A delicious collaboration with @harrisfarmmarkets my favourite soulful chicken soup made with lots of veggies, garlic, turmeric, onion and a whole chicken, slowly cooked in the oven on low, 2h15 later you have chicken which decadently falls off the bone. Serve with some quinoa, noodles or rice and lots of fresh herbs and a squeeze of lime. Soup designed as a flu-buster and immune booster.

For this pizza I drizzled #evoo on the #pitabread and then topped with #sauteedspinach #artichokehearts #sundriedtomatoes #garlicpepperchicken #fetacheese and a sprinkle of #mozzarellacheese

Bake in oven on cookie sheet at 425 degrees until edges of crust are slightly browned. Enjoy!

Earlier today on my stories, I said that I would post all the meals I ate today. Why today?? Because today I worked overtime which means I had my normal shift and OT... therefore I worked from 6:30 am - 7:00 pm. 12 1/2 hours. Sometimes days like this are really challenging. Being prepared is the best thing I can do and I always try to pack more just in case I’m hungry. I ate breakfast at 5:50 am. I’m one of those people who eats when I get up because I’ve made it such a habit to eat a good breakfast in the morning. I had 2 clementines or tangerines 🍊 🤷‍♀️ at about 9:00 am. I ate my lunch around noon. I had the salad at 1:45 (this is when I was feeling hungry and snacky). I ate my apples at the time I normally do - on my break which was at 5:15ish. And then when I came home we cooked breakfast for dinner and I ate that at around 8:00 pm. Also, I packed a premier protein shake as well in case I needed it. Normally, I’m not eating so early in the morning and my food intake isn’t so spread out, but basically I ate every time I had a break today. It seems like a lot but eating at every break during my shift helps me. As many of you know, I went vegan at the end of October of last year, just for a week to see how I felt. And the results were OUT OF THIS WORLD! I was sleeping better, was waking rested and had more energy throughout the day. So I kept at it. I'm a bad vegan, because around Christmas and NY I was at about 95% vegan and since then have gone to maybe 65% vegan. And...I've felt it. I started feeling yucky again. This week I decided to be a good vegan and be as diligent as I could and I've been at least 99% if not 100% plant based and I'm feeling SO MUCH better again!! I know people think being vegan is extreme and limiting, but it is SO not!!! Have you seen my food pictures?!?!?! Have you ever considered giving a plant based diet a try? Just give it a week!

I love volume eating with fruits & veggies as I find you get much more "bang for your buck" ie: A lot more good for generally less calories 👌🏼 Don't get me wrong, I still eat chocolate & treats occasionally but the majority of the time, I prefer more volume because; it helps with satiety (the feeling of fullness), reduces feelings of deprivation associated with calorie reductions (as you feel full & content) and leads to greater amount of vitamins, minerals & antioxidants in your diet 😎⠀
