Greek Burgers with Spinach, Feta, and Sun-Dried Tomatoes
These healthy Greek burgers are made using ground beef mixed with spinach, feta, and sun-dried tomatoes, plus drizzled with a delicious tzatziki sauce.

Servings 4 servings

For burger patties:
1 pound ground beef
5 ounces fresh baby spinach leaves chopped
2 ounces crumbled feta cheese
1/3 cup chopped sun-dried tomatoes
1/2 teaspoon salt
For buns and toppings:
4 whole-wheat sandwich buns
1 ounce fresh spinach leaves
1 to mato sliced
1 small shallot sliced
1/4 cup tzatziki sauce
Combine and mix together all burger patty ingredients in a bowl.
Form into 4 patties. Refrigerate patties for at least 1 hour to harden.
Heat a pan over medium heat, or use a grill. Working in batches, drizzle the inside faces of the buns with a bit of cooking oil and place them face down on the pan. Cook until toasted, a few minutes. Transfer to a serving plate.
Increase to medium-high heat or keep at medium heat to lessen the amount of smoke (it will just take longer to cook). Drizzle cooking oil over the pan. Working in batches, cook the patties until charred on both sides and the internal temperature reaches 160 F, flipping occasionally. Add more oil if the pan gets dry.
Assemble the burgers by distributing the meat and toppings among the buns. Serve hot.

Most days I completely forget he has #downsyndrome , it isn’t something that I put a lot or any thought into. But every once in a while it slaps me in my face and takes my breath away. Not because it’s a bad thing in any way, but because it brings some realities that can be tough to face. This week we met with a lawyer. Although my parents are in good health they are getting older and no time is promised. We spent an hour talking about wills, inheritance, special needs trust, medical directives and guardianship. Along with all the normal emotions that come with that kind of planning comes the necessary “evil” of guardianship. I understand it and the need for it I really do but it hurts. Using words like incompetent, unable, incapable. They are words I hate to associate with him. They have their legal place I get that but they don’t belong in descriptions of him. I plan to write a blog post about this process but tonight...tonight I just want to pretend that we don’t have to stand in front of a judge and say those words. It’s just a reminder that parts of life are hard but I wouldn’t trade a moment of life with him. I mean come on, that smile??? #downsyndromeawareness#downsyndromerocks#theluckyfew#nothingdownaboutit
What a perfect day to make a vision board dream become a reality. @swimsproutllc changed our little guy’s life... he has Down syndrome, we live in Florida ☀️, around so much 💦 ... @heidi_burnett gave him fins!! J loves the water and keeping him safe was a priority. After our first season with swim sprouts 🏊♂️, I knew that I wanted to give a scholarship for someone who couldn’t otherwise afford these survival skills. I said that when I hit diamond 💎 I was giving Heidi a check.... today this became reality! Thank you @heidi_burnett for believing and empowering our little guy with skills..... he has definitely “sprouted his fins”.
