Oh yah this dinner was amazing!!!! Chicken bacon ranch casserole ๐Ÿ˜ and you wonโ€™t even believe it but...itโ€™s whole 30 ๐Ÿ™Œ I could eat this every day! Baked together on 400 for an hour: cooked spaghetti squash, 1 pound of cooked ground chicken with bell peppers onions and s&p, 1 jar of @primalkitchenfoods ranch, and 3 eggs topped with about 1/2 pound of bacon ๐Ÿฅ“ Pure heaven!

Working on more natural styling and integrating it into my life versus heavy staging. I made these smoothies for and took this picture in less than 15 minutes (clean up included) and I'm pretty happy with how they turned out! Smoothie ingredients: blueberries, spring mix organic greens, bananas, strawberries, bee pollen, plant protein powder, hemp protein, almond butter & topped with coconut cream, blueberries and fresh rosemary.

I donโ€™t like to waste food so when I have a FAIL in the kitchen I try my hardest to salvage something. So yesterdayโ€™s Anzac cookies are todayโ€™s Anzac slab/bark/pieces/crumble ๐Ÿ˜†and those pieces are being gobbled down by the teens. They also go amazingly well over mandarin poached pears with fresh mandarin, coconut yogurt and vegan chocolate drizzled over the lot. Necessity is the mother of invention lol ๐Ÿ˜œ Breakfast is delicious!! As the Anzacs may have said โ€œbloody ripperโ€!

TIPS FOR QUICKER MEAL PREP- MOMS AND BUSY PEEPS
#1-Plan your meals. Start with some faves and go-to's. Then jump on IG or Pinterest and look for easy, simple meals. I like ones that are "one pan" or throw it all on a baking sheet style. I have my usual style: chicken, broccoli, salmon, but the hub gets tired if those quickly so Pinterest saves my behind! Make sure you are making a list of needed foods/ingredients. I suggest planning 1 week at most at a time. I tend to plan simpler meals and pick maybe 2-3 more complicated meals. I pick lunch/dinner style meals and also plan for each recipe to last for at least 2-3 sittings. So you don't have to cook one recipe per meal. (Hopefully this makes sense) I don't pre plan or pre cook breakfast. I like to cook my breakfast every morning. Or just have yogurt, cold cereal etc.

#1.5- plan snacks. Don't forget when making your shopping list to plan healthy snacks: fruits, easy veggies (carrots, cucumber, snap peas, salad, etc) high protein snacks: Greek yogurt, low-fat cottage cheese, light string cheese, protein bars, nuts etc. 
#2- Shop online! If you have kids like me going shopping is impossible ๐Ÿ˜ฅ I LOVE using Harris teeter online ordering (small fee) or Walmart ordering(free). We literally pick it up the next day. Don't even get the kids out of the car thank the Lord ๐Ÿ™Œ 
#3-Decide cook days. I would suggest cooking 1-2x a week. I tend to do 2x week just because it feels more fresh. Each cook day I can spend around 2 hours in the kitchen but I enjoy it and I don't have to spend that amount of time again till next prep day. 
#4-cook!! ๐Ÿณ๐Ÿ‘ฉโ€๐Ÿณ Plan your cook day when the hub is home, or have the kids help! My girls love to help cooking and we count it as a #homechool activity ๐Ÿ˜€ It's a great opportunity to teach them about quality food, healthy eating, and balanced eating.

I got thrown for a loop in the store - I was planning on salads 2๏ธโƒฃ ways for dinner, but apparently there was some sort of hepatitis outbreak??? So, weโ€™re a salad free household this week! LUNCH ๐Ÿฅฆ Chicken, broccoli & rice ๐Ÿ‘‰๐Ÿผ keeping it simple. ๐Ÿ Pasta & homemade meat sauce ๐Ÿ‘‰๐Ÿผ likely with a side of frozen broccoli. . This nicecream tower was, as always, 100% vegan, plant-based, gluten-free,  refined sugar-free,  cruelty-free,  dairy-free,  high in protein, and DELICIOUS. With a delicious little strawberry because earth is ALL colors. Being cruelty-free also applies to our planet. This is our home- we must treat it with love and respect, so that it may continue to thrive, just as we must.

First time roasting chicken in my cast Iron skillet. 
The best part is the skin is super crispy so this will be a delicious addition to my weekly meal preps. 
This was super easy. Put some lemons inside and made a mixture of herbs, lemon zest and mayo and rubbed it in the outside of the bird. Cooked it at 375 for 1 hr 15 min. .

๐ŸŒ Use reusable bags. We love @bumkinsbaby and @stasherbag to name a few. ๐Ÿ‘Œ๐Ÿป Going shopping?! - Use reusable grocery bags . Groceries just look better in those pretty bags (and they donโ€™t rip or tear! ๐Ÿ™Œ๐Ÿป)
๐ŸŒ Carry with you, and use a reusable water bottle. My fave is from @lifefactory. ๐Ÿ’ฆ
๐ŸŒ Shop locally. Get your produce (and more!) at your local farmerโ€™s market to reduce purchases on packaged foods (and support local friends! ๐Ÿ‘ฉ๐Ÿผโ€๐ŸŒพ)
๐ŸŒ Pack lunches for your kids (and yourself, if you take one) in an eco-friendly way. Use a lunch box like an @omielifeinc box or @planetbox, use reusable pouches from @squeasygear and so on. Ditch plastic/ throw away utensils for ones you can use again and again, like the fork shown here from @delightflatware.

What better thing to do with questionable arugula that I forgot about in the back of the fridge than make Angela @barerootgirl's arugula pesto?!?

Arugula is high in nitrates which may have beneficial effects on athletic performance. One study done using beets (which also have a high nitrate content) showed an almost 3% improvement (11 seconds) in a 4km bike time trial, and a 45 second improvement in a 16km bike time trial.

You can find the recipe on her Instagram feed. I used pistachios instead of pine nuts and apple cider vinegar instead of red wine vinegar (because those were the things I had!).

Happy day late #selfieupdatesaturday everyone! As today is earth day - about all things natural - I figured I would talk about something kinda awesome and about living more authentically๐Ÿ‘ Some of you may have noticed that I changed my bio from โ€œanorexia recoveryโ€ to โ€œanorexia recoveredโ€. In all honesty, Iโ€™ve been separate from my ED for quite a while, so this change is more nominal than actual, but it is a pretty huge step. I know that eating disorders are secretive, competitive, and manipulative, so there is a drive to be sicker than those around you. We get stuck in labels and forget that there is life outside of โ€œhaving an eating disorderโ€๐Ÿคฆ๐Ÿปโ€โ™€๏ธ However, I talked with some lovely friends over this past week and I have come to realize that my eating disorder hasnโ€™t been a part of my life in months, so I donโ€™t need to claim that space๐Ÿ˜ I obviously still have things I work on (both in therapy and on my own), but, as my therapist pointed out, there is no need to hold onto that label. If anything, I can replace it with something else that better defines me, like: compassionate friend๐Ÿ‘ญ or curious student๐Ÿ‘ฉโ€๐ŸŽ“ or, as the 5 year old I watch says, โ€œthe best babysitter ever!!!โ€ Iโ€™m heading off to college in a few months and I have no doubt that he transition will be hard, but Iโ€™m at a place now where my medical team isnโ€™t worried about relapse because I have coping healthy mechanisms ๐Ÿง  I have been living my life on my own terms, cherishing these last few days of high school, and really getting to know my peers and teachers. Iโ€™m not usually one to compliment myself (or acknowledge positive qualities at all really...), but I want to give myself a pat on the back for having overcome something this challengingโ˜บ๏ธ
And so, I am posting this to show that it is possible. There is life outside of an eating disorder, even when you can see it๐Ÿ’™

So I was back to my old tricks of cooking for a small village over the weekend!

I tend to always over cater, but it means that one cook up can last 3 to 4 meals which I always appreciate. I just couldn't help myself though when there was such a great array of vegetables and colours to choose from, and I just didn't want any of them to feel left out ;) My timing was great though as we have a busy week ahead including 3 events this week in Brisbane. 
Haven't made it along to one of these events yet? Now might be a great time to see if the dates and times suit. We have also planned to be back in Brisbane West in June and have a string of dates set out for the rest of the year. Already been along? Oats & green smoothie to start the day. .
Yesterday Teo ate really healthy food in the morning at home but I always struggle to feed him when we are out at BBQs. .
He isn't into eating vegetarian sausages - I think he thinks they're too like meat. So he just ate a plain wrap & a chocolate cookie someone else gave him ๐Ÿ™„

I made a tasting plate of carrot & cucumber etc. but he was too busy with the other kids to eat it. Harley also was given a slice of white bread by someone & this is what he ate ๐Ÿ˜ฌ

Some meal prep is better than none at all! I've got breakfast sorted for the week for Ryan and I. He likes savoury so I made broccoli and egg muffins. I like sweet so I made myself an apple cinnamon oatmeal bake. I also washed and chopped veggies.
