It was the first time I realized I could make a vegan and gluten-free cake mixture using only whole food ingredients, and it made me proud! I seriously can’t get enough of eggs. Ever since I stopped being vegan, it’s all I want to eat. Not only are eggs, delicious but a great source of protein, fats, vitamins and minerals. Just one egg contains 6% of Vitamin A recommended daily allowance (RDA). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
This meal right here is as simple as it looks. Two fried eggs, turkey bacon, heirloom tomatoes glazed with balsamic vinegar & topped with goat cheese, pea sprouts & lastly, sauerkraut 🤤 .
I loved this very bright bright line meal! Lentils my sweetie made that I added steamed veggies to, red kraut over julienned basil 🌿, oranges 🍊 and 🍉 watermelon and some walnuts and cacao nibs. Since I don’t have outdoor seating at home I threw down this towel on the cement porch so I could eat in the sun. A more proper picnic is surely in my backyard’s future. 🍽
