FRENCH TOAST CINNAMON ROLL CUPS
These ooey gooey french toast cinnamon roll cups are a portable mashup of french toast and cinnamon rolls. They are made from whole wheat sliced bread (no yeast or bread dough!) and come together in just 30 minutes!
Serves: 12 cups
For the sauce:
½ cup brown sugar, packed into cup firmly
¼ cup butter
1 tablespoon honey
¼ cup Blue Diamond Lightly Salted Almonds, chopped finely
2 teaspoons water
For the buns:
12 pieces whole wheat bread
3 teaspoons cinnamon
3 teaspoons vanilla
dash of nutmeg (optional)
½ cup Blue Diamond Lightly Salted Almonds, chopped finely
¼ cup butter, small diced
Preheat oven to 350 degrees.
In a small saucepan heat brown sugar, butter, honey, and almonds until melted. Add water 1 teaspoon at a time to loosen sauce (can add additional if needed). Boil while whisking constantly for 2 minutes.
Line cupcake pan with 12 cupcake liners (use foil liners if you don't want to have to clean up pan as much, the sauce will leak through paper liners) or spray thoroughly with non-stick spray.
Reserving half the sauce for topping the cups, spoon in the sauce to the bottom of liners.
Cut crusts off of bread and slice in half lengthwise.
Whisk eggs with cinnamon, vanilla, and nutmeg (optional). Arrange cupcake pan, almonds and butter for easy access for assembly.
Dip 2 slices of bread (2 "slices" equal 1 full piece of bread) into egg mixture and place on cutting board. Top each slice with almonds and 2 small dices of butter. Roll the first slice into a tight coil. Then wrap the second slice around the coil and transfer to the cupcake pan. Repeat with all remaining slices.
Bake for 15 minutes.
Top with remaining sauce and serve warm.

BROWNIES IN A JAR
These Brownies in a Jar are one of our favorite easy gifts to make for friends and coworkers!
Serves: 9 servings
For the jar:
1 pint-sized mason jar
⅔ cup packed all-purpose flour
¼ cup packed brown sugar
⅓ cup sugar
2 teaspoon baking powder
¼ teaspoon salt
⅔ cup cocoa powder
¼ cup chocolate chips
¼ cup nuts and dried fruit
twine, burlap, blank gift tag
For the recipe:
4 tbsp butter, softened
¼ tsp vanilla
1 tbsp strong coffee or hot water
Start with a clean dry pint-sized mason jar.
Added flour and lightly packed it down.
Added next layer of brown sugar, lightly packing that layer down
Mix white sugar, baking powder and salt together and add as the next layer. Pack the layer down lightly.
Add cocoa powder as the next layer, pack down lightly.
Add chocolate chips, nuts, and dried fruit.
Close mason jar with lid tightly. Finish with burlap cloth and twine.
To decorate, fill out name tag and direction for baking, attach to jar with twine and enjoy!
Preheat oven to 350 degrees.
Dump dry ingredients out of the jar into a large mixing bowl.
Add butter, egg, vanilla, and coffee or hot water.
Place in a greased loaf pan.
Bake for 12-15 minutes.

Well, this boozy Irish cream chai latte literally will make you warm and fuzzy inside! We paired a shot of whiskey and a shot of Irish cream with our drink base to bump up the warming sensations.

RIP to the great banana pudding at Virdinski’s in Amarillo. In 2015 Daniel Vaughn ranked them as his favorite banana pudding. Unfortunately, Virdinski’s and some of the other banana puddings on that list are no longer available. Maybe if we all ask @bbqsnob really nicely he’ll make a new list!

I just shredded two store-bought rotisserie chickens in a yummy sauce of fire roasted tomatoes and chipotles in adobo🌶✨. VANILLA PANNA COTTA WITH BLUEBERRY LEMON SAUCE
These mini vanilla bean Panna cotta’s are just the right size for party desserts or pack them up for a picnic! The blueberry lemon sauce finishes it just right.
Serves: 6 servings
1 tablespoon powdered unflavored gelatin
4 tablespoons warm water
1 cups Nancy’s Organic Whole Milk Yogurt
1 cups whipping cream
Pinch of salt
½ cup sugar
1 teaspoon vanilla bean paste or ½ a vanilla bean
½ pint blueberries
¼ cup sugar
½ tablespoon fresh lemon juice
Zest of lemon
Sprinkle gelatin over water. Let soften 5 minutes.
Warm cream gently and add sugar and salt until dissolved about 5-7 minutes.
Add gelatin to warm cream. Stir to dissolve. Allow cooling to a comfortable temperature (this prevents the probiotics from dying in the yogurt). Gradually whisk cream into yogurt. Add vanilla bean paste or scrape half a vanilla bean into the cream.
Place 6 small ramekins on baking sheet, (if planning to unmold the Panna cottas once set, lightly coat with unflavored oil). Pour in cream mixture, cover and refrigerate overnight.
Combine sugar, blueberries, and lemon juice, cook until softened. Bring to boil and cook over medium heat for 10-15 minutes until thickened.
Cool to room temperature and serve over pannacotta with fresh lemon zest
I hope you’re having a sweet Sunday. I had bold ambitions to make strawberry jam like the pioneer wife I aspire to be but was intimidated by the thought of botulism. I have many cooking strengths but venturing on to this uncharted territory felt a bit too precarious. It got me thinking about motherhood and fragility. As soon as you see those lines on that test, all of of the sudden the risks you would take for yourself transfer to this tiny person whom you have a visceral, biological need to protect. Sometimes all I see are sharp edges and threats to her survival. I remember the first time I left the house without her paralyzed simultaneously by the fear of what might happen to her without me and what might happen to her if something happened to me. I’m entering a new chapter though. One where we feel less raw and exposed. I see her thriving today on her nine month birthday and feel a sense of accomplishment. “We’re doing it,” I whispered almost breathlessly to myself this morning. We’re parents. I don’t feel like an imposter anymore or like I’m waiting to deserve the title of her mama. I’m the one her eyes light up for and the shoulder she wants to cry on when she takes a tumble. And tumbles happen. Accidents happen. But she’s less fragile now and so are we. It’s truly the sweet life being her mama.
ORANGE SMOOTHIE BOWL

½ cup coconut water
3 oranges peeled
1/2 cup yogurt
1 teaspoon turmeric powder
1/2 inch piece of ginger peeled and minced finely
Add the coconut water, oranges, banana, yogurt, turmeric powder and ginger to the blender. Starting the blender at a low speed, blend until smooth. If needed gradually increase to higher speeds and blend until smooth.
Sanbeiji 三杯鷄 is translated to Three-Cup Chicken. It is a popular Taiwanese dish originating from Jiangxi Province in Southern China. The dish shares similarities to Hakka-style preparations.
The dish is made by cooking the chicken in a cup of sesame oil, soy sauce and rice wine. However, this recipe has been minimized to serve 4 people rather than a huge group. The chicken is cooked with soy sauce, sesame oil, and rice wine with the addition of sugar, ginger, garlic, and basil in a earthenware pot on high heat for 10 minutes, and then braised slowly on low heat. Resulting in a fragrant, savory-spiced and slightly sweet sauce. The chicken is often served sizzling with steamed rice.
