Some good news. I gave tomatoes another try last night after finding out Allen hadn’t felt well either when I thought I had a reaction to the tomatoes. Maybe we had a stomach bug. So far, so good. Galletas de té matcha y chocolate: 200 gr. de harina (yo usé de espelta) • 50gr. de almendra picada • 4 cucharadas de té matcha (si usáis el de mercadona, son justo 5 sobrecitos) • una pizca de sal • 4 cucharadas de aceite de coco • 4 cucharadas de leche de soja • 5 cucharadas de sirope de agave • canela • nibs de chocolate negro .

👩🏽‍🍳: precalentamos el horno a 180 grados con calor arriba y abajo.
Mezclamos en un bowl la harina, el té, la almendra y la sal. 
En otro mezclamos el aceite de coco, la leche, el sirope y la canela. 
Por último ponemos los nibs de chocolate puro.
Lo juntamos todo y amasamos con las manos, hacemos unas bolitas y aplastamos con las manos húmedas para dar forma a las galletas.
Horneamos durante unos 10 minutos aproximadamente (depende del horno). *Cuidado con comer muchas por la noche, el té matcha tiene bastante teína y puede costaros dormir 😎

I absolutely ADORE oven roasted veggies with nothing more than a drizzle of olive oil and a sprinkle of salt and pepper. E A S Y ! ! ! Crank the oven to 400 degrees F, toss your veg of choice with EVOO, salt and pepper to taste then spread out in an even layer, and roast until you see that gorgeous caramelization happening (approx 30-45 min, depending on what veggie you choose). Serve alongside your favorite protein, chop up and add to quinoa, top a pizza, add to your salad... the options are ENDLESS! What’s your favorite way to enjoy roasted vegetables??? 🍆🍠🍅🥕🌶

When you think about all the actions you need to take to help stop the destruction of our planet, it can be so overwhelming.  Fortunately, these are habit based actions. They seem hard to think about because they aren’t a habit (yet). Pick one action a week and try to figure out how to incorporate it into your daily life. Just trying to get into the habit of taking your reusable bags to the grocery store can have a massive impact. The little things DO add up. Don’t let yourself get overwhelmed by everything!

Happy hump day! I considered taking a boat 🚣 for my commute this morning 😄because we are on day 3 of steady rain ☔️ here in NC. I don’t mind the break from all the pollen and I typically enjoy cozy rainy days. I have another full day of research ahead. 🔬 I’ll get a welcomed lunch break to celebrate one of my friend’s birthday! 🎉 we are going to a Korean restaurant and I’m super excited! 🙌🏻 So, I’m sharing a salad 🥗 I recently enjoyed with roasted veggies (🥦, cauliflower, 🍠 fries, try-color 🥕, and Brussels sprouts), @saffronroadfood sea salt chickpeas, and @rootshummus sriracha mango hummus all over a bed of organic spinach.😋 Have a blessed day! 😊

Last nights dinner turned into a “what’s in the fridge night”. My creation is sautéed broccoli, yellow peppers, brussel sprouts, and crumbled vegetarian burger patties, It is served on top of a slightly toasted flour tortilla that has a layer of red quinoa. Then i topped it with a fried egg (wish I would have broken the yoke for the photo). I topped all of it with a dab of sour cream and a few green onion and red peppers. Both @johnearly  and I thought it turned out pretty darn good. Have to finish off the last of the meat mixture, so it’s another breakfast bowl. It’s pretty similar to yesterday, but has two more ingredients. It’s ground beef, avocados, egg whites, zucchini, yellow squash, onions, and sweet potato all in this really tasty marinara sauce. The sweet potato really gave it a whole different (and yummy) flavor profile. 😋
