1 lb organic chicken breast
-1 zucchini, chopped
-3/4 cup (ish) bell pepper, chopped
-chili powder, salt, & cumin to coat chicken. I never measure when I'm working on the fly, just sprinkle on there
-1 cup enchilada sauce
-handful of mozz & cheddar cheese
Instructions:
1. Cook chicken, zucchini, and bell peppers in a skillet and season with the chili powder, salt, and cumin
2. Once completely cooked, mix in with noodles in a casserole dish
3. Pour enchilada sauce in and mix well
4. Cover with cheese
5. Bake at 375 F for about 10 minutes
6. Top with cilantro, avocado, and hot sauce!

I wish I could say I was immune to comparing myself to others, but I'm not.  With all of the images we are bombarded with every day, it's hard not to compare and find a woman who's prettier, smarter, more accomplished, more successful, happier, skinnier, more fit...the list goes on and on. 
I admit it.  Even with these beautiful pictures that @tiffanyalanooriphotography took, I picked apart everything about myself.  Old habits die hard.  Those old limiting beliefs telling me I'm not good enough or I'm not worthy creep up. 
The problem is, the more we compare ourselves to others, the more we stay in the same old patterns--of not ever being good enough.  We get more of what we focus upon. 
Well, I don't want to stay in that old pattern.  I want to be fearless, more than enough and not give a f**k.  The truth is, we don't know anything about the people we are comparing ourselves to.  How do we know that they are living a better life than us?

What we can do is focus solely on improving ourselves everyday. Of creating goals, crushing them, then making more.  Being grateful everyday for what we have.  Knowing in the eyes of our children, we are everything.

For years I dealt with adrenal fatigue, thyroid dysfunction, hormonal imbalance, depression, and anxiety.  The doctors told me the answer to all of my problems was to get on meds for the rest of my life.😣🤷🏻‍♀️

Something awakened in me during that time.  I knew deep in my soul that God wanted to show me a different way to experience abundant life.  He wanted to show me the power of partnering with him. One of the first things He showed me was how important nutrition is.  I am still a work in progress but God has been so faithful to reveal more and more.

Understanding that God created plants for people to eat in the beginning, I focus on those.  At gatherings I eat what’s served with thanksgiving.  I enjoy all the foods from time to time. (Cheetos anyone?🙋🏻‍♀️🤤)

Trying to create low phosphorus and low potassium recipes to help my dad eat good with kidney disease.  Researching everywhere, and there is so much contradicting information.  We found some who say they reversed kidney disease on an all vegan raw diet.  Right now he is eating as clean as possible and limiting phosphorus and potassium. ....and THIS is why I food prep! Remember I made some pan roasted tomatoes yesterday? Well I worked late tonight and I walked in the house starving. I quickly grabbed a @hilaryseatwell greens and hemp seed veggie burger from my freezer. As I cooked it, I made a small salad with baby greens and avocado dressed with olive oil, balsamic, and I topped it with @traderjoes Everything But The Bagel seasoning. Then I covered it with the veggie burger and a huge dollop of the roasted tomatoes and a little basil-garlic aioli that I had in the fridge. Who says eating well is too hard???. •

Apple cinnamon bread

1/2 c finely shredded gala apple (almost purée like consistency)
1 c shredded zucchini
1 1/2 c almond flour
1/4 c coconut flour
2 tbsp honey
2 tbsp crunchy almond butter
4 eggs
1/4 c coconut oil
1 tsp cinnamon
1/2 tsp nutmeg 
1 tsp baking soda
apple slices

Whisk wet ingredients first then add dry and mix until well combined. Pour batter in an oiled down baking dish and press apple slices along the top. Bake for 45-50 minutes or until toothpick comes out clean. Serve with nut butter and honey. Enjoy! ✨

Sitting at a cafe with a dear friend this past weekend, discussing how a company is developing flying cars but we can’t stop school shootings.
- I know it’s more than just that, but sometimes I really don’t understand why it’s more than just stopping our children from being killed.

Spent the weekend reminiscing on how far I've come since being diagnosed with mast cell activation syndrome (aka #MCAS )

From taking Benadryl every 4 hours for days on end, constant state of anaphylaxis, food allergy diagnosis, exercise induced anaphylaxis and flares leading me to the hospital.  I'm sharing my journey to help others, it's the scariest thing when you have a hard time sleeping wondering if you'll be able to breathe properly. From finding our fragrances bothered me, to food triggers it's been a WILD ride! I'm coming up on my 2 year #xolair infusion anniversary and it's helped me 100% 🙌 Sharing my story after realizing how far I've come especially this past year! SO thankful for AMAZING doctors and that my body is tolerating this medicine!

Homemade Sour cherry kombucha! Such a delicious, healthy probiotic drink.  I’ve shown you some pictures of how to make it. Once you master this process it literally takes you about half hour to make it. I make and bottle my kombucha every Sunday. You do need a scooby to start the fermentation process, if you ask around I’m sure someone will share with you or you can buy it. Boil 4cups of water with 1 cup sugar. Once the sugar has melted put 4 earl gray tea bags to simmer for 10 mins. Meanwhile fill up a glass jar with 10 cups of water and 1 cup is starter. Once the tea water cooled down a little poor it into the jar and place the scooby on top. Put a kitchen cloth on top and let it fermented for a week.
