Tuesday is to far away, so I made tacos today!!! Cauliflower, broccoli, carrots, onions, and tri colored peppers seasoned and roasted without oil. Guacamole, hot sauce, and sprouts round out the flavors.
This delicious zucchini ribbon salad is going to be on repeat in our house all summer! So quick, easy, and refreshing!
Just use a veggie peeler to shave zucchini & summer squash into thin ribbons, add halved cherry tomatoes and thinly sliced fresh basil, then toss with a light olive oil/lemon juice/white wine vinegar dressing with minced garlic and some salt & pepper to taste. This took literally 5 minutes to make...and it’s so pretty, to boot!
I had bit of a freak out when I realised that a quarter of this @aldiuk garlic and cheese pizza bread had 0.7g of salt in it, so the man only got a small piece. Needn’t have worried, he snuck it down the side of his high chair and onto the floor. He was only interested in the pasta tonight, ate all this and seconds. He even picked all the bacon out and set it aside so he wouldn’t accidentally eat any, swipe to see his organisational skills....
The peas were put into his bib to have fun with later 😐
The pasta was made by frying bacon, red pepper and mushrooms and then adding 200ml @saykallo low sodium vegetable stock, 120g garlic and herb @lovemyphilly and Italian seasoning and leaving it to bubble while the pasta cooks 👌🏻
Yesterday on my blog i shared over TEN easy and FAST ground beef dinners and some tips for using and freezing ground beef! If you buy it in bulk and freeze it in flat, one pound portions (they fit well in a quart size baggie) it’s super easy to thaw them out and then if you forget to get them out of the freezer, you can still make dinner!
