Tofu is a vegan, complete protein source derived from soy. Sounds healthy right, so then why is there so much of controversy around it?
One of the reasons soy products get a bad wrap is because of the anti-nutrients they contain - this includes;
Trypsin Inhibitors, which as they sound, inhibit trypsin (required for protein digestion).
Phytates, which block vitamin and mineral absorption (particularly calcium, zinc and iron).
and Lectins, which have been found to cause bloating and nausea.
But if you stick to fermented soy products, such as tofu, they are closest to the wholefood and have lower anti-nutrient levels than more processed varieties (such as isolates and concentrates).
In addition, if these anti-nutrients can be mostly inactivated by cooking.
So, like everything else - if you enjoy tofu and other soy products as part of a balanced diet you’re doing just fine.

Fasting all day today...& look what I found at Berkeley Bowl (a Health/Natural Food Store). This is a Probiotic/ Fermented Drink with the LOWEST Sugar I’ve seen. I know if it’s Fermented the Sugar is less than what’s stated on the label, as in the case of Kombucha & Cultured Yogurt. Since I’m Fasting I really want the BEST results & this is only 1 gram of Sugar....it’s not Sweet, well a hint of sweetness. But the Probiotics tho!!! Real Salt is my standby... Gotta Love how it makes you feel! Did you know that olives are #probiotic ? They are packed with #lactobacillus and some yeasts too but of course these populations shift depending on how the ferment is achieved, how the olives are packaged and stored. I am considering studying them as part of my PhD.

I'm sure many of you are familiar with balancing your macros (aka protein/carbohydrates/fat), but as I'm learning through @ntatraining we should also be cognizant about balancing our fats ⚖ and including saturated, monounsaturated, and polyunsaturated into our diets. Fats aren't inherently bad 👿 or good 😇 but we need to make sure they are in BALANCE
Howeverrr, we should AVOID 🚫 all trans, hydrogenated, partially hydrogenated, refined, highly processed vegetable oils 🤮

🍓I know everyone is all about tacos and toast on Tuesdays (me too!) but lately I’m all about waffles since getting a waffle maker. They are really just a pancake in a different shape and I’m a pancake monster after all 😜⠀

Fermented food like sauerkraut is excellent for the gut by providing beneficial bacteria. Now I just have to wait at least a week (sometimes this takes a month 🙀🙀)
