Hello everyone!!! I would like to share with you an incident that happend to us: Last night as I was scrolling down in our IG account I came across one of our follower’s post “The Mafflin House” a “restaurant” from GA. They posted several pictures of “their food” only to find out that they had one of our pictures which was the Chaufa de Carne, which i commented on by saying “nice repost of our Chaufa de Carne”. This morning I went back on it to see if they had replied to my comment, but to my surprise I had been blocked from their page. It didnt feel right, so I decided to check their Facebook page, and guess what???!! Not only did they had stolen 1 picture but most of our pictures from our instagram page claiming to be theirs. As you will be able to see below, I asked them to take them down. They did ended up taking down all of our pictures, but this place does not lack only integrity but intelligence too. Someone by the name of “Stephen Mifflin” (what a coinsidence right?!!) decided to write up a nasty false review about us. To our surprise there was not only one but 2 nasty reviews which both claimed that they tried our food when in town. As you can see these people are furious that I made them take down our pictures and showed everyone the kind of “restaurant” they are. I urge our customers to please support us and give us a review that we deserve. El año 2014 iniciamos una investigación, con la finalidad de rescatar las tradiciones entomofagicas pre hispánicas de las comunidades que pudimos visitar en algunas regiones del Perú. Este video corto muestra nuestro 1er encuentro con la larva "curo" Pachymerus Nucleorum después de identificar su trazabilidad y comprobar que, a diferencia del "Suri" que para obtenerlo se debe tumbar una palmera. 🐛Esta larva crece en la fruta y es ademas es mucho mas sabrosa y nutritiva. Así que decidimos llevarla al laboratorio.

In 2014 we started an investigation, with the purpose of rescuing the pre-Hispanic entomophagic traditions of the communities that we were able to visit in some regions of Peru. This short video shows our first encounter with the larva "curo" Pachymerus Nucleorum after identifying its traceability and verifying that, unlike the #Suri , in order to obtain it, a palm tree must be knocked down. 🐛 This larva grows in the fruit and is also much more tasty and nutritious. So we decided to take it to the lab.

Back in the kitchen and feeling inspired by my time in Peru. The result: Tuna Avocado Ceviche. 🥑 My creamy avocado leche de tigre topped with fresh tuna, ají limo, canchita, cilantro, radish, and crispy quinoa are just so damn good together. 🐟 There’s a flavor explosion happening here.
