Well I went to Tea Villa Cafe the other day & saw Avocado & Feta on toast on their menu! Much to my disappointment they were not serving it. But the thought of it never left my mind.
So here it is my take on Smashed Avocado & Feta on Rye toast & served it with a side of roquette & soft boiled quail eggs.
The trick is getting the most ripe yummy avocado and rest takes no more than minutes!
I got nice ripe avocados and rye & onion bread from @naturesbasket and also got @dairycraft Feta cheese to crumble on top. Served it on my favourite wooden @mujiindia plate!
I like spice so topped it with sliced red chillies.

Avocado Salsa Grilled Chicken😍 ~
1/4 cup fresh lemon juice
1/4 cup raw honey
4 fresh cloves garlic, minced
2 Tbsp avocado oil, or olive oil
sea salt and pepper to your taste
4 boneless skinless chicken breasts (about 1.5 lbs.) 4 slices mozzarella, or swiss cheese (optional)
1 large ripe avocado, diced
2 medium tomatoes, diced
a small handful of fresh chopped basil, or cilantro .
In a medium glass bowl whisk the honey, lemon juice, garlic, oil, sea salt and pepper. Add the chicken, combine and coat well.
Marinate, refrigerated for about 30 minutes.
In a small bowl make the avocado salsa. Add in the diced avocado, tomato, basil and salt and pepper to taste. Set aside.
Heat the grill to medium high heat. Grill the chicken on each side for about 5-6 minutes or until cooked throughout and tender.
Immediately top with mozzarella cheese and salsa. Enjoy!
Avokado Salsa Izgara Chicken😍 ~
1/4 fincan taze limon suyu
1/4 bardak çiğ bal
4 taze diş sarımsak, kıyılmış
2 yemek kaşığı avokado yağı veya zeytinyağı
tadı için deniz tuzu ve biberi
4 kemiksiz derisiz tavuk göğsü (yaklaşık 1.5 lbs.) 4 dilim mozzarella veya İsviçre peyniri (isteğe bağlı)
1 büyük olgun avokado, doğranmış
2 orta boy domates, doğranmış
küçük bir avuç taze doğranmış fesleğen, veya kişniş.
Bir orta cam kasede bal, limon suyu, sarımsak, yağ, deniz tuzu ve karabiber çırpın. Tavuğu ekleyin, iyice birleştirin ve kaplayın.
Marine, yaklaşık 30 dakika soğutuldu.
Küçük bir kasede avokado salsa yapın. Doğranmış avokado, domates, fesleğen ve tuz ve karabiberleri tadın. Kenara koyun.
Izgarayı orta yüksek ısıya ısıtın. Tavuğu her iki tarafa 5-6 dakika kadar veya pişirilene kadar piş

So this is on today (or tomorrow?) The best in the world in China. The Tasmania Pantry is a finalist in the 'local cuisine' category wish me luck! Tough competition with 21 other countries in this category, but Tasmania really does have the best local produce! I'm happy enough with winning the national category anyway. One day I'll go, hopefully I get another chance to attend, I hope the last 2 years were not my only chance!!! #gourmandworldcookbookawards
It's a perfect evening to dine al fresco. Grilled chicken wrap with avocado, red onion, tomato, and melted cheddar, slightly toasted. A steamed artichoke served with garlic butter and cracked peppercorn. Completed with a bit of sweetness from fresh strawberries and a blueberry Arnold Palmer.

This salad is perfect for those long weekdays when you want to finish cooking and eating in the shortest possible time.
Yes to those who are master cooks this recipe might be too simple or boring but for me its just a simple way to spend minimal time yet eat a healthy meal!
Healthy food need not be boring food. It can be tasty & healthy all at once.
