Bam! Vegan diet isn’t going so well. I’ve faltered too much. I like pescatarian the best. I’ve only had one egg in 2 weeks, cheese maybe twice, and some meats on the weekends. Not quite dedicated, but damn doesn’t this look good? It tasted amazing too. If you eat foods the color of the rainbow, you can never go wrong. Going to make chia sprouts this week. 😋 Race on Friday with my boyfriend. 👟
Sometimes you throw a bunch of stuff in a pan and hope for the best. As much as I miss being industry I truly do not miss being out still at an hour when I’m normally waking up. Meal prep hack: chop up mixed veggies ahead of time for quick and colorful dishes all week. You can keep them separate for mix-and-match options, or you can combine them. Use in salads, toppings for grain bowls, or a simple side.
Here, I mixed:
💜 purple cabbage
🌶 red pepper
(Added a side of lemon chicken, of course 😋)
Tossed all of these ingredients together in a bowl and mixed into greens as needed for salads this week. (I find that this keeps my greens crispier than mixing the whole thing together ahead of time.) 🤓☝️🌈🌟

Happy birthday to ... we'll, anyone born on the 18th Wednesday (not me! 🙊) but why need an excuse?? I'm feeling flat this week due to nursing a broken rib, being a bit homesick, and as a result am craving rebellion! 😈 However, knowing my stomach would make me pay for an indiscretion, I've turned to a higher power. Sure, the big man upstairs but I was also referring to my gorgeous gal pal lifesavers over @panaceas_pantry 🙌⠀
I’ve been playing around with this chocolate, cardamom and macadamia/peanut butter cake (adapted), and I think it’s pretty much perfect. Cardamom is fast becoming one of my favourite spices to cook with, and effectively one of my favourite to eat. I love it paired with rose, chocolate, tea, carrot and any nut so far, and these is just no telling how far this love affair will travel. Did you know in India it's not uncommon for people to chew on cardamom pods post dinner as a natural digestive aid?? Love me some Ayuverdic tactics for the belly! 💜 ⠀
Enough talking, here's the good stuff (adapted recipe) 😘⠀
DRY MIX 👇⠀
180g gluten-free plain flour⠀
50 g cacao powder⠀
2 tsp baking powder⠀
1/4 tsp salt⠀
100g coconut sugar⠀
1 tsp ground cardamom⠀
WET MIX 👇⠀
1 cup creamy plant-based milk (I like soy protein or macadamia)⠀
1/3 cup hulled macadamia or smooth peanut butter⠀
1/3 cup extra virgin olive oil⠀
1/4 cup rice malt syrup⠀
1 tsp pure vanilla extract⠀
1. Preheat oven to 180 degrees C. Prepare two 8” cake pans (lined/greased, depending on you pans)⠀
2. In a large mixing bowl, shift in dry mix ingredients. Mix well until completely uniform⠀
3. Pour wet indgredients into the mixing bowl, and mix to combine. Spread the batter between the two pans evenly, then bake for 18-21 mins (to test, insert a skewer). Once cooked, remove from the oven and allow to cool for 10 mins before turning onto a wire rack.⠀
Once the cake has completely cooled, finish with a vegan chocolate ganache, whipped coconut cream or simply coconut yoghurt and berries. You could even mix some cacao with your remaining nut/seed butter 🍫⠀

Acum ca s-a terminat Pastele putem sa revenim la vechile noastre obiceiuri sanatoase, nu-i asa?
Eu deja mi-am facut meniul pentru toata saptamana, abia astept sa-mi prepar supele crema si mancaricile de legume, usoare si vitaminizante, ca prea am dat iama prin dulciuri si bucate traditionale. Voi ce mancaruri usoare preferati dupa sarbatori?
Azi la pranz am avut in vizita o prietena care nu este vegana insa careia ii place sa manance gustos si sanatos. Am vrut sa o surprind asa ca i-am pregatit niste sandwich-uri 🍔savuroase din chifla cu seminte trasa la toaster, hummus clasic, somon crud marinat de mine, avocado si fasii subtiri de castravete🥒. N-a fost nevoie de nici un dressing intrucat toate ingredientele au fost suculente: MEGA gustoase!!!!
Va las mai jos reteta de hummus:
ai nevoie de:
500gr naut FIERT (sau 2 conserve)
2 ling ulei de masline
3-4 ling apa
5 lingurite generoase pasta tahini (eu am facut-o dupa reteta Jamilei)
2-3 lg suc de lamaie
1 lingurita rasa sare
3 catei de usturoi
Mixati la robot toate ingredientele si potriviti de sare. La aceasta combinatie de baza, eu pot adauga si alte condimente ca: turmeric, paprica, nucsoara, oregano etc Nu va fie frica sa experimentati. Pe linga proprietatile antioxidante, condimentele mai sunt si antibacteriene, nu degeaba asiaticii mananca mancare din strada, pastrata in conditii urite insa fiind foarte condimentata, bacteriile nu se prea dezvolta in ea. Go for spicy!
Today I had a friend for lunch time! She's not vegan but she likes eating tasty and healthy. I tried to please her so I've prepared this plate with salmon sandwiches 🍔and avocado. They were super mega delicious. I've used: toasted seed buns, classic hummus, cucumber🥒 slices, raw marinated salmon and avocado. No dressing was needed as all the ingredients were juicy enough to create THAT awesome taste!
