This smoothie bowl has a steamed sweet potato as its vase. I mashed it with cardamom, lime zest, cinnamon, microplaned ginger, and some turmeric. The toppings are a mango, white nectarine, plantain, pepitas, flax seed, perilla, chia seed, unsweetened soy yogurt, and blackstrap molasses. I’m so excited to share with you all a fun, exciting and innovative new program I have been assisting woolworths with! Discovery Tours for pre-schools and primary schools! You can book your centre/school in for an educational and fun discovery tour of the fruit and veg section of woolies! And it’s free! This is such a great food education initiative; helping kids learn to love colourful food (in a fun and pressure free environment). I feel honoured to have been involved and excited to see it come to life. .
To launch the program this weekend Woolworths are hosting a Fresh Food Kids Fresh Fair in stores nationwide on Saturday 26th and Sunday 27th May from 11am – 3pm. Head on down to your local woolworths store and join in the free activities for kids to learn, play and try new fruit and vegies. .

1 cup shredded beets
1 cup shredded carrots (I diced mine but shredded is better!)🥕
1 med apple, diced 🍎
1/2 avocado 🥑
Drizzle of lemon juice & olive oil 😋
On my last grocery shop before exams and heading home for summer, I bought the usuals, but also snuck in the largest sweet potato I could find, thinking: this might come in handy as I’m not sure what to make yet! With the minimal ingredients left in the house, a delicious “cheat” fish and sweet potato curry was concocted! “Cheat” because I used a jarred curry sauce 💁🏼♀️. But there’s no shame in that!! * x2 onion, x4 garlic cloves sautéed in enough oil to coat the base of your pan.
* Whole finely chopped red chilli, garam masala, paprika, cumin & ground coriander - to spruce up the sauce with 🔥!
* Once softened & aromatic, add peeled & diced sweet potato - stir well.
* 2 tablespoons of water, stir, lid on & bring to simmer til the potato’s almost cooked.
* Add jarred sauce, stir well, then 2 frozen fish fillets. Any of your choice, @aldiuk ‘s basa is my favourite as it’s so cheap!
* Submerge the fillets in the sauce and bubble til they’re thoroughly cooked.
Using frozen, or fresh, fish in curries or stews does usually make the fish a little mushy or flaked, but it’s still delicious. Yummy served with rice, yoghurt, lime pickle and fresh vegetables. 💜 •’cheat curry’ story highlight•
Another day, another #deconstructed snack. This time it is make your own apple cookies. Just use apple slices as the base and add the toppings of your choice. Here we have natural peanut butter, plain Greek yoghurt, chia seeds, coconut, raspberries, sultanas.
STORY TIME! With a bit of #realtalk 🌱
So, shock horror, I tried no 'carbs' for a week. As you can see from tonight's dinner, that is definitely over.
Trying no carbs was a risk for me as I've battled with disordered eating in the past. Here's what I found:
1) I felt like shit physically. Yeah I lost weight but carbs are essential for energy and i did not feel good dropping them.
2) I felt like shit mentally. I was tired, grouchy and all round miserable
3) I ate way too much of everything else to compensate for my lack of carbs. Protein through the roof, I even ate dark chocolate. I don't really love chocolate and I've never craved it but I found myself craving the oddest things. (Disclaimer: dark chocolate is not bad for you)
So all in all, sod that. No carb is not for me and it hit way too close to home with disordered eating. Back at the carbs my friends 🐷
If you’ve seen my previous post, you should’ve guessed by now that - yes - I froze those extra edamame! And I decided to whip up this quick 15 mins yummilicious vege bowl with what’s left in the fridge. And look at the colours!!! This was so yummy that they boy gobbled down EVERYTHING.
✖️Edamame Vege Stew✖️
> Edamame (steamed)
> Squash (cube)
> purple sweet potato (cubes)
> tomato (a lot, for 1/2 cup of vegetables I use 1 cup of tomato)
> Seasoning (optional): ginger powder, nutritional yeast, pepper. For those who wants a richer taste, add half a teaspoon of organic tomato ketchup!
> put a little oil and stir in tomatoes, squash and sweet potatoes
> cook till tomatoes break apart
> add water to cover vegetables and simmer till soft
> add in seasoning
> add in edamame
> simmer for a few minutes and done!
> serve with Steamed basmati rice!
