Simple. Quick. Easy. That's what I need today. I learned last night, the hard way, that I'm very allergic to raw garlic 🤢😷 I made cauliflower mash and wanted a deep garlic flavour so I added it raw when I put the cooked cauliflower into the food processor with the cream cheese..... Apparently, that was a very bad idea. My stomach swole up in less than an hour, I got a massive migraine, and everything smelled and tasted like garlic for the next 18 hours. I looked like I was 5 months pregnant! Felt about as well, too, lol. The eggs and avocado made me feel better today. I'm going to study something called FODMAP. I didn't even know what that was until I searched for remedies for my garlic issue. Strange way for the universe to try and educate me 😂😂 Fingers crossed that I'm not also sensitive to cauliflower! #garlic #allergies #foodallergy #fodmap #ketoproblems #ketofood #keto

I'm not a fan of pasta, never have been. I've been a bit limited on the FODMAP diet, on nights I'm just too tired to get experimental. Well, just like when the kids were little, I can make a big pot of sauce and modify it through the week I am extremely impressed w the science and technology, that has made gluten free pastas taste and feel like traditional pasta. Something new! I am going to be starting the Fodmap eating plan in order to help me find out what foods are causing certain gut issues with me. I have had issues for a while but since returning to a fully vegan diet last August they have increased. I have been really upset thinking that I would have to change my diet but have been so encouraged by other vegans here on IG following the low fodmap plan with success. Lunch today was summer in a bowl!! Slightly obsessed with @panerabread seasonal strawberry 🍓 poppyseed salad 🥗. Came in handy today because I literally had NO GROCERIES #fail. This week has been crazy busy! I have been trying to “do more” and not let my stomach dictate my decisions. It’s so easy to hide out and feel sorry for myself. I get stuck in a routine that my mind convinces me that I can’t break. It hasn’t been easy, but I am loving this feeling of freedom! .

2 slices low FODMAP bread (like @udisglutenfree White Bread)
1 tsp. garlic-infused olive oil (or other cooking oil)
1 egg
2 tsp. mayonnaise
2 slices cooked bacon
2 tomato slices
2 romaine leaves
.
Toast bread.
Heat oil in a small skillet over medium heat. Once hot, add egg and cover cooking until the desired level of doneness. Remove and set aside.
Spread mayonnaise on each slice of toasted bread. Top with cooked egg, bacon, tomato, and romaine. Slice in half and serve.

Resisted the temptation of a take away tonight and had this with a side of gin AND the most delicious flatbreads in the world from Sainsbury’s in the second photo. The macros for these are 394 F11.8g/C56.8g/P13.4g. They aren’t gluten free or in any way shape or form healthy but they are so good and a much better choice than a takeaway. ✴️roasted veg and chicken with cous cous✴️ *1 large courgette
*1/2 red pepper
*Two handfuls of cherry tomatoes
*Handful of green beans steamed
*6 chicken thighs
*100g couscous *Dried oregano and parsley *Garlic oil
*Juice of half a lemon

I made mine FODMAP safe by having rice instead of cous cous.

I roasted boneless and skinless chicken thighs in garlic oil, lemon juice and oregano and dried parsley for 25 minutes at 180degrees c. If your kids can handle spice then maybe add some dried chilli flakes.

I roasted the chopped veg (left Tom's whole) in garlic oil and oregano for 25 minutes.

Pour in around 200ml boiled water and cover the cous cous. After around 10 minutes fluff it up with a fork. Mix in the steamed beans and roasted veg along with all the cooking oil in the roasting tin and mix together.

✴️roasted veg and chicken with cous cous✴️ *1 large courgette *1/2 red pepper *Two handfuls of cherry tomatoes *Handful of green beans steamed *6 chicken thighs *100g couscous *Dried oregano and parsley *Garlic oil *Juice of half a lemon I made mine FODMAP safe by having rice instead of cous cous. I roasted boneless and skinless chicken thighs in garlic oil, lemon juice and oregano and dried parsley for 25 minutes at 180degrees c. If your kids can handle spice then maybe add some dried chilli flakes. I roasted the chopped veg (left Tom's whole) in garlic oil and oregano for 25 minutes. Pour in around 200ml boiled water and cover the cous cous. After around 10 minutes fluff it up with a fork. Mix in the steamed beans and roasted veg along with all the cooking oil in the roasting tin and mix together. So today I went for my very first colonic treatment. I've wanted to try it for a while, but the thought of the process made me feel self conscious & embarrassed. But the past few weeks my stomach has been super bloated. This week I experienced serious constipation & became so frustrated, I just booked it. I'm so glad I did because I feel the benefit already. It was somewhat uncomfortable and at times created a piercing feeling in my stomach. But already feel fresh and de-bloated! 🤗
I'm now going to start looking into potential IBS diagnosis as it runs in my family already. 4 pcs Chicken Thigh 
¼ cup Casa de Sante Low FODMAP Vegetable Stock
1 Red Bell Pepper 
14 oz Canned Tomatoes 🍅
½ Tsp Paprika 🌶
3 Thyme
1 Tbsp Parsley
1 Salt And Ground Black Pepper
1 Garlic Oil
Casa de Sante Tuscan Herb Seasoning 💕

Cooking Instructions

1. Dry 4 chicken thighs using a paper towel. Season generously with salt and pepper and Casa de Sante Tuscan Herb Seasoning.

2. Add 1 Tbsp garlic oil to a deep skillet. Brown chicken on both sides, about 8 minutes total. Remove from pan and set aside. Drain excess fat from the pan.

3. Deglaze the pan with ¼ cup of Casa de Sante Low FODMAP Vegetable Stock, scraping the bottom of the pan with a wooden spoon.

4. Add 1 cubed bell pepper, 1 can crushed tomatoes, ½ tsp paprika, and 3 sprigs of thyme. Mix well.

5. Return chicken to the pan. Season with salt and pepper, then reduce the heat. Cover and let simmer for about 30 minutes or until chicken is cooked through.

6. Garnish with chopped parsley and serve ☺️
