With the weather warming up, I love eating refreshing meals! Lettuce wraps are my go to! I switch off filling them with a good burger, chicken salad or this yummy Asian chicken. Plus how cute is this heart shaped lettuce wrap 💚

🌟VEGAN CORNBREAD, VEGGIE & BEAN SAUTEE, HUMMUS, & BREADED BAKED CHICKEN🌟 Lately I've been eating a primarily plant based diet, but occasionally I'll have meat. Sometimes it's progress over perfection. A big struggle for me was to learn to have a healthy relationship with food. For years, I restricted and counted calories down to the single digits. If I ate more I intended, I had to get rid of it. I punished myself constantly--if I could just be thinner, have more muscles, less curves, WHATEVER--life would be better. When I finally decided to try and love my body, and started learning that food wasn't the enemy, I was able to start healing. Now, I don't count calories. Now, I listen to my body when it tells me it's full. If I eat too much, I know that feeling of full will go away on its own. Food is not my enemy today. For that I am #grateful .
Tired of the same chicken recipe week after week. Here's a healthier version of a kid friendly favorite: 🌱Chicken Parmesan🌱
1 cup whole grain Panko bread crumbs
4 Tbsp. grated Parmesan cheese divided use
1 dash sea salt or Himalayan salt
¼ tsp. ground black pepper
¼ tsp. garlic powder
¼ tsp. onion powder
2 large eggs lightly beaten
4 4-oz. raw chicken breasts boneless, skinless
1 cup all-natural marinara sauce, no sugar added
¾ cup shredded part-skim mozzarella cheese
1 Tbsp. finely chopped flat leaf (Italian) parsley
Preheat oven to 450° F.
Lightly coat medium baking sheet with spray. Set aside.
Combine bread crumbs, 2 Tbsp. Parmesan cheese, salt, pepper, garlic powder, and onion powder in a small bowl; mix well. Transfer to a plate. Set aside.
Place eggs in a shallow dish. Dip each chicken breast in eggs, completely coating, then bread crumbs; coating each evenly on all sides. Place chicken on prepared baking sheet.
Bake for 22 to 26 minutes, turning after 15 minutes, or until chicken is no longer pink in the middle and juices run clear.
Preheat broiler on high.
Top each chicken breast evenly with marinara sauce, mozzarella cheese, and remaining 2 Tbsp. Parmesan cheese. Return to oven for 2 to 3 minutes, or until cheese is melted.
Sprinkle with parsley before serving
Serving size: 1 chicken breast

Since my second diagnosis, I’ve realized just how many autoimmune and chronic diseases there are. Not only that, but I’ve realized how little information there is about those diseases.
