Phonomenon on Washington Street. The first time here and also, the FIRST time eating pho! I started with the Sugarcane shrimp โ€œcorn dogโ€ or Chao Tom. Golden battered shrimp with sugar cane quills. With shredded lettuce and nuac cham sauce. Then main event, Pho thit nuong with grilled pork.

I did ask how to eat it as I wanted to do the delicious broth justice by not throwing condiments in it right away. This was a truly a culinary adventure. The grilled pork was tender, with bits of fat on some of the pieces. The broth was beefy and played well with the hoisin, siracha, and lime. Bean sprouts and basil also accented this again delicious broth. ++++++++++++++++++++++
I'm glad I had the opportunity to grab a perfect meal on a chilly night like tonight.

We walk into this place called Menya Yukikaze Susukino Honten (Sapporo) and the place is way hotter than it is outside. We all sit down, and we are given one menu with two bowls of Shio and two Miso (there is also a menu item called Jew-ear not sure what that is). Got some Gyoza which was really great.

Just after the sweating starts, @serenareisner orders the Kara Miso ramen and I get the Noukou ramen. I taste mine and quickly switch with her (she liked mine more I guess).

The ramen is so hot. The layer of fat on top contains the heat within the bowl, mostly generated from a wok (ground pork, miso, fat, and broth are cooked in wok). The noodles lift the soup up perfectly which is just so decadent. The aftertaste of the broth is amazing. You get flavors of Sichuan peppercorns and tarragon (a little bit) and the porky base of the broth gives the soup a foie gras essence as well. THIS IS THE BEST BOWL OF RAMEN I HAVE EVER HAD!

Got the Rich flavor Miso Shrimp ramen at Ebisoba Ichigen (that is how you order it) and was amazed. Thought it would have the flavor of old dried shrimp but it had a really nice oceanic flavor that didn't have too much depth. The pork broth that was mixed in made the flavor a bit more subtle but also gave a wonderful roasted porky flavor! I totally recommend it if you will ever be in Sapporo!

Glad to see @hide_ra1223 Chef Kawahara San at his new shop in the Odaiba Seaside Park! His Hakata Style ramen is killer! He is the chef behind Totto Ramen and Hide-chan Ramen (two of my favorites) and he is such an inspiration.

I tried the regular ramen with Ajitama and Pork shoulder, the tofu noodles, and the cabbage noodles. The broth was almost reminiscent of Foie Gras, but still very porky. The tofu noodles and the cabbage noodles also had a texture that picked up the broth well!

The first bowl is their Tunakotsu. This bowl was super light! It tasted like my dashi, but with a saffron undertone: maybe from the tuna?

The next is a bacon and egg. Perfect noodles for the sauce, which is great when the egg is mixed with the smoky bacon.

The third is their shoyu with Mackerel on top. They are a seafood based ramen shop and their fish is excellent! The broth was so delicate and clean, and the mackerel was very flaky. Tasted more like a Shio though

The last was the one I ordered. It is a miso ankimo ramen. There were pieces of clam on top which was a nice addition, and the pieces of monkfish liver added an interesting texture. The seafood flavor did come through a bit, but the creaminess just added so much

Crab and Pork soup dumplings at Nan Xiang in flushing. These might be the best on the east coast considering that there is no din tai fung here. The crab adds a crazy amount of oceanic flavor! So fresh, cooked well, but still not too light or heavy with the broth

On Saturday I had the best Saimin ever. To be honest. I really don't like Saimin in the mainland states. We did not get to try it in Hawaii where I'm sure it is great, but usually in NYC it seems very bland, almost like there are no layers of umami and just one flat broth. .

However, this was extremely smoky, sweet, and oceanic. The pork is wonderful and even though there is a lot of fat, it adds well to the well crafted bowl. .

This is not a Tonkotsu even though it is emulsified and thick. As I was talking with @chefnakamura , I learned it is a method that involves a lot of pork belly - boiled to make this beautiful, deep bodied broth. Surprisingly the thick and straight noodles are not too heavy, and they have a wonderful flavor. .

Long lines, great ramen, and refreshing @teaandmilkny in Astoria today at the Japan Festival and Ramen Contest! . . Top: Yume Wo Katare's Maze-Soba was full of salty and smoky shrimp mayo, maybe one of the best mazemens I've tried . . Middle: Kachofugetsu's shrimp won ton ramen had very good shrimp dumplings, and a porky broth which was a bit bitter. . . Bottom: Masamune's shio ramen was a smoky, salty, and umami broth that I waited for an hour to try. I had the Masaru's Cha Cha Cha ramen, which is very similar to a silky Kyushu Tonkotsu, with thin noodles and melty pork chashu - made by chef Masa at @brooklynramennyc 
I also had the Com Gร  from @birdseyeviet , topped with cured egg! It was full of so much umami and wonderful succulent sous vide chicken! 
A big thanks to both vendors, who each get two thumbs up!!!

The Kyushu Tonkotsu ramen at this month's @ramenlab is one of the most deep and velvety broths I have ever had, with so many layers of flavor! You can taste the 30 hours that it is cooked for and it pairs well with a thick and chewy noodle! Get this killer bowl before it goes away at the end of march! .

Here is my special Tan Tan Ramen that I'm working on. Tan Tan ramen is a sesame based ramen I that I learned about a year ago from Gomaichi-San @ramenlab . I grind up sesame seeds and make sauce very similar to Tahini, and I use it as the base with chicken and pork stock. The best clam based ramen I have ever had can be found in Astoria, Queens @shuya_cafe_de_ramen . It is so clean and light and it has a light tang and sweetness from the clam that is just so crazy and awesome.
