Celiac disease is a chronic condition of the digestive system that has an immune origin. It is characterized by a permanent intolerance to a protein called gluten, which is present in cereals (wheat, oats, barley or rye).
When the patient ingests foods containing gluten, the lining of the small intestine is injured, which reduces its ability to absorb nutrients.
The foods allowed in their diet are:
*Milk and dairy products such as cheese, butter, cottage cheese, cream...
*Meat, fish and fresh seafood.
*Fruits, vegetables, and legumes.
*Rice, corn, flour, and starch.
*Salt, pepper, vinegar.
*Yeast without gluten.
*Coffee and natural tea (not instant).
*Carbonated drinks (with gas).

- 8 Claras de huevo 🥚
- 100 g Azúcar🍬
- 150 g Caramelo Líquido🍯
- Una pizca de sal🍚
- Zumo de limón🍋
1. Pulverizar el azúcar y reservar. Remover las claras con una pizca de sal, el zumo de medio limón y el azúcar pulverizado.
2. Empezar a montar las claras e ir añadiendo el caramelo líquido poco a poco. Poner la mezcla en un recipiente untado en mantequilla y poner al horno a máxima potencia de 7 a 10min.
3.Se acompaña del las yemas revueltas con dos cucharadas soperas de azúcar.

SUN day ☀️ On Thursday... I’ll take it! Can we talk about how much health issues suck for a second? The last week has been really tough physically (which also makes things mentally tough too). Those of you who deal with this know... on the bad days you wish you had something you could call it. And on the good days, you forget you have it. My diet has changed, I can’t eat gluten or drink alcohol ... not even a little or I feel like death 💀And I am now up to 8 giant pills a day from the naturopath. Every so often I have a “flare”... The best way to describe it is like really bad mono. I’ll sleep 14 hours+... my husband picks up the slack big time and does the grocery shopping, laundry, cleaning, kids... and even drew me a bath 💗 Today I showered AND put on makeup, it feels like I’m myself again! I hateeee sick Emily. She sucks. She’s tired, and snappy, lazy, dare I say mean, depressed, hopeless, cynical. She’s not me! But I wanted to share that with you all. I know I’m not the only one with autoimmune disease and maybe letting you know that I have bad days too will make yours a little less 🌈 Today is a good day and you’ll find me with the music loud and the house clean 💗 I pray you are doing the same!! 💗
A couple of things... first my husband hates pears and we rarely if ever eat them. This week I bought an Asian pear and it did not disappoint. It was very flavorful and great with raspberries. Second my children saw their allergist last week and we are reintroducing dairy into their diets; thus the grilled cheese on udi’s bread.
I’ll go into more depth later today, but in short, I had my FM follow up and received the rest of my IgG food allergy tests from a month ago, and found out I’m severely or moderately allergic to a ton of food, including items I was relying on heavily during my AIP phase of substitution.😶
Hence why I’m still having a lot of GI symptoms and irregularities. Obviously, I was not born with these allergies and developed them in response to something. I’ve gained weight since my last appt (which does NOT make sense given how restrictive I’ve been for 3 weeks). Abdominal distention. Bloat. My gut permeability is poor. And has given us reason to further investigate the possibility of more extensive bacteria, virus, or parasite activity. After taking a week off of my probiotic, I’ll poop in a bag and send it to Fed-Ex for testing.😵
I was finally wrapping my mind around my new routine, new foods, new substitutions. Yesterday was a huge emotional blow. Cried all the way home. Saw a few patients. Then cried some more. I’m so tired of adjusting and feeling broken, and yes-I acknowledge how unproductive that statement is, but it’s how I feel right now.❌
It took a LONG ASS time for me to recover from my eating disorder. To heal my relationship with food and my self image. It hurts to feel afraid of food again. It hurts so much.😪

A big part of my detox regiment is doing regular and coffee enemas. It was intimidating at first, naturally, but after doing a solid amount of research and getting familiar with the process over time, I'm a lot more confident in my enema skills lol.
Coffee enemas are amazing to do for those who have chronic illnesses due to its detoxifying effects and prompting the liver to dump bile.

In 2016, I started obsessing over books, podcasts, and all things business. I was running a successful organization and growing my skills as a leader. But I knew I wanted more than the 9-5, do this for the next 30 years of my life. So I put my head down and worked, bought a rental property, and committed to dreaming.
What are you allowing space to ✨DREAM ✨ about in your life right now?
Being practical and getting ridiculous amounts checked off my list before 9am is something that comes naturally to me. Dreaming does not. This trip to 🇧🇷 Brazil 🇧🇷 with all the #tapiocacrepes allowed me space to dream of what I wanted next. Moving to Korea was step #1 and step #2 is coming up. Can’t wait to share my dreams with you all so soon!

I went for my second appointment to see my dermatologist. He was really happy with how my face healed from the first round of subcision and HA filler procedure. He was especially surprised at how well I healed because of having Lyme disease.
I am so happy to hear a medical professional who I trust and value say this to me. I'm actually healing. What I'm doing is actually working.
It's so easy for me to get lost in the daily grind and never ending list of tasks I have to do to heal and progress, but since those tiny steps are actually making a difference, I feel reinvigorated with energy and positivity to keep doing what I'm doing.
The other thing my doctor said that will forever stick with me was so simple, "be reasonable." He wanted me to see that my flaws on my face could be much worse. That there are more important things to worry about than making my skin "perfect." It's not that I won't keep working on my goals, I just need to be more centered and reasonable about everything.
Who knew that two simple words could change my entire mindset...
Fellow #celiacs , when was the last time you can remember having curly fries at a restaurant!? I never had since my diagnosis in 2012...so when I saw these sriracha curly fries on the menu at @planbburgerbar, I was PSYCHED. Don’t worry, they have a dedicated fryer 🍟 Bless you, Plan B.
