Had some time to make myself breakfast this morning so I finally made sweet potato toasts and topped them with mashed avocado, ✌️fried eggs, smoked salmon and fresh dill 🌱 How I made the toast 👇
Heat over to 425. Slice the sweet potato to the thickness you desire. You’ll need a good knife for this! Spray a baking sheet with oil then lay the sweet potato toasts in a single layer. Spray the toasts with oil and sprinkle with pink Himalayan salt. Bake for 20 minutes, flipping halfway through. Broil on low for several minutes till browned 👩🏼🍳#jensbowl

1 medium fennel bulbs,diced, green fronds reserved for garnish
1 branch of celer,chopped
2-3 garlic cloves,chopped
2 large patatoes, peeled and diced
Salt and pepper, to taste
6 cups vegetable stock or water
dill for garnish
In a oven over medium heat, warm 1 Tbs. of the olive oil. Add the fennel and celer, garlic and cook, stirring occasionally, until tender, 8 to 10 minutes. Add the diced patatoes and season with salt and pepper. Cook, stirring occasionally, until fragrant, about 2 minutes. Add the stock and bring to a boil, then reduce the heat to medium-low and simmer, uncovered, for 30 minutes. Seasoning with salt and pepper.

Having a garden and moving through the seasons of planning, sowing, weeding and harvesting has been a large part of what brought my husband and I together originally.
When we moved to our farm in Sebastopol California we focused on the animals first and were without a garden for a few years. Now that the chickens are dialed in with proper infrastructure and pasture we have turned our attention to our garden and it feels SO GOOD! .
The ability to have fresh food that the kids can scamper about and forage is a blessing. Everyday at dusk I try to slow down and take a deep conscious breath in, savoring these moments because I recognize they are truly precious.
