18 hour organic wholemeal spelt sourdough.
To be fair the only reason it was 18 hours was because I was tired and had to go to bed so put it in the fridge early which means I had to take It out for a while in the morning to ferment more. I was concerned it wouldn’t turn out as good but still rose like a champ (and tasted great too). The starter is now around 5 months old, still working well. I am still so fascinated by this, that this living thing is the key to making delicious bread and that I could keep these naturally occurring yeasts for several years or long!!! Fucking crazy.

I seriously like the concept that this place has. You pick your noodles, choose your base, your sauces, and your choice of meat, or opt to go for vegetarian. This gives you plenty of choices for any nood mood that you may be in. I love any noodle dish so I could see myself coming back here a lot to try various combinations. Unfortunately, for places with combinations like this, they would sacrifice authenticity for their variety. I'm not a huge stickler for authenticity, especially if a place doesn't advertise for that, as long as the food is good. I think Toss Noodles definitely delivers and I enjoyed my experience here. Back in September 2014, during one of my first few days in Hong Kong, my ophidiophobia got the best of me after catching a glimpse of She Wong Yip’s poorly constructed cages and snakes trapped in wine. Three and a half years later, I managed to finally gain enough courage to step in and taste their traditional snake soup, while half expecting a cobra to pop out. At 45 HKD for the small size, the cheapest of the five shops, I wholeheartedly anticipated a bowl of soup a “snake head” above all others. While I applaud the thickness the chef was able to achieve, the flavors were generally too mild for my liking. In a vein similar to Ser Wong Fun, the earthiness of the mushrooms and fungus often took the spotlight away from the meatiness of the snake broth. With no ginger flavor I could taste and without the sharpness of added pepper or lemongrass, the soup was too one-dimensional. Adesso ho provato con una pasta fresca ripiena... Ravioltondo con cuore di patate fondenti aromatizzate con origano, prezzemolo e basilico freschi e un pizzico di peperoncino in polvere, conditi poi con crema di peperoni rossi spadellati, gocce di relish di peperoni verdi homemade, sale nero e Grana...Strepitosi!!! Stasera sono proprio soddisfatta 😊
