I LOVE berries, they’re packed with the good stuff and a big part of my every day routine! I put them in my smoothie bowls, bake with them and I even chuck them in my water 💦 😝 They’re a staple in my fridge and freezer. I love @oob.organic berry options. Instead of trying to avoid so many “bad” foods, try ADDING IN more foods that make you feel good. Don’t know where to start with those? Start with FIBER like our beloved veggies have. They don’t spike your blood sugar and help keep cravings at bay. 💕

Toasted flatbread, slathered w green tahini dip, fried farm egg, drizzled w green olive dressing ALL from @rosiebellefarm . Making “Magic Chili” from @autoimmunepaleo like its my job. Which I guess it sort of is 😜 Feeling all crazy in this liminal, in-between Spring season so I’m turning to earthy, root vegetables for some grounding energy. It works you guys! It reallllllly works.
🥗This bowl literally took about 20 mins to make! When it comes to meals, I like to keep things simple, quick and REAL FOOD! ⠀⠀⠀⠀⠀⠀⠀
Who has time to slave away in the kitchen most days?!⠀⠀⠀⠀⠀⠀⠀
To make this bowl, I made a simple salad, make what you like in yours, I added fresh cilantro 💚 for extra flavour boost! ⠀⠀⠀⠀⠀⠀⠀
Start with your boneless chicken breasts, choose wisely. I don’t eat chicken often but when I do I look for organic, it will be antibiotic and hormone free. And when you can find it, get pasture raised 👍⠀⠀⠀⠀⠀⠀⠀
Now heat avocado or olive oil in a pan, put in breasts once oil is hot. Season breasts with chilli powder, cayenne, garlic, oregano, smoky paprika and s & p. Let brown briefly, flip and do the same. You don’t want to brown too long as you will be shredding the chicken. Next pour in about an unscheduled and a half of broth, I used vegi. Cover and turn heat to med and simmer for about 15-20 mins.⠀⠀⠀⠀⠀⠀⠀
Once chicken is on its way cooking, start your chipotle refried beans. Heat oil in another pan, through in chopped onion and garlic. Caramelize these. Next pour in about a cup of the broth. Add in chipotle chilli powder, cumin, cayenne, oregano, s & p. Throw in a can of rinsed black beans. Cover and simmer on med low for 5 mins, then add in a tbsp or so of organic tomato paste. Cover and simmer until chicken finished. Once chicken is cooked through, you want to shed it with two forks. Once down shredding, add in a couple tbsp of the tomato paste. Stir and taste to see if flavour is to your liking. Add whatever spices you like! If you still have a lot of broth left let simmer on low to cook off. Now to the means, uncover and mash with a fork, they are ready to go! ⠀⠀⠀⠀⠀⠀⠀
Now build your bowl, throw in the salad, the chicken, the beans, chopped avocado or make guac! Add in hot peppers or olives, whatever you desire! Make it yours! 🙌
